Tex Mex migas were frequently included in our breakfast buffet, or at the very least, there was salsa verde available to top your eggs.
But one night, in addition to all the guacamole and enchiladas, I also had a very fantastic apple tart. This is something akin to what you might call a French apple tart without the crumble topping. That indicates that there is no sauce of any type mixed in, only a pastry base packed with sliced apples. It’s entirely about the apples, which are also often finely cut and typically get nice and soft, rather than any sauce-like filling.
