Banana Roll Salad is my family’s recipe. That’s because my Mom, an amazing cook, makes it for us. I remember as a child it was one of my favorite salads and when I went to college and moved out on my own, Mom would send me care packages and they were always stuffed with tons of banana roll salad.

Banana croquettes are considered a salad in most Kentucky homes.  Growing up in Kentucky most people know about banana croquettes.  Pot lucks, church socials, family reunions and holidays usually called for this banana dish served in some form or fashion.  There are so many ways to make banana croquettes but they are all good.  If you have not heard of or tried this treat you are missing out.

Ingredients

1 tbsp. Jif® Creamy Peanut Butter

1 tbsp. honey

1/4 cup mayonnaise or salad dressing

2 bananas

Lemon juice

Mixed greens

2 tbsps. chopped peanutsAdd to Shopping List

Directions

  1. MIX together peanut butter, honey and mayonnaise in a small bowl, until well blended.
  2. PEEL and slice bananas. Dip into lemon juice. Blot excess lemon juice with paper towel. Divide lettuce and bananas on two plates. Dollop salads with dressing. Sprinkle with nuts. Serve immediately.

  • Step 1Combine peanut butter and honey in a small bowl. Spread the mixture evenly over tortilla. Place banana on the bottom third of the tortilla; being careful not to tear the tortilla, roll tightly. Slice crosswise into 8 pieces.

Sweet Banana Spring Rolls

Fried Banana Spring Rolls – Bananas rolled in spring roll pastry and deep fried. Crunchy and sweet, they are very simple to make.

Ingredients:

  • 4 medium Bananas, peeled
  • 1 oz Oreo cookies, crushed
  • 0.25 cup Egg wash
  • 8 oz Japanese mayonnaise
  • 0.5 tsp Lemon juice (to taste)
  • 8 piece Egg roll wrappers
  • 1 tsp Ground cinnamon

Directions:

Step 1

In a mixing bowl, combine 8oz/225g mayonnaise, 1tsp/3g ground cinnamon, 1oz/ 30g crushed OREO cookies, and a teaspoon of lemon juice. Mix well.

Place egg roll wrapper on a flat surface, put a tablespoon of OREO cookie mix at the center, take a half banana and place on top of the mixture.

Fold the wrapper corner on top of the banana, brush egg liquid on the other edges, fold the two side corners, then continue roll the banana until it sealed well.

In a cooking pan over high heat, bring enough cooking oil to 250°F/120°C, fry the banana roll until golden.

FINAL NOTES

What is different about Japanese mayo? Using egg yolks and apple or rice vinegar and eliminating water gives Japanese mayonnaise a thicker texture than American mayonnaise and it is a rich and slightly sweet condiment.

Banana Berry Wrap + Tuna Salad

INGREDIENTS

  • 2 tortilla wraps 
  • 30 ml strawberry jam
  • 60 ml berry coulis (home-made or store bought) 
  • 2 large banana, ripe but firm and not blemished 

TUNA SALAD

  • 1 x 170 g tuna in brine, drained
  • ½ red pepper, thinly diced
  • ½ yellow pepper, thinly diced
  • ½ cucumber, thinly diced

MIX WITH

  • 45 ml thick mayonnaise

SERVE WITH

  • 4 strawberries on a skewer
  • Small bunch of green grapes
  • 3 mini puffed rice cakes

METHOD

  1. 1For the banana wrap: Place the tortilla wrap on a chopping board. In small bowl, beat the jam vigorously with a spoon until smooth and lump free. Add the red berry coulis and mix well.
  2. 2Spread a generous spoonful or two of the jam onto each tortilla. Place the banana around the one side or edge of the tortilla and roll as tightly as you can.
  3. 3Cut the banana into four pieces and place into two lunchboxes.
  4. 4For the final salad: Place the tuna into a bowl along with all of the vegetable ingredients and toss well to mix.
  5. 5Tip the mixture into a smaller container and add a dollop of mayonnaise to the top and close the lid.
  6. 6Pack the tuna salad into a lunch bag, along with the banana wraps. Add the skewered strawberries, grapes and rice cakes to another compartment of the lunchbox, seal and enjoy!
