BLACKBERRY COBBLER INGREDIENTS

You will need:

  • 1 box yellow cake mix
  • 6 cups blackberries 4 to 5 cups if they are large berries
  • 1 to 2 tablespoons sugar
  • 1 stick butter
  • 1 cup water

SUBSTITUTIONS AND ADDITIONS

CRUST: You can use regular pie crust strips if you don’t have a yellow cake mix. It does change the taste and texture, but it is still delicious. 

CANNED BERRIES: I don’t always have the luxury of fresh berries in my refrigerator (or totally carefree days to visit the blackberry patch!), but canned blackberries from the pantry make a fine substitution in this great dessert. 

PRO TIP: Cleaning fresh blackberries is easy. Much easier than cleaning some other fresh fruits. Pour the fresh juicy berries into a colander. Discard any errant leaves or stems. Set the colander in the sink and run water over the berries. Leave it there to drain while you begin the recipe.

HOW TO MAKE THIS BLACKBERRY COBBLER RECIPE

STEP ONE: In the bottom of a 9×13 baking dish, pour one box of yellow cake mix.

STEP TWO: Spread blackberries over the top of the cake mix.

STEP THREE: Sprinkle on 1 to 2 tablespoons of sugar (depending upon how sweet they are).

STEP FOUR: Pour 1 cup of water over the top of the berries and cake mix then shake the pan so water settles into the bottom. If berries aren’t very juicy, add a little more water. If they are plump, a little less.

PRO TIP: If you’re using canned berries, reserve the water they’re packed in and use a cup of it instead of the plain water. Unless you don’t want the crust to be purple, of course.

STEP FIVE: Cut a stick of butter into 8 pieces and spread out over the top.

STEP SIX: Bake at 350 for 35 to 40 minutes.

IN THE FRIDGE: The cobbler can be stored covered in plastic wrap in the fridge for 3 to 4 days. 

IN THE FREEZER: If you are planning to freeze the cobbler, it is best to do so before baking. Make the recipe right up to the step before you add the pieces of butter, cover with foil, and freeze. Thaw in the refrigerator overnight, top with butter, and bake.

Simple Southern Blackberry Cobbler

This easy recipe for Blackberry Cobbler was given to my mother years ago, when I was just a girl by a neighbor lady where I grew up in Meriwether County, Georgia. Really, you can substitute any fruit you may have on hand – or even a can of peaches is delicious!

This cobbler recipe is super easy and the perfect quick dessert for a weeknight! It is always a favorite at potlucks, too. Just double the recipe!

The crust is buttery and I personally love the crusty edges. I like to make my cobbler in a cast iron skillet, but a 9 x 13 casserole dish works just fine.

We picked these blackberries from the bushes in our front yard and the girls were excited about eating it! The cobbler was gone in no time.

How to Make Simple Blackberry Cobbler

Ingredients

  • 1 stick butter or margarine
  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 cups blackberries, washed {or other fruit}

Step #1: Heat oven to 350 degrees. While the oven is heating, place your stick of butter in your skillet and let it melt and get hot in the oven.

Step #2: Meanwhile, in a mixing bowl, stir together the self-rising flour, sugar, and milk. DO NOT over stir. You want to just bring the mixture together. A few lumps are okay. The mixture will be kind of soupy.

Step #3: Once the butter has melted, carefully remove skillet from oven and pour flour mixture over the butter. DO NOT Stir the batter into the butter. You just want to pour over the top. It’s okay if the edges are not totally even.

Step #4: Add blackberries over the top of the batter, scattering them as evenly as possible. Again, do not stir together.

Step #5: Bake for about 50 – 60 minutes. Be sure to watch the cobbler so you don’t cook it too long. Remove from oven when the top of the cobbler is a pretty golden brown.

Old Fashioned Blackberry Cobbler Recipe

Blackberry Cobbler is an absolutely delicious, easy, and impressive dessert that’s perfect for summer baking. Is that enough adjectives for you? It’s crispy and chewy around the edges, and soft and sweet in the middle, loaded with fresh blackberries!

This cobbler recipe only has 6 ingredients, and the prep takes less than 10 minutes! Top this while it’s warm with ice cream and be prepared to eat the scraps right out of the pan!

What You’ll Need

What I Don’t Have Self Rising Flour?

No problem! You can easily make self-rising flour at home. Here’s what you will need:

  • All purpose flour
  • Baking powder
  • Salt

For each cup of flour, whisk it together with 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt. 

How to Make Blackberry Cobbler

Here’s how to make cobbler – it’s super easy!

  1. Whisk together 1 cup of your granulated sugar, flour, milk, and vanilla until smooth. Then whisk in the butter until combined.
  2. Pour the batter into a well-greased casserole dish. I like to use an 8×12 pan for this recipe.
  3. Then add the blackberries evenly on top of the batter. They will sink in a little bit, which is totally fine!
  4. Sprinkle more sugar on top, which will create a nice crackly topping.
  5. Bake for 55-60 minutes. Serve warm with ice cream!

