Bionico: Mexican Fruit Salad

Bionico (or Mexican fruit salad) is all about that creamy sauce poured over the fresh fruit. Street food doesn’t get any better than this!

A few months ago we had a family breakfast at church and a young man from the church who works as a chef at a local restaurant made breakfast for everyone. It was buffet style, and at the end of the table was a huge bowl of fresh fruit and several small milk jugs full of this sweet cream. He told us to fill a cup with fruit, add coconut if we wanted it and then pour the cream over the top. I took one bite and was hooked. It was so delicious! 

I fully intended to get the recipe from Jorge as soon as breakfast was over but I forgot. I figured it would be easy to just look it up online when I was home to find the ingredients. I was very wrong. I couldn’t find ANYTHING! A few weeks later I asked him to give me the recipe. He told me I probably wouldn’t find anything online because it’s a Mexican dish called Bionico. You can find it sold in little markets and on street carts in the farmer’s markets.

After finding out the real name, I looked it up and found some recipes online. My impression is that Bionico is a little bit like the Mexican version of marinara sauce. Everyone’s mother makes the best and her secret recipe is the only one worth trying. 🙂  But since I’ve only had Jorge’s recipe and it was awesome, that’s the one I’m sharing with you!

Bionico: Mexican Fruit Salad


Fruit Salad

  • 1 pound strawberries sliced
  • 3 bananas sliced
  • 3 kiwis peeled and diced
  • 3 apples cored and diced
  • 1/2 cup raisins or dried cranberries
  • 1 pound grapes sliced lengthwise
  • coconut flakes optional
  • You can use any fruit that you like-melons pineapple, mango, golden raisins, etc.

Sweet cream

  • 1 can 14 oz sweetened condensed milk
  • 1 can 12 oz evaporated milk
  • 1 pint sour cream
  • 16 oz vanilla or plain yogurt
  • 1/4 cup honey


  • After cutting the fruit, toss it all together in a large bowl.
  • In another bowl, mix all the sweet cream ingredients with a whisk. The consistency should be thinner than yogurt but thicker than milk. If you use plain yogurt, you may want to add a little more honey for sweetness. Refrigerate until ready to serve.
  • To serve, scoop fruit into a bowl, top with coconut if desired and then pour the sweet cream over the top.

Ensalada de frutas con crema or “fruit salad with cream” is a popular treat in Mexico. Bionicos take things to new heights with the addition of toppings like granola, dried fruit, coconut, and agave — a Mexican parfait of sorts.

Since moving here, bionicos have become one of our go-to treats because of the affordable tropical fruit selection all around us.

This extravagant version of ensalada de frutas is kid-friendly, simple-to-make, and extremely customizable to your preferences!

We made this particular bionico recipe plant-based and gluten-free by utilizing cashews instead of condensed milk and Mexican crema or sour cream.


Guadalajara, the capital city of Jalisco, is supposedly where it all began for bionicos. These Mexican fruit salad bowls layered with creamy and chewy elements were invented by a street vendor to create a healthier breakfast item (or so the story goes).

Low and behold, these delicious fruit bowls became a sensation across the country in the 90s, even making their way up North to the United States.

They eventually evolved from a solo breakfast item to a sweet treat that can be enjoyed at any time of the day.


Serve your ensalada de frutas con crema immediately so the fruit is fresh and the granola stays crunchy.

To include more fruit in your day, serve these bionicos with different aguas frescas like agua de sandiaagua de fresa, or agua de piña.

Adding ripe, sweet, juicy, and tangy flavors to this ensalada de frutas are… fruits! We use more tropical fruits that are easily accessible to us in Mexico, but there are lots of options like:

  • Pineapple
  • Grapes (red or green)
  • Melon (honeydew, cantaloupe, watermelon, etc.)
  • Stone fruits (peaches, mangoes, nectarines, etc.)
  • Berries (strawberries, blueberries, etc.)
  • Kiwis
  • Apples, pears, etc.

Health: fruit is an excellent source of many different vitamins and minerals, especially when you mix and match different colors. Fruit is full of fiber and antioxidants, which can both help reduce the risk of heart disease.


Taste: this Mexican fruit salad wouldn’t live up to the hype without some sweet, rich, and drool-worthy vegan crema layered between the fruits. Made from a base of cashews, you’ll be shocked at how creamy and delicious a dairy-free sauce can be.

Health: because this sweet crema is made with cashews, there are many health benefits we’re excited to share with you! This high-fiber nut is low in sugar, rich in protein, and contains large quantities of minerals like manganese and copper, which is necessary for energy production and brain health.


To make ensalada de frutas con crema a full-on bionicos, add crunchy, sweet, and chewy elements like:

  • Dried fruit: raisins, mangoes, craisins, dates
  • Shredded coconut
  • Your choice of granola
  • Chopped nuts: pecans, walnuts, almonds
  • Syrup drizzle: agave, maple, or date syrup

Health: although these are healthy ingredients, try to eat them in moderation as they’re super easy to over-consume. Another tip is to make your own granola or find one that limits the added sugars and preservatives.

