Chicken with broccoli is a common dish that I’m sure everyone knows how to prepare. This blog post will outline just that: the preparation instructions for a healthy chicken (skin on, bone in) with broccoli (two cups of florets) dish.

When the kids don’t want what I want them to want, they can usually be convinced with a bribe. In this case, said bribe is a plate of Chicken With Broccoli.

The sauce in this broccoli chicken stir fry is perfectly “saucy,” making it ideal for serving over steamy white rice. Homemade Chicken and Broccoli is an easy 30-minute meal and it has the best stir fry sauce.

Ingredients & Substitutions for Stir Fry:

  • Chicken – we used boneless skinless chicken breast, but chicken tenders or even thighs would be delicious here.
  • Stir Fry Veggies – We love the combination of broccoli, onions, and mushrooms for an authentic Chicken Broccoli Stir fry. You could sub the broccoli with snap peas or zucchini and sub onions with julienned carrots.
  • Chicken Broth – this adds more flavor, but water can easily be substituted.
  • Low Sodium Soy Sauce – Since different brands have different amounts of salt, add soy sauce to taste. You can always add more at the end, but you can’t take salt out of a dish. For gluten-free, use Tamari sauce.
  • Sesame Oil – this one ingredient gives the sauce authentic Chinese stir fry flavor. Do not skip it.
  • Ginger & Garlic – fresh is best for stir fry, but in a pinch, you can substitute 1 tsp fresh garlic for 1/2 tsp garlic powder and substitute 1 tsp fresh ginger for 1/8-1/4 tsp ground ginger.
  • Brown Sugar – we used 2 Tablespoons of packed light brown sugar. You can substitute with 1 1/2 Tbsp to 2 Tbsp of liquid sweetener like honey, or add it to taste.
  • Corn Starch – using cornstarch as a thickener helps keep this gluten-free.

Pro Tip: It’s easiest to peel fresh ginger using the edge of a teaspoon. Simply scrape the skin away. Try it – it’s so easy.

How to Make Broccoli and Chicken Stir Fry:

  1. Make the Sauce: Combine all of the sauce ingredients and stir to dissolve the sugar. The warm broth will help the sugar to dissolve easily.
  2. Cook Chicken: Cut chicken into small 3/4″ bite-sized pieces and season lightly with black pepper. Heat a large heavy skillet over medium-high heat with 1 Tbsp oil. Add chicken and cook 1 minute undisturbed then stir fry 5 minutes until golden and just cooked through. Remove chicken to a bowl.
  3. Sautee Veggies: In the same skillet over medium-high heat, add 1 Tbsp oil, broccoli florets, sliced onion and mushrooms and stir fry 3 minutes until mushrooms are softened then reduce heat.
  4. Add Stir Fry Sauce: Give the sauce a quick stir in case there was settling and add it to the skillet. Simmer the sauce over medium/low heat for 3-4 minutes until thickened and garlic and ginger have mellowed in flavor. To thin the sauce, add water as needed and you can add more soy sauce to taste.
  5. Return Chicken to the Pan and stir until heated through then serve over white rice garnished with sesame seeds if desired.

The KEY to Cooking Stir Fry:

A stir fry is essentially flash cooked on a very hot skillet (less than 15 minutes of cooking time). Since this recipe moves fast, you want to have every ingredient chopped, measured, prepped and ready to use before you fire up the skillet. If serving with white rice, you’ll want to put the rice on the stove first then cook your stir fry.

For those nights when you just need dinner on the table…like that…this easy chicken and broccoli recipe won’t let you down!

It’s been one of my go-to quick and healthy dinner standbys for years and years now. And, since I first posted this recipe on the blog four years ago, thousands of you have now also made and loved it, and reported back that it’s one of your faves too. Understandably! This one is incredibly quick and easy to make, the zesty stir-fry sauce is made with simple ingredients you like keep stocked your pantry, and that classic duo of chicken and broccoli always has a way of hitting the spot. Simple and healthy stir-fry FTW!

That said, as much as I love the classic chicken and broccoli combo, I should note that this recipe’s incredibly versatile if you want to mix things up. For example, feel like subbing in a different protein? Go for it. Have some leftover zucchini or onions or bell peppers or other veggies on hand? By all means, toss ’em in too. Feel like serving it up over quinoa or noodles, or even just some sautéed greens? Use whatever you have! The sky’s the limit for customizing here. But…this base recipe is an excellent one to bookmark as a good place to begin.

