My family enjoys crumbles, especially for Sunday lunch in the winter. As the clocks fall back and winter officially begins, I thought my family would enjoy this Pink Lady Apple Crumble. Pink Lady apples, which are so well-liked as dessert apples, are fantastic in this crumble.

INGREDIENTS FOR THE FILLING

  • 10 Pink Lady apples, peeled, cored and diced into 2.5cm cubes
  • 2 tbsp of golden caster sugar
  • 1 tsp of cinnamon
  • Juice of 1 lemon
  • 1 tbsp of plain flour
  • FOR THE TOPPING
  • 90g of rolled oats
  • 150g of light brown demerara sugar
  • 150g of self-raising flour
  • 100g of skinned hazelnuts, roughly chopped
  • 120g of melted butter
  • 2 tspn of vanilla extract

DIRECTIONS

  • Set the oven’s temperature to 190°C/fan 170°C/gas mark 5.
  • Make the filling first. In a saucepan with 50ml of water, combine the apples, golden caster sugar, cinnamon, lemon juice, and plain flour. The apples should soften nicely after about 15 minutes of stirring frequently and cooking on medium heat.
  • Oats, demerara sugar, self-raising flour, and chopped hazelnuts go into a big bowl to make the topping. Stir together the melted butter and vanilla essence before pouring over.
  • Once the topping is prepared and the apples have gotten a bit softer, lightly butter a heatproof dish that measures approximately 28 x 25 cm and is at least 5 cm deep. Softened apples should cover the entire plate before being topped fully with the crumble mixture. Bake for 40 minutes, or until the topping is golden brown, on the center shelf of the oven.
  • Serve the apple crumble with custard or vanilla ice cream on top.

  • For the filling:

Method

Set the oven’s temperature to 190°C/Fan 170°C/gas mark 5.

Once the topping has been prepared and the apples have softened, lightly butter an ovenproof dish (about 28 x 25 cm and at least 5 cm deep).

The dish should be filled with the softened apples, then coated fully with the crumble mixture.

Bake for 40 minutes, or until the topping is a wonderful golden color, after sliding it onto the center rack of the oven.

To serve, drizzle double cream over the apple crumble before topping with vanilla ice cream or custard.

Apple crumble has always been one of my favorite sweets, even as a little child. When we would spend the weekend at my grandmother’s, she would always cook a crumble for our dessert. Every time I made apple crumble, it reminds me of the fun times I had as a kid because it was something I looked forward to all week.

Her apple crumble recipe served as the basis for this one, however I created crumble slices rather than a crumble pie. I prefer crumbled slices because I can measure my amounts more precisely and determine how many calories I’ve had, which is not as simple to do with a pie. Also, my kids can just assist themselves when they want because they are portioned out.

I first used cooking apples when I started creating crumbles. I once had pink lady apples in my refrigerator and wanted to make a crumble, so I though, “Why not try these instead?” I absolutely adore pink lady apples; they are without a doubt my favorite apple kind, so I was thrilled at the prospect of using them in a crumble. Since then, I have only ever made crumbles with pink lady apples, hence the moniker. The crumble turned out perfectly.

The ingredients for these crumble slices are flour and oats. These include nutmeg and cinnamon flavors, which really bring out the apple flavors. They can be heated in the microwave for about 30 seconds to serve them warm.

For the Crumble

  • 270g plain flour
  • 250g rolled oats
  • 120g granulated sugar
  • 120g soft brown sugar
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

For the Filling

  • 6 medium pink lady apples (chopped)
  • 60g granulated sugar
  • 1 tablespoon cornflour (cornstarch)
  • 1 tablespoon lemon juice
  • 1½ teaspoon ground cinnamon
  • 1½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

  1. Set the oven’s temperature to gas mark 5, 375°F, 190°C, and fan 170°C, and line a 13 x 9 baking pan with baking paper.
  2. Combine the flour, oats, sugar, salt, and ground cinnamon in the bowl of a stand mixer or another mixing bowl. Add the butter after whisking them together. The dry ingredients should be well mixed with the butter using a hand mixer or the paddle attachment on a stand mixer.
  3. Spoon slightly more than half of the mixture into the baking pan and press it down evenly, making sure it is tight and compact. While you prepare the filling, set the remainder of the ingredients aside.
  4. To make the filling, combine all the ingredients and spread it out equally over the crumble that has been pressed down. Put the remaining crumble, which was previously set aside, on top of the apples.
  5. Bake for 45 to 50 minutes, or until golden. Before cutting into pieces, let the food cool.

  • Instead of quick cook oats, use whole rolled oats to make the crumble.
  • I use a 9 x 13 baking tray for this recipe. Take about a third of the ingredients if you plan to bake it in an 8 x 8 baking dish.