Step 1: soak the cashews overnight so they are nice and soft. Blend the drained nuts together with plant milk, lime juice, and sugar until smooth (you might have to stop and scrape down the sides a few times), then transfer it to your fridge.

Step 2: cut all of the fruits you’ll be using into ½-inch cubes and add them all to a mixing bowl and give it a stir. Cover the bowl and transfer to your fridge as well until you are ready to serve.

Step 3: when you are ready to eat your bionicos, layer a scoop of fruit, then some cashew cream, then more fruit, and so on (or however you want to layer it).

Step 4: top your bowls or cups with granola, pecans, raisins, coconut shreds, and/or agave syrup. Happy eating!


Don’t store your bionicos all together as they will become soggy (although still very delicious).

Since we’re confident you know how to store fruit and granola, the following instructions are for keeping the cashew crema fresh.


This vegan crema will store in your fridge for up to 3-5 days. Just use an airtight glass container to keep the flavors nice and fresh.


Can’t get through all the crema? No problem! Store it in your freezer for up to 6 months!


If you know you want to use the crema in advance, thaw it in your fridge overnight. The next day, give it a whisk or blitz in your blender to smooth it out.

We’d like to share some tips and tricks we learned while experimenting with a vegan version of these Mexican fruit salad bowls:

  • Soak the cashews. Let the cashews soak for the full 12 hours, especially if you don’t own a high-speed blender.
  • Make it sugar free. If you want to limit added sugars, try using monk fruit or stevia instead of sugar at a ratio of 1:8 (⅛ tablespoon of stevia = 1 tablespoon of sugar).
  • Serve it chilled. If you want a cold ensaladas de frutas, chill the fruit overnight in your fridge.
  • Choose your crema consistency. If you prefer a thicker or thinner crema, just adjust the liquid while blending.
  • No toppings? No problem. If you don’t have any toppings or want to cut down on the cost, fruit with crema is equally tasty.

To a large extent, it does tend to depend on the kind of fruits that you use. For instance, if you plan on using more exceptionally sweet kinds like strawberries and guava than the more simplistic flavors of apples and bananas then you’ll use a cream that won’t compete with them for flavor.

What You Will Need To Make Your Bionico Cream Recipe


  • Large mixing bowl
  • 4 individual bowls
  • Large stirring utensil


For the crema

  • 1/3 cup of plain yogurt
  • 1/3 cup of Mexican crema
  • A teaspoon of vanilla extract
  • 1/3 cup of sweetened condensed milk

For the fruit salad

  • A cup each of strawberries, papaya, red apple( or other colors for extra sweet), banana, and cantaloupe(or honeydew for extra sweet)
  • Half a cup each of granola, raisins, and shredded coconut

Step by Step Instructions For Your Bionico Cream Recipe

Step 1: Mix ingredients with the crema

In a bowl mix together all the ingredients for the crema, except for the vanilla extract. Once you have a good consistency you can then add in the extract and stir it further until it’s mixed in as well.

Step 2: Cut the fruits

Cut up all of the fruits, except for the strawberries, into small manageable cubes and slice up the strawberries into slices. 

Step 3: Divide the fruit

In equal amounts, divide the cubed fruits into the 4 individual bowls. Then place the strawberries in the center on top. 

Step 4: Prepare the topping

Now comes the time for the topping. Spread an 1/8th of a cup of the raisins, granola, and shredded coconut on top of everything, making sure to spread pretty evenly throughout.

Step 5: Serve

Enjoy it in cups.

Tips and Tricks for Your Bionicos Recipe

This Bionico fruit cocktail has come a long way and you can make your own version, especially when it comes to the toppings that you add to it. When you order it off the street in Mexico you’ll usually be offered a bit of honey drizzle to top it off, but you can also add any number of other toppings. Think of it as though you were in an ice cream parlor, everything like sprinkles, chocolate chips, powdered sugar and even cinnamon make wonderful additions!

It might interest you to learn that some restaurants have even been known to add liquor to the fruit to make it a more socially friendly treat to enjoy when going out with loved ones. So if you want to do this at home just pour the liquor of your choice on top of the fruit before adding the toppings. Sweet brands like Kahlua and Baileys make for good flavor combinations.

Each bowl should have around 450 calories, so do keep this in mind when you’re planning meals around this sweet and nutritionally packed treat. For a healthier crema, you can use creme fraiche or even cottage cheese instead, although it will make for a simpler flavoring.

Make sure that you ask everyone about the kinds of fruits that they would like to enjoy. For instance, a lot of people like to avoid banana and/or apple in their bionico as they may find the taste to be too plain and would much rather eat something that has more of a kick.

When a bionico is well made it is very satisfying, refreshing, and feels like a wonderful explosion of flavor with each bite that you take. As a matter of fact, many people in Mexico eat it shortly before heading out to a business meeting, the gym, or on a run as it gives them the energy to really push them forward. It’s also a great opportunity to make sure that you eat enough fruit, which is important as the majority of people eat much less than the recommended daily portions that scientific studies suggest.

It dazzles the eye and can really raise your spirits when your energy level is low, which is neat when you consider how it doesn’t require too much effort to prepare and that you can make a batch and put it away in the fridge for later.