I love topping cobbler with vanilla ice cream but here are a few other ideas:

How To Store and Reheat Leftovers

Just cover and refrigerate for up to 3 days! I don’t recommend freezing this, as you lose that crispy, crackly topping as it thaws out.

If you spend much time with a southern woman who knows how to cook, you’ve probably had what we call a “one cup cobbler”. The name is a little deceiving though–it doesn’t mean it makes a cup of cobbler but that it takes a cup of each ingredient.

It’s so simple it’s almost embarrassing and it tastes better than you can probably imagine just looking at it on screen.​

What is cobbler?

A cobbler is a fruit dish that’s topped with a batter, biscuit or dumpling before being baked. In this case, we use a batter that makes a golden, buttery, tender cake-like topping that floats above the cooked fruit. I have heard some sort of ugly rumors about people calling fruit covered with pie crust a cobbler–let’s skip that idea because this is my blog and I get to have the last say.

If you want to use a pie crust, call it pie like it is and move on (though I do recognize that LOTS of southern cobbler recipes have a top and bottom pie crust).

The secret to the most tender, golden, flavorful crust

After years of making this, I’ve discovered a little secret I’m going to let you in on: buttermilk.

Magic happens with buttermilk. It makes the most tender, tangy dough and I really prefer it over a plain milk version. If you don’t have any buttermilk it’s fine to use all 2% or whole or make a fill-in buttermilk with a recipe like this. It’s not the same flavor but it works in a pinch.

This recipe also calls for self rising flour. That’s a blend of flour, baking powder and salt together in a bag. If you don’t have self rising flour you can make your own.

Can frozen blackberries work here?

100% yes. I use frozen ones I grow, but any frozen ones work because they get cooked down anyway.

Can I use another fruit besides blackberries?

This is also a great base for any other fruit cobbler. If you are using a sweet fruit–like peaches–feel free to reduce the amount of sugar by 1/4 cup or more depending on sweetness. I love this recipe with pitted sour cherries too. So good!

Tips for making the “sauce” of your cobbler

This recipe is what we call “self saucing” because you pour in butter, then batter, then berries and the water they cooked in then the whole thing bakes, the cake comes to the top, the berries sink beneath and the flour in the batter thickens the berry water into a sauce. It’s magic.

If you want your sauce thinner: add more or all of the water you used from simmering your berries.

If you want your sauce thicker and the whole cobbler more cake-like: add less water from simmering your berries (leave behind 1/3 of it or so).

Should blackberry cobbler be refrigerated?

Serve your cobbler warm or room temperature, but when you’re done yes, go ahead and refrigerate it. I cover mine in plastic wrap. Blackberry cobbler will last 3 or 4 days in the fridge.

One-Cup Blackberry Cobbler

This traditional southern blackberry cobbler uses (about) a cup of each ingredient and makes the easiest, best tasting cobbler you’ll have this summer.

Prep Time 15 minutes

Cook Time 20 minutes

Total Time 35 minutes

Servings 10 people

INGREDIENTS  1x2x3x

  • 1 stick butter melted
  • 1 cup self rising flour
  • 1 cup sugar
  • 1/2 cup 2% or whole milk or 3/4 cup if you are omitting the buttermilk
  • 1/4 cup buttermilk
  • 1 quart fresh or frozen blackberries 4 cups (2 14-ounce bags frozen berries)
  • 3/4 cup sugar
  • Enough water to cover berries about 2-3 cups

INSTRUCTIONS 

  • Preheat your oven to 350.
  • Place your berries in a medium sauce pan and add just enough water to almost cover them. About 2 cups or so. 
  • Place the pot over medium high heat and bring to a boil.
  • Add 3/4 cup sugar and stir to dissolve. Turn off the heat and set aside.
  • In a 9×13 baking dish, pour in the melted butter. Set aside.
  • In a medium bowl mix the self rising flour and sugar. Add the milks and stir well. Batter should be slightly thicker than pancake batter.
  • Pour the batter evenly over the melted butter. DO NOT stir.
  • Next use a slotted spoons to sprinkle the hot berries over the batter. Pour over about 2 cups of the remaining water from the berries. Use less water for a more cake-like cobbler and all of the water for a more saucy cobbler.
  • Bake 20-25 minutes until the dough is golden and the cobbler bubbles.

NOTES

Remember: The more water you add to the batter and fruit, the more juice your cobbler will have when it bakes. I recommend 2 cups of water here for a moderately juicy cobbler. If you want it thinner, add the full 3 cups of water. If you want it more like a cake, do 1 1/2 or even 1 3/4 cups water.
