These cookies go really fast so you might want to make two batches unless you have a lot of help eating them.

I love adding another amazing flourless cookie recipe to my baking arsenal. These 4-Ingredient Flourless Peanut Butter Cookies are chewy, dense, a little crisp on the inside and so, SO peanut butter-y. If you’re searching for a gluten-free peanut butter cookie, this one is about as simple and delicious as it gets. Four ingredients. That’s it. Easy Peasy. And not only are these cookies so simple, they are completely grain free — no wheat, no oats, no specialty gluten-free flours. Just peanut butter, sugar, vanilla extract and a large egg and you’re on your way to chewy, rich peanut butter cookies. Really, the only downside is you might have to make a second batch.

Wondering if you can substitute natural peanut butter for processed peanut butter? I’d say, yes, but with a few caveats. First, the texture of natural peanut butter is a bit on the runny side. Keep your natural peanut butter chilled as long as possible before adding it to your batter, and be sure to stir it really well before measuring. Secondly, if your natural peanut butter is unsalted, you might need to adjust the amount of salt in your baking. It’s certainly unsweetened, so the end product may not be as sweet as you expect, either. You’ll want to adjust the amount of sugar according to your tastes.

HOW TO MAKE 4-INGREDIENT FLOURLESS PEANUT BUTTER COOKIES

Preheat oven to 350°F. Then line a large cookie sheet with parchment paper or spray with non-stick cooking spray and set aside.

In a medium mixing bowl, beat together the peanut butter, 1 cup sugar, egg and vanilla on medium speed until well combined.

Place 2 tablespoons sugar in a small bowl. Roll the dough into 1-tablespoon sized balls and then roll each ball in the sugar until completed coated. Place the coated balls of cookie dough a few inches apart on the prepared baking sheet.

Use a long fork to flatten each cookie dough ball slightly, then turn the fork going the opposite direction and flatten just slightly again. This will create the classic criss-cross pattern on the peanut butter cookies as they bake.

Bake for 8‐10 minutes, rotating cookie sheet halfway through the baking time. Let rest on the cookie sheets for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container at room temperature for up to 5 days.

ARE THESE COOKIES GLUTEN FREE?

While these cookies can technically be considered gluten free peanut butter cookies, not all brands of peanut butter are created equal. From what I’ve read, there are varying opinions of the “trustworthiness” of certain types of peanut butter.

So before serving these cookies to someone you know who lives a gluten free lifestyle, let them know what brand of peanut butter you used. If you’re baking with them in mind, you could even ask them what brand of peanut butter they use and trust.

CAN YOU USE NATURAL PEANUT BUTTER?

Due to the limited ingredients in these cookies, no, you should not use natural or homemade peanut butter. You’ll need all the “extra stuff” that comes from brands like Skippy, Jiff, etc for this recipe to come together.

CAN YOU USE CRUNCHY PEANUT BUTTER?

I’ve only made these cookies with creamy peanut butter, but in theory, yes, you can use store-bought crunchy peanut butter (so long as it’s not natural or homemade – see above note).

HOW LONG DO PEANUT BUTTER COOKIES LAST?

Once prepared, these cookies should last for up to one week in a sealed container. There’s no need to refrigerate these cookies.

Once prepared, store the cookies in a sealed container or freeze bag for up to six months.

NOTES & TIPS FOR THESE FLOURLESS PEANUT BUTTER COOKIES

  • If you’re doing a lot of baking, I highly recommend having some silicone baking mats on hand. Baking cookies takes enough time without having to cut or measure parchment paper. Or if you prefer using parchment paper, you can try using pre-cut parchment paper sheets instead.
  • Plus, some quality baking sheets are a must for a cookie baking extravaganza!
  • For this recipe, I highly recommend using a stand mixer or a hand mixer. This recipe would be difficult to make by hand with a whisk.

HOW TO MAKE EASY PEANUT BUTTER COOKIES

Step 1 – Using a stand mixer (or hand mixer + large bowl), add sugar, peanut butter, egg, and vanilla extract.

Step 2 – Cream everything together on medium-high speed until batter is thick and crumbly

Step 3 – Use a cookie scoop to scoop out some dough, then roll it between your hands until it forms a ball. Place the cookie ball on a baking sheet lined with parchment paper

Step 4 – Use a fork to gently press a criss-cross pattern on the top of the cookie. Doing this will also give the cookie a classic flat, round shape, since these cookies won’t change that much while baking

These soft and chewy cookies only require a few simple ingredients – peanut butter, sugar, one large egg, and a little vanilla extract. They take 5 – 10 minutes to throw together, and about 10 minutes in the oven.

  • Smooth peanut butter: Try using crunchy peanut butter for added… crunch!
  • Caster/granulated sugar
  • Large egg

To make these cookies, grab a large mixing bowl, and mix together the peanut butter, sugar, egg, and vanilla until completely combined, and a big ball of dough is formed.

Using a small cookie scoop (about 1oz per ball), scoop the dough onto a baking tray lined with parchment paper or a silicone mat. Dip a fork in sugar, and lightly flatten each cookie, making a criss-cross pattern.

Bake for 10 – 12 minutes, or until the edges are lightly browned. The cookies will be super soft, but they will firm up as they cool.

Allow to cool for 10 minutes before transferring them to a wire rack to cool completely.

🛒 4 SIMPLE INGREDIENTS FOR THE EASIEST PEANUT BUTTER COOKIES

This recipe makes a large batch (about 30 cookies.) Halve the recipe if you only want 15. You probably have everything you need to make these without a trip to the store:

  • peanut butter:  a smooth, natural variety. I like using creamy peanut butter in this recipe, but you can use crunchy peanut butter if you’d like. I use the Kirkland brand from Costco.
  • eggs: you’ll need 2 large eggs at room temperature.
  • sweetener:  to keep it keto, use a 0-calorie sweetener like Lacanto Monkfruit with Erythritol (or granulated sugar, brown sugar, or coconut palm sugar if you’re not on a Keto diet.)
  • pure vanilla extract

🥄 HOW TO MAKE PEANUT BUTTER COOKIES WITHOUT FLOUR

First mix all ingredients in a bowl. This recipe doesn’t need a stand mixer, but if you have one, it makes the cookie dough very easy to mix.

Stir in add-ins, like chocolate chips or crushed peanuts, if you’d like.
