Having literally loads of boneless skinless chicken breasts because I buy in bulk whenever they are on sale, I’m always looking for different ways to make them. Personally I find them too dry to bake so I try to introduce sauce into the mix and I prefer to cook them stovetop so they don’t overcook.

I visit Allrecipes often because there I find lots of every-day-type meals that have many photos from folks who’ve actually made the recipe and lots of reviews where cooks tell it like it is! And that’s where I found the original recipe for this chicken.

One thing I didn’t care for and changed was the way the chicken is cooked. Originally, it was done on a BBQ grill. There were instructions for oven, but as I said before, I prefer not to cook this cut by either of those methods.

So what I did was bread them with Italian-flavored bread crumbs and saute them in a bit of olive oil. Another thing I always do is hammer chicken breast to a uniform thickness so the cutlet cooks evenly. I also find it tenderized them some and does prevent them from becoming too dry. One more plus to doing this is they cook faster–and that always helps with this less-juicy cut.

I also changed the proportion of garlic and cheese. I wanted the cheese to be at best a condiment and let the garlic shine through. I also found that this needed double the amount of flour because the sauce was on the thin side for my taste.

After I cooked the chicken, I did something I rarely do–wiped out the pan with a paper towel. Reason is, I wanted the sauce to be totally white and not get discolored from the browned bits in the pan. If you don’t mind a slight discoloration, then don’t wipe out the pan. Your sauce, of course, will have more flavor because the browny bits are loaded with flavor.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup half-and-half -OR- light cream
  • 1 – 1 1/2 cups Italian flavor bread crumbs
  • 2 tbsp olive oil divided

SAUCE

  • 2 tbsp butter
  • 2 tbsp finely minced garlic
  • 2 tbsp flour
  • 1/2 cup chicken stock
  • 1 cup cream heavy cream preferred
  • 1/4 cup grated Parmesan cheese
  • 2 oz softened cream cheese
  • 1 tsp salt
  • 1/4 tsp white pepper

Instructions

  • Using a meat mallet (smooth side), pound each breast between sheets of plastic wrap or wax paper to 1/4-inch thickness. This will give you a pretty large piece of chicken, so what I do is cut each pounded-down breast in half lengthwise.
  • Heat a large skillet over medium heat; add 1 tbs of the olive oil.
  • Dip each piece of chicken in the cream, letting excess cream drip off, then dredge in the Italian bread crumbs. You will probably have to cook the chicken in 2 batches.
  • Place chicken in hot skillet, browning well on each side, about 5 minutes each side, until chicken tests done (175 degrees F or juices run clear when you cut.
  • Add remaining 1 tbs of oil and repeat browning with remaining chicken.
  • Place chicken on a platter, cover and keep warm in a 200 degree F oven.
  • Wipe out the skillet, if desired.
  • Melt the butter over medium heat and add the garlic.
  • Cook garlic until it becomes fragrant–about 3-5 minutes–don’t let it brown!
  • Add the flour and blend it well into the butter/garlic. Let this cook about 1 minute.
  • Slowly add the chicken stock stirring constantly until there are no lumps.
  • Slowly blend in the cream then add the salt and pepper. Cook for about 5 minutes.
  • Add the Parmesan and cream cheese and stir until the cream cheese melts and blends into the sauce.
  • Pour sauce over chicken and serve immediately.
  • Serves 4 hearty appetites, 8 light appetites

If you’re anything like me, you love garlic. I like garlic to an almost unhealthy level (like warding off vampires level…). Garlic is by far my favorite herb to season my foods with. I put it in pasta, season my chicken with it, and of course, I love good toasty garlic bread.

Garlic is simply seasoning perfection. It has a slightly spicy flavor that when cooked becomes deliciously sweet and makes your mouth water with anticipation for that moment you take your first bite.

This garlic butter chicken has tons of garlic in it. But, don’t fret… you won’t be scaring people off with your breath. Because you’re sautéing it, the garlic gives off more of its sweet flavor than the stinky breath-causing flavor. 🙂

INGREDIENTS FOR GARLIC BUTTER CHICKEN

The thing I love most about this garlic butter chicken breast recipe is that it only uses ingredients that are staples in my pantry. No trips to specialty grocery stores, no last-minute sending my husband out for an ingredient that I totally forgot. That’s what makes this dinner an easy weeknight dinner… I can make it on a total whim!

Chicken –  I usually grab a pack of thin-cut boneless skinless chicken breasts for this recipe. One less thing to prep. However, you can also buy regular chicken breasts and cut them in half to create 4 thin-cut breasts.

Buy whatever is on sale, there’s no wrong answer here. You just want the chicken thin so it cooks quickly and all the way through.

Chicken Seasoning – so you’re not going to really bread your chicken breasts, but you will give them a quick dredge to give them that golden crisp that tastes amazing. To make this seasoning you’ll need some flour, grated parmesan, salt, garlic powder, salt, and pepper.

