Baked Chicken With Artichokes


Baked Chicken With Artichokes is a great selection for anyone looking for a meal that is easy to prepare but also doesn’t break the bank. It can be served on its own or with some of your other favorite dishes. You can put it with rice, mash potatoes or noodles, whatever you want.




  • 1(14 ounce) can water-packed artichoke hearts, well drained and chopped
  • 34cup grated parmesan cheese
  • 34cup mayonnaise
  • 1dash garlic powder or 2 garlic cloves
  • 4boneless skinless chicken breast halves


  • Preheat oven to 375.
  • Spray an 11×7 inch baking dish with Pam.
  • Salt and pepper the chicken breast halves and place in the dish.
  • In a bowl, combine the artichoke hearts, parmesan cheese, mayonnaise and garlic powder; mix well.
  • Spread artichoke mixture over chicken breasts.
  • Bake, uncovered, 30-35 minutes or until chicken juices run clear.

Guys, you know me. I love to cook. After all, it is what I do for a living. That being said, there are some times when I just don’t have the time to be in the kitchen. And if you’re like me, whether you’re in a rush with work, busy with the kids or just really don’t have time an easy meal can be a life saver.

This Artichoke Chicken is just that.

What ingredients do you need: 

This is the best part. This recipe requires 4 ingredients: chicken thighs, marinated artichoke hearts, salt and pepper. THAT’S IT.

CHICKEN THIGHS: I picked chicken thighs for this dish because they are loaded with flavor and will be more tender than the leaner chicken breasts. Don’t use boneless, skinless chicken in this recipe because the crispy skin is one of the best parts.

MARINATED ARTICHOKE HEARTS: You can find these in the canned veggie section of just about any grocery store. I have used Reese’s, DeLallo and Napoleon brands and they have all been great!  This artichoke chicken is packed with flavor because the marinated artichokes are packed with flavor so just pick your favorite. 

Step by Step Instructions: 

Not only does this recipe require very few ingredients, it also has very few steps. 

STEP 1: Combine chicken, artichoke hearts and marinade together in a bowl. Cover and refrigerate for  1 – 2 hours. You can do longer than that if you needed.

STEP 2: Place chicken, artichokes and 1/4 cup of the artichoke marinade in a large baking dish. I used a 9 x 13 inch baking pan.

STEP 3: Bake at 325 degrees for 45 – 55 minutes or until chicken reaches 165 on a meat thermometer. Turn on the broiler for a couple of minutes to get a nice golden brown color.

There’s something about the combination of honey, lemon, and garlic together that just makes my heart happy. If all those things are coming together in a one pan – slash- sheet pan meal that can be prepped and baked in about thirty minutes, well that’s my little heaven right there.

I must’ve been about 8 or 10 years old the first time I remember trying an artichoke. It was at my grandparents home in Southern California, dinner on the back patio beneath their pale blue wooden awning with little bowls of mayonnaise and melted butter for dipping. The melted butter comes from my Mom’s side, the mayonnaise from my Dad’s. I love them both.

The Health Science major side of me says no way to dipping flower petals in butter and mayo but the food-lover side of me says YESSSSSS. The food-lover side generally wins, even if it’s just by a hair.

This 30 minute meal needs to happen in your kitchen this week. I’m actually out of an at the moment, what with being in the middle of a kitchen remodel, so I’ll be dreaming of this chicken and artichoke dinner all week, but you can actually enjoy the real deal.

One Pan Baked Lemon Chicken and Artichokes

  • ▢4 boneless skinless chicken breasts pounded to even thickness – OR 6 boneless skinless chicken thighs
  • ▢1 cup quartered artichoke hearts
  • ▢salt and pepper to taste
  • ▢½ cup butter – melted
  • ▢juice of 1 lemon – (3-4 tablespoons)
  • ▢3 tablespoons honey
  • ▢4 teaspoons minced garlic
  • ▢½ teaspoon Italian seasoning

Get Ingredients


  • Preheat oven to 400 degrees and grease a large baking sheet. Spread chicken and artichokes out on the baking sheet and season with salt and pepper.
  • Whisk together butter, lemon juice, honey, garlic, and Italian seasoning. Pour sauce over chicken and artichokes.
  • Bake for 20-30 minutes, spooning sauce from pan over the chicken and artichokes half way through and again at the end. Garnish with fresh thyme or oregano and serve immediately.


Spice it up: add 1/2 teaspoon crushed red pepper flakes.
