Chances are that you probably love Chicken with Cheese and Ham. I know I do. Growing up, it was my favourite food.. well, that along with absolutely anything else that was deep-fried, so I’m not sure we can really call it a ‘food’. 

Chicken with Cheese and Ham – a quick, easy and tasty recipe. Great for the whole family. Kids love this meal, even my picky little boy!

Sunny’s Ham and Cheese Stuffed Chicken Breasts (Chicken Cordon Bleu)

Ingredients

16 thin slices deli ham, chopped

8 ounces shredded Swiss cheese 

4 boneless, skinless chicken breasts 

1 cup all-purpose flour 

Kosher salt and freshly ground black pepper

1 teaspoon sweet paprika 

2 large eggs, whisked 

3 cups panko breadcrumbs 

Peanut or vegetable oil, for frying

Directions

  1. In a medium bowl, mix the ham and cheese. Gently slice a lengthwise pocket into each chicken breast. Stuff each breast with the ham and cheese mixture and secure with a skewer or a few toothpicks.
  2. In a medium shallow bowl, add the flour and season with a pinch of salt and a few grinds of black pepper. In a second medium shallow bowl, add the mustard, paprika, eggs, a pinch of salt and a few grinds of pepper and whisk to combine. In the third medium shallow bowl, add the panko. Run each piece of chicken through these bowls in the order of setting them up: flour, egg then panko.
  3. In a large straight-sided pan, add enough oil to just cover the bottom by about 1/4 inch. Heat on medium high and when the oil begins to swirl, add the chicken in batches, placing each piece in the oil away from you so there is less splatter. Add more oil between batches if needed. Cook until the chicken reaches an internal temperature of 160 degrees F, 10 to 15 minutes. Remove to a paper towel-lined plate and season with a pinch of salt and a tiny spritz of lemon.

Once stuffed they are dipped in egg and coated with bread crumbs. Next they are pan-fried until golden on each side and popped in the oven to finish cooking. I find they cook a little more evenly in the oven.

A 3 ingredient sauce that is made in the microwave makes the perfect accompaniment for these Ham and Cheese Stuffed Chicken Breasts.

Ingredients

  • ▢4 boneless, skinless chicken breasts
  • ▢4 teaspoons Dijon Mustard
  • ▢8 thin slices deli ham
  • ▢4 thin slices swiss cheese
  • ▢salt and pepper
  • ▢toothpicks
  • ▢1 egg beaten together with 1 tablespoon water
  • ▢1 heaping cup dry bread crumbs
  • ▢1 tablespoon butter
  • ▢1 tablespoon Vegetable or olive oil

Mustard Cream Sauce

  • ▢1/2 cup heavy cream
  • ▢2 tablespoons Dijon mustard
  • ▢1 tablespoon freshly grated Parmesan cheese

Instructions

  • Preheat oven to 400 degrees.
  • Cut a horizontal slit in the side of each chicken breast to form a pocket.
  • Spread 1 teaspoon of Dijon mustard inside each pocket and then stuff each pocket with 2 pieces of ham and 1 piece of cheese. Secure with toothpicks.
  • Dip each chicken breast in the egg mixture, coating both sides.
  • Press bread crumbs into both sides of each chicken breast.
  • Heat oil and butter in a large oven-proof skillet over medium-high heat. If you don’t have an oven-proof skillet, use any skillet that you have, but you will need to transfer chicken to a baking dish before placing in the oven.
  • Once hot, add chicken to pan. Cook about 2 minutes, or until golden brown on the bottom. Flip each piece of chicken over and then place skillet in the oven.
  • Bake for 20 to 22 minutes or until cooked all the way through.
  • To make sauce, combine all ingredients in a microwave-safe bowl and microwave until warm.

Ham and Cheese Chicken Bake

This easy Chicken Bake with Ham and Swiss Cheese takes only 30 minutes to make!  Super easy recipe with lots of flavors!  Dijon mustard, ham slices, and Swiss cheese are layered on top of the chicken breasts and then baked for about 30 minutes.

This ham and cheese chicken bake is just like stuffed chicken but much easier. I love stuffed chicken but sometimes I want something REALLY simple like this baked ranch chicken or comforting buffalo chicken bake with bacon.   In this recipe, you don’t need to roll the chicken meat, or use a toothpick to hold chicken together.   Everything is easy!

All you need is a casserole dish (or a deep baking dish) and the recipe ingredients.  The simple cooking technique in this recipe is very similar to my super popular cream cheese chicken.

Pile all the ingredients on top of one another in a casserole dish and bake!    The result is delicious!  Ham, Swiss cheese, and mustard on the chicken breast are an amazing combination!

Cook’s Tips:

  • Use thinly sliced chicken breasts.  If you have large chicken breasts, slice them horizontally in half to make them thinner.  You don’t even need to pound the chicken. This way, you have less chicken meat for all the good stuff on top, and, therefore, you get more flavor with each bite!
  • Thinly sliced chicken breasts should be cooked through in 20 minutes (in the preheated oven at 375 F).  However, keep in mind that your chicken may cook longer depending on your oven and the thickness of your chicken breasts.
  • Use any kind of mustard: Dijon mustard, grainy mustard, etc.  Use  1 tablespoon of mustard per each chicken breast.

What to serve with Ham and Cheese Chicken?

Serve simple, comforting side dishes:

  • Mashed potatoes
  • Jasmine rice or flavored rice
  • Roasted veggies, such as asparagus, broccoli, bell peppers
  • Cauliflower “mashed potatoes” (made without actual potatoes) or cauliflower rice
