While many blueberry cobbler recipes use a drop biscuit topping over top the fruit, we’ve added a layer of homemade pie crust. This pie crust is buttery, flaky and golden brown. Perfect on top of this cobbler with fresh blueberries.

  • Tapioca– Used to thicken the blueberry filling. No need to pre-cook the pie filling as it bakes. (You can find it in the baking aisle in most grocery stores
  • Cinnamon and nutmeg– These two spices add a wonderful flavor to this cobbler recipe!
  • Butter– Adds a depth of richness to this cobbler.
  • Pie crust– Use homemade or store-bought. Weave a lattice crust or just simply cover the top and cut a few holes for steam to escape.

COBBLER BISCUIT TOPPING

You can also cover the berries with a sweet biscuit topping and bake. Cobbler biscuit topping is simple to make with only a few easy to find ingredients.

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, cold
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 large egg, lightly beaten

Instructions– Combine the flour, sugar, baking powder and salt in a mixing bowl. Cut in the butter using a pastry cutter or two forks until the mixture resembles coarse cornmeal. Gradually stir in buttermilk, vanilla and egg. Spoon the batter evenly over the blackberry mixture.

HOW TO MAKE BLUEBERRY COBBLER

  • Combine the ingredients – combine blueberries, sugar, cinnamon, nutmeg, lemon juice and zest in a large bowl.
  • Add ingredients to baking dish – Scoop the mixture into a prepared baking dish.
  • Top with pie crust – Cut strips of pie crust and place them all one direction. Pull every other one back and place a pie crust strip going the opposite direction.
  • Brush with egg wash – Gently use a pastry brush the pie crust layer with egg wash. Sprinkle with sugar.
  • Bake – Bake for about 60 minutes in a preheated 400 degree F oven. Let cool to set the filling.

THE BEST CLASSIC BERRY COBBLER

The Best Classic Berry Cobbler recipe can be made with raspberries, blackberries, or the berry of your choice. Just make sure you serve it with some ice cream!

INGREDIENTS

  • 4 cups your choice of fresh berries (I use blackberries & raspberries)
  • 1 cup granulated sugar
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1 (9-inch) pie dough (homemade pie crust or store bought)
  • 1 tablespoon butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Vanilla ice cream, optional

INSTRUCTIONS

  1. Preheat oven to 400°F. Grease a 9×9 baking dish. Set aside.
  2. In a medium bowl, toss together berries, sugar, flour and salt. Pour into prepared baking dish.
  3. Cut pie dough into 2-inch squares. Arrange squares in a patchwork pattern over berry mixture, leaving openings for steam to escape. Brush dough with melted butter and sprinkle with sugar and cinnamon.
  4. Bake for 30 to 35 minutes or until crust is deep golden and berry mixture is bubbly. Transfer to a wire rack to cool slightly. Serve warm with a big scoop of vanilla ice cream.

Note: If using frozen berries instead of fresh, allow berries to come to room temperature on top of paper towels. This will allow any ice crystals to melt off and not wind up making your cobbler soupy.

HOW TO STORE AND REHEAT BLUEBERRY COBBLER

Blueberry cobbler is best enjoyed immediately, the same day it’s baked. Store leftover cobbler, covered with plastic wrap in the refrigerator for up to 3 days.

Reheat blueberry cobbler in either the microwave or oven. If reheating cobbler in the oven, bring the dish to room temperature on the counter. Then place in a preheated 375 degree oven for 15-20 minutes, or until warmed thoroughly. Cover the pie crust with aluminum foil to prevent it from browning too much.

Lattice pie crust is weaved pie dough across the pie filling. It’s not only a beautiful way to decorate a pie or fruit cobbler, it also lets steam escape between the holes.

  • Use a quality pie – Whether that’s making your own pie crust or using a store-bought one. Make sure it’s a quality pie dough that is sturdy and will hold up to weaving a lattice crust.
  • Cut dough into strips – Use a pastry wheel or small pizza cutter. You can also use a ruler as a guide to make straight lines.
  • Refrigerate pie strips – Place strips onto a half sheet pan lined with parchment paper and refrigerate for 30 minutes to 1 hour. (Making them super chilled.)
  • Place pie strips vertically over pie – Lay strips vertically, starting in the center of the pie so it is even.
  • Place pie strips opposite direction – Pull back every other strip and lay a strip of pie dough the opposite direction.
  • Repeat these steps – Weaving the strips over and under until your pie is completely covered.

TIPS ON WORKING WITH PIE CRUST

  • Keep the pie dough chilled– always. If it gets to warm, plop it back into the fridge or even the freezer for a bit.
  • Doesn’t have to be perfect! Working with pie dough and weaving a lattice crust takes practice. Don’t stress and remember it doesn’t have to be perfect. It will still taste amazing!

This blueberry cobbler recipe is a wonderful summer dessert made with fresh ripe blueberries. You can also use frozen berries any time of the year. The pie dough is super easy to make from scratch or use a store-bought refrigerated pie crust. The cream cheese adds just enough creaminess to the berries.

When I make a small cobbler in a baking dish I don’t use a bottom crust, just seems like too much pie crust to berry ratio for my liking. You can certainly make this in a more traditional manner and par-bake a bottom crust for more of pie.

No mixer is needed here, just a bowl or large measuring cup and a wooden spoon. I like to call this quiet baking because sometimes you just don’t want to pull out a mixer.

  • The recipe calls for two and a half cups of fresh blueberries, however, it’s perfectly fine to use frozen blueberries. You can also substitute another berry or combine it for a mixed berry cobbler.
  • Neufchatel cheese or low-fat cream cheese can be substituted for the two tablespoons of cream cheese. You can omit the cream cheese but it really adds a layer of creamy goodness that makes the blueberry pie over the top yummy.
  • The one-sheet of pre-made pie crust makes this a super simple dessert. However, you can make your favorite pie crust from scratch. If you save pie crust dough scraps, this is a good use for those bits and pieces. Other ways I’ve made this is with a graham cracker crust topping.
  • The cornstarch is used to thicken the blueberry filling.
  • You can adjust the sweetness of the pie by adjusting the amount of sugar in the recipe.

  1. In a large measuring cup add the blueberries, sugar, cornstarch, and squeeze of lemon juice and stir to mix. Let sit while you roll out the crust and preheat the oven.
  2. Pour the blueberries into a small baking dish and dollop with cream cheese. The cream cheese will melt into the blueberries.
  3. Roll out the pie crust and cut into strips. *the crust is only on the top*
  4. Create a lattice pattern on top of the blueberries.
  5. Bake at 350 degrees for about 35-40 minutes, or until the crust turn a nice golden brown.
