  • Step 1Preheat broiler to high.
  • Step 2Heat a saucepan over medium-high heat. Coat pan with cooking spray. Add garlic and pepperoni; cook 2 minutes or until garlic begins to brown, stirring frequently. Add oregano; cook 30 seconds. Add marinara sauce; bring to a boil. Reduce heat, and simmer 5 minutes. Remove from heat; stir in basil.
  • Step 3Heat a large ovenproof skillet over medium-high heat. Add oil; swirl to coat. Sprinkle chicken with pepper. Add chicken to skillet; cook 5 minutes or until lightly browned, turning after 3 minutes. Spoon sauce over chicken; sprinkle evenly with cheese. Broil 2 minutes or until cheese melts.

How to make Chicken Marinara in the slow cooker:

  • slice onions and peppers and place in bottom of slow cooker. Top with uncooked chicken and marinara. Add in herbs. Stir and cook for 4-5 hours on low or 3-4 on high.
  • shred cooked chicken with two forks. Stir into sauce and serve over cooked pasta or rice.

  • slice onions and peppers and place in bottom of 9 x 13 baking dish. Top with uncooked chicken and marinara. Add in herbs. Stir and bake at 400 degrees for 45-50 minutes or until meat is very tender.

  1. Coat the chicken in 1 tbsp olive oil and the seasonings.
  2. Cook the chicken for about 4 minutes on each side.
  3. In the same skillet, saute garlic about 1 minute.  Add in tomatoes, oregano, and salt, and mash the tomatoes with the back of a spoon while simmering.  Add in the basil sprigs, cover, and simmer for 10 minutes.
  4. Add the chicken back into the skillet, spooning sauce onto the chicken. 
  5. Top with mozzarella and bake for 7-10 minutes.

What type of Chicken do I need for this recipe?

It’s easiest to use boneless skinless chicken breasts.  However, you can use boneless skinless chicken thighs if you prefer that cut.  You just may have to increase the cooking time a little bit to reach 165°F.

If you want to extend the shelf life of any pasta or marinara, freeze it in covered airtight containers or heavy zipped freezer bags at a temperature of about 40 ℉ Or more. Do not put hot sauce directly into the container. First, let it cool for some time, and then put the sauce in the airtight bag and refrigerate to balance the temperature.

2. Medicinal Interaction

Vitamin K is in marinara sauce in a reasonable amount and has coagulation properties. Therefore, taking it with tablets is like warfarin, commonly called coumadin, which slows down the process of making clots, and can be counterproductive.
