Making this dish and sharing it with others was one of the best dining experiences I’ve had yet. If you’re looking for a tasty, low carb chicken recipe, look no further! It seems like everyone is trying to stay keto or low carb. Except me. I’ve been on a high carb diet ever since the stone-age.

This cheesy mozzarella chicken bake is simple to make and only uses a handful of ingredients. Tender chicken, mozza, parmesan, and marinara sauce make one awesome combo!

How to make this mozzarella chicken bake (overview):

  1. Season the chicken with salt & pepper and garlic powder; 
  2. Brown the chicken (or don’t if you want to save time – just add an extra 10 minutes or so onto the baking time)… in a skillet over medium-high heat, sear both sides of the chicken for about 5 minutes/side;
  3. Transfer chicken to a baking dish and add the marinara sauce and then top the chicken with the cheeses;
  4. Bake for 15-20 minutes and then broil to get the cheese nice and brown and bubbly;
  5. Let the chicken rest for 5 minutes and then serve and enjoy!

Recipe notes & tips:

  • Want to make this recipe even easier? Skip the searing part (I like it because it yields more flavorful chicken, but the recipe also works without that step). Just place the raw chicken breasts in the baking dish, season them as indicated, and continue the recipe from step 4. I’d then cook the chicken for at least 30 minutes (or when a meat thermometer indicates it’s 165F in the thickest part). 
  • Timing on this recipe will vary depending on the size of the chicken breasts, so I highly recommend using an instant read meat thermometer so you don’t under or overcook the chicken. 
  • If you have a large oven-safe skillet, feel free to use it instead of transferring the chicken to the baking dish.
  • If you find the chicken is sticking to the pan during the searing step, cook it a bit longer so it releases naturally. Ensuring the pan is very hot prior to adding the chicken will help prevent the chicken from sticking.
  • I used an organic marinara sauce from my local grocery store. Feel free to use your favorite jarred brand or even homemade marinara. Keep in mind that the better quality the marinara sauce, the better this recipe will taste since it has very few ingredients. 
  • Depending on what you have on hand, feel free to switch up the cheeses if needed. You can skip the parm if you need to, and this recipe would be delicious with any cheese that melts easily. Try cheddar or even a Tex-Mex blend if you want a little heat.

NOTES ON EASY MOZZARELLA BAKED CHICKEN:

  • The cooking time will depend on the thickness of your chicken breasts. You’ll want 4 that are a similar size so they cook evenly. If yours seem thick, you can pound them out between wax paper to make sure they are a good, even size for cooking.
  • Also, I always recommend using a meat thermometer to ensure your chicken is cooked through! I love this instant read one and you’ll want the chicken to be at 165.
  • Mushroom lover? Me too. Feel free to add 8 oz. of sliced mushrooms to the pan with the onion, until they are cooked down and have released their juices, then continue with the recipe.
  • My easy baked mozzarella chicken doesn’t have a tomato sauce but if that’s what you’re looking for, you can add a small can of diced tomatoes (or crushed tomatoes) to the pan after you’ve browned the chicken.
  • Fresh mozzarella really is best here, but I won’t tell if you want to top the chicken with some sliced or shredded mozzarella. It won’t be quite as flavorful but still delicious.

We love this mozzarella chicken served with mashed potatoes (drizzle some sauce over those too, as seen below), but it would also be great with pasta or brown rice as well.

You could even do spaghetti squash for a low-carb option.

Or serve it with polenta. Or just some crusty bread. So many options!

Easy Baked Pesto Mozzarella Chicken

One of my favorite chicken recipes is simple baked pesto chicken. My whole family loves basil pesto sauce (even the little guy) so baked pesto chicken is a frequent weeknight dinner.

One night I decided to get fancy (translation – I was really craving cheese) so I topped our favorite simple pesto chicken with thick slices of fresh mozzarella and added some sweet cherry tomatoes. 

Still low-carb, gluten-free, and just as delicious!

Make this recipe with your favorite store-bought pesto sauce (there are so many great options out there) or try making your own using fresh basil, olive oil, pine nuts, and parmesan cheese.

I like to serve this recipe with a side of steamed broccoli, but cooked pasta, quinoa, or cauliflower rice are all great options.

How to Make Easy Baked Pesto Mozzarella Chicken

Let’s talk about how to make this recipe. It takes about 5 minutes to prepare and, depending on the total thickness of your chicken breasts, will take approximately 25-35 minutes to bake.

  1. Preheat oven to 425 degrees F.
  2. Add the chicken breasts to a large baking dish that has been sprayed with non-stick cooking spray. Drizzle with olive oil.
  3. Season chicken breasts with salt, pepper, paprika, and garlic powder.
  4. Slather with pesto sauce.
  5. Top with thick-sliced fresh mozzarella cheese and add the cherry tomatoes.
  6. Cover with foil and bake for 20 minutes. Remove the foil and continue to bake until the chicken is fully cooked (160 F).

Variations

  • Try using sundried tomato pesto instead of basil pesto.
  • Instead of using chicken breasts, try making this recipe with chicken tenders or skinless boneless chicken thighs. You could even make this recipe vegetarian by swapping the chicken breasts for chickpeas.
  • If you don’t have any fresh mozzarella, shredded mozzarella will also work.
  • Feta cheese would also taste really nice with the pesto.
