Ingredients

1 tsp. 

plus 1 Tbsp oil

large bone-in chicken breasts (about 12 oz each) 

3/4 tsp. 

salt

3/4 tsp. 

pepper

1 lb. 

cherry tomatoes (halved)

sprig rosemary 

1 tsp. 

fennel seeds (crushed)

1 c. 

instant polenta

1 tsp. 

red wine vinegar

1/4 c. 

parsley (chopped)

Directions

  1. Oven should be heated to 450 degrees. In a big oven-safe skillet, heat one teaspoon of oil to medium. Chicken breasts should be seasoned with 1/2 teaspoon each of salt and pepper. Cook for 5 to 7 minutes with the skin-side down until golden and crisp.
  2. Turn the chicken over, add the cherry tomatoes, rosemary, and fennel seeds, drizzle with 1 tablespoon of oil, season with 1/4 teaspoon salt, and roast for 12 to 15 minutes, or until the chicken is just cooked through.
  3. Prepare polenta in the interim.
  4. Remove rosemary, place chicken on cutting board, and allow to rest for five minutes. Tomatoes are mixed with red wine vinegar, then parsley is added. Chicken should be bone-free, sliced, and served with polenta. tomatoes on top

I don’t want the same old dishes over and over again when I want chicken for dinner. It doesn’t have to be anything outlandish, just something tasty and fresh. That’s how I came up with the idea for this chicken dish with roasted cherry tomatoes.

Roasted cherry tomatoes and perfectly cooked chicken are served with a generous amount of garlic and fresh basil. It’s the ideal weeknight supper!

There are several ways to prepare the chicken for the dish Chicken with Roasted Cherry Tomatoes. Start by seasoning your chicken with salt and pepper for all techniques.

Bake: Set oven temperature to 375 degrees. On a baking pan, spread some olive oil over the chicken. 165 degrees Fahrenheit or 20 minutes of baking is the recommended time. After 5 minutes of resting, plate the food and add toppings. The advantage of this method is that it requires little supervision and provides you time to prepare other dishes you are preparing.

On the stovetop, add some olive oil to a sizable nonstick pan and add the chicken. Depending on the thickness of the breasts, cook on medium heat for 5-7 minutes per side. Cook the chicken until the internal temperature reaches 165 degrees. This approach cooks the chicken a little quicker than the oven method, but if you don’t use a nonstick pan or enough oil, the chicken can cling. I prepared this recipe using this technique.

I utilized Cherry tomatoes for this dish. Cherry tomatoes taste even better when roasted because they become sweeter. Grape tomatoes and other little tomato varieties are also acceptable. The preparation is the same regardless of variety. You should cut the tomato stem off and throw away those that have noticeable bruising.

storage tips

Fridge: Store Chicken and Roasted Cherry Tomatoes in a sealed container for up to 4 days in the fridge. To reheat either warm in the microwave or on the stovetop until heated through.

Raw Tomatoes: Store raw tomatoes at room temperature until use. If they come on the vine, leave on the vine until use as well. Raw tomatoes stored at colder temperatures can develop a mealy texture.

Fresh Basil: Store basil at room temperature for the best results. Basil stored in the fridge can darken and turn bad. To store on the countertop, trim the end of of the basil and place in a glass jar like you would for cut flowers. Place a plastic bag over the greens and basil will keep for several days.

  • ½ Cup Basil Chopped

INSTRUCTIONS 

  • Use a lot of salt and pepper when seasoning chicken. Cook for 4-5 minutes on each side or until the internal temperature reaches 165 degrees in a large skillet with olive oil over medium heat.
  • Set the oven to 375 degrees. tomato grapes into slices. Spread the garlic out on a baking sheet, season with salt and pepper, and then add the olive oil. For 20 minutes, bake.
  • Add the cooked tomatoes to the skillet with the chicken and toss to combine. Serv and savor!
