A golden, nubbly crunchy topping is placed on top of a filling of soft, cinnamon-infused apples. You’ll appreciate how the filling in this apple crumble is syrupy and jammy rather than watery or dry, and how it isn’t excessively sweet. When this is cooking, the aroma is everything! SUGAR – see Note 4.

Instructions

  • Heat the oven to 350°F/180°C.
  • Cut apples into 1.5cm/3/5″ cubes after peeling.
  • In a bowl, put an apple. Sprinkle with cinnamon, sugar, and flour before drizzling lemon juice over top. Spread everything evenly in a 1.5 liter/1.5 quart baking dish after tossing.
  • Place ingredients for a bowl’s topping. Mix until moist sand-like clumps form (see video). Spread the mixture over the apples and, if necessary, make it crumbly by using your fingers.
  • Until golden brown, bake for 30 to 40 minutes. Before serving, remove from the oven, cover loosely with foil to maintain warmth, and let stand for 10 minutes to allow the apple filling to meld.
  • With vanilla ice cream, serve warm!

Recipe Notes:

  1. Weighing comes PRIOR to coring and peeling. Granny Smith apples are great for this because they are a little sour. Any apple variety or even pears can be used.

Peaches work as well, although you can reduce the sugar a little. Any sort of berry works well in this recipe.

Whatever method you choose, keep the sugar in there since it helps the filling become a little jammy rather than watery.

  1. Weights – This recipe is quite forgiving and works whether using US cups or Imperial cups (i.e., what 99% of the rest of the world uses). Differences in cup measures are relative. Please use the specified weight measures as Japanese cups, which are smaller, won’t work with it.
  2. To make the recipe ahead, complete it only before adding the crumbled topping.

Crinkle topping shortly before baking, then cover with cling wrap (refrigerate if it’s hot where you are).

  1. SWEETNESS: A few people have commented that they find this to be excessively sweet. I don’t have a really sweet tooth, but I adore this just the way it is. If you like less sweet foods, you can cut the topping’s sugar content to as little as 1/2 cup. It’s preferable to leave the sugar in Filling alone to prevent changes to the syrup’s consistency. Utilize green apples as well; they are less sweet than other varieties.
  2. Ice cream is not included in the nutrition per serving, assuming this serves 8.

Granny Smith Apple Crisp

The important ingredient in this crisp is granny smith apples because their tartness pairs perfectly with the sweet, salty, and crunchy oat-flecked crumb topping.

Ingredients

Ingredient Checklist

  • 3 pounds Granny Smith apples—peeled, cored and thinly sliced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1 stick unsalted butter, finely diced and chilled, plus 2 tablespoons
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups light brown sugar
  • 3/4 cup rolled oats (not quick-cooking)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • Scant 1/2 teaspoon ground cardamom
  • Crème fraîche or vanilla ice cream, for serving

Directions

Instructions Checklist

  • Set the oven to 350 degrees. Toss the apples with the sugar and lemon juice in a large bowl. Melt the 2 tablespoons of butter in a very big skillet. Add the apples and simmer for about 5 minutes, stirring periodically, over moderate heat, until softened but not browned. Apples should be scraped onto a big baking dish.
  • Clean the bowl. Use your fingers to incorporate the 1 stick of chopped butter into the dry ingredients until the mixture resembles coarse meal. Add the flour, brown sugar, oats, cinnamon, salt, and cardamom. Spread the topping over the apples after gathering it into clumps.
  • Once the apples are boiling and the topping is brown, bake the crisp for 45 to 50 minutes. Serve heated with crème fraîche or ice cream after letting cool.

Make Ahead

The apple crisp can be made earlier in the day and reheated.