So that when life gets busy, yet you still want a healthy homemade dinner you can feel good about, this winner winner of a chicken dinner can be on the table in no time.

12-Minute Chicken and Broccoli Recipe

First, a quick tutorial on how to chop broccoli, in case you need a refresher.

As you can see, there’s not much to it. Just cut up a few chicken breasts into bite-sized pieces. Sauté them in a skillet until cooked through. Then add the chopped broccoli and sauté for a few more minutes with the chicken, until it turns bright green and slightly tender (but I like mine to still be very crisp).

Then meanwhile, as the chicken and broccoli are cooking, whisk together a simple stir-fry sauce. As I mentioned above, I’ve kept the ingredients for this one limited to a short list of pantry staples. So (hopefully!) it should be an easy one to whip out, without having to make an extra trip to the store. Just stir it in at the last second and stir for a minute or so, until thickened.

DESCRIPTION

This quick Chicken and Broccoli Stir-Fry recipe is full of zesty flavors, it’s easy to customize, and it can be ready to go in a snap!


INGREDIENTS

STIR-FRY INGREDIENTS:

  • 2 tablespoons olive oil, divided
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • salt and pepper
  • 1 batch Stir-Fry Sauce (see below)
  • 1 bunch broccoli, chopped into small florets, stem discarded
  • 1 teaspoon toasted sesame oil
  • toppings: sliced green onions, toasted sesame seeds

STIR-FRY SAUCE INGREDIENTS:

  • 2/3 cup water
  • 1/3 cup reduced-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons honey
  • 2 cloves garlic, peeled and minced
  • 1 teaspoon ground ginger

INSTRUCTIONS

TO MAKE THE STIR-FRY:

  1. Heat 1 tablespoon olive oil in a large sauté pan over medium-high heat. Add chicken breasts, and season with a generous pinch of salt and pepper. Cook for about 5 minutes, stirring occasionally, until the chicken is browned and mostly cooked through.
  2. While the chicken is cooking, make your sauce. (See below.)
  3. Once the chicken is browned, add the remaining 1 tablespoon of olive oil and broccoli, and stir to combine. Continue cooking for an additional 3 minutes, until the broccoli is bright green. Stir in the sauce, and cook for an additional 1 minute until the sauce has thickened.  Remove from heat and stir in the sesame oil until combined.
  4. Serve warm, garnished with green onions and toasted sesame seeds.  Or transfer to a sealed container and refrigerate for up to 3 days.

TO MAKE THE SAUCE:

  1. Whisk all ingredients together in a small bowl until combined.

NOTES

I slightly tweaked the sauce recipe in 2017, to add just a bit more to the recipe.  But it should still taste the same! 🙂

Hello easiest-dinner-ever. It’s such a quick, speedy stir-fry using of course, chicken thighs (my favorite!), yielding the juiciest, most tender chicken bites ever. But don’t worry, you can swap them out for chicken breasts if dark meat is not your thing.

I also added some broccoli for those sneaky greens, soaking up all that saucy goodness. But you can use any veggies you have on hand – carrots, zucchini, cauliflower, snap peas, baby corn, you name it! They are all good here.

INGREDIENTS:

  • 1/2 cup chicken stock
  • 1/4 cup oyster sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • 1 teaspoon Sriracha, optional
  • 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons cornstarch
  • 1 tablespoon canola oil
  • 1 tablespoon sesame oil
  • 3 cups broccoli florets
  • 1/2 teaspoon toasted sesame seeds

DIRECTIONS:

  1. FOR THE CHICKEN STOCK MIXTURE: In a small bowl, whisk together chicken stock, oyster sauce, vinegar, ginger, garlic and Sriracha, if using; set aside.
  2. Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  3. In a medium bowl, combine chicken and cornstarch.
  4. Heat canola oil and sesame oil in a large skillet over medium high heat.
  5. Working in batches, add chicken to the skillet in a single layer and cook until golden brown, about 7-8 minutes. Stir in broccoli and CHICKEN STOCK MIXTURE until broccoli is just tender, about 3-4 minutes.
  6. Serve immediately, garnished with sesame seeds.