Sauce – garlic butter sauce for chicken is delicious and SO easy to make. For this garlicky perfection, you’ll need olive oil, butter, onion, garlic (a whole head of it, you won’t regret it!), chicken broth, cream, some more grated parmesan, and parsley.

HOW TO MAKE CREAMY GARLIC BUTTER CHICKEN

Like I’ve already mentioned, this is one of my go-to busy mom meals. Simple ingredients matched with quick and easy cooking make for the ultimate dinner. So, grab your favorite skillet and get cooking!

  1. Start by prepping your chicken seasoning: in a shallow bowl, combine your flour, parmesan cheese, salt, pepper, and garlic powder.
  2. Dredge your chicken breasts in the flour mixture and shake off the excess. Remember – we’re not BREADING your chicken here, just giving it a thin coating to get that nice crisp to the chicken.
  3. Next, in a large skillet over medium high heat, heat the oil and the butter. Add the chicken and cook for about 3-5 minutes on each side (or until the chicken is cooked through and golden brown).
  4. Remove your cooked chicken from the pan and set it aside. Don’t get rid of those pan drippings though! Keep them in the skillet as the base for your creamy garlic butter sauce.
  5. Now grab that head of garlic and peel it. Smash the large cloves of garlic, the smaller ones can stay intact.
  6. In the skillet (with all those juicy drippings!), add the onions and cook until they’re translucent.
  7. Add in the garlic and saute.
  8. Next, add a little broth to the pan to deglaze it. Then add the rest of the broth and the cream.
  9. Cook the sauce until it is reduced and a little thicker. It will still be somewhat thin, don’t worry. The parmesan cheese will thicken it up!
  10. Add in the parmesan cheese and salt and pepper to taste.
  11. Return the chicken to the pan and cook for about 2 minutes more – this step really gets that garlicky flavor infused into your chicken breasts.
  12. Sprinkle with parsley and a little extra parmesan, serve and enjoy!

HOW DO YOU COOK CHICKEN BREAST WITHOUT DRYING IT OUT?

Chicken is for sure one of my favorite meats to cook with. It’s just so versatile and delicious (not to mention a great source of lean protein!). But, if cooked incorrectly, chicken can be dry, tough, and simply unappetizing.

I’ve found that in order to keep chicken tender and moist, you’ve got to cook it on relatively high heat for a short time. The thinner your chicken breasts, the easier it is to cook to a safe temperature without letting it dry out.

It’s also super helpful to cook and serve the chicken with a sauce. Garlic butter sauce for chicken is a perfect example! The sauce not only infuses the chicken with tons of creamy flavor, but it also helps to lock the moisture of the chicken inside!

Many people don’t like chicken breasts because they are dry and hard to swallow. However, this chicken breast recipe provides juicy and tender breasts smothered in a very garlicky and flavorful sauce.

I flour them lightly and pan fry until crispy. The coating seals the moisture and yields super tender and succulent breasts.

Then, they are added to an incredibly garlicky sauce. I use both garlic cloves and garlic powder because garlic cloves alone don’t provide strong garlic flavor. However, I use garlic powder only for seasoning chicken breasts. This guarantees that the garlic flavor won’t be overpowering. Don’t add it to the sauce!

  • First, you need to slice chicken breasts in half lengthwise to make 4 fillets, using a sharp knife. I recommend slicing instead of pounding breasts or leaving them whole. This guarantees fast and even cooking. It is seriously a 30 minute meal when you slice them.
  • Dredge each fillet in flour-cheese mixture. The flour coating keeps the moisture inside the chicken and helps the sauce to thicken later.  For gluten free or low carb creamy garlic chicken, substitute all-purpose flour for almond flour. Fry chicken until cooked through and golden. Transfer to a plate. You may need to fry chicken breasts in batches if your pan is small enough to accommodate all the fillets.

Creamy Garlic sauce

It is a one pan meal. Make the sauce in the same pan with all the brown bits left from chicken.

  • Once the chicken is cooked through, transfer to a plate.
  • In the same pan sauté onion until tender, then add the garlic and cook until fragrant, about 3-5 minutes.
  • Add the chicken stock and cream. Allow to simmer for a few minutes. Finally, add the cheese and cook until it melts through. Season with salt and pepper and garnish with fresh parsley.

The beauty of this creamy garlic sauce is that the garlic is NOT overpowering! To achieve this, make sure to caramelize it, cook for 3-5 minutes (depends on the size of the garlic cloves).  For a milder flavor, don’t smash garlic cloves, add them whole. You can increase or decrease the amount of garlic and customize the recipe to your liking. Alternatively, you can even chop or mince them.

INGREDIENTS

For The Chicken:

  • Chicken breasts ( skinless and halved horizontally to make 4-5)- 2-3 
  • Salt – 2 teaspoons
  • Ground black pepper- 1 teaspoons
  • Garlic powder- 2 teaspoons
  •  All-purpose flour- 4 tablespoons
  • Fresh grated Pecorino Romano cheese- 4 tablespoons
  • Vegetable oil- 3 tablespoons
  • Unsalted butter- 2 tablespoons

For The Sauce:

  • Onion (finely chopped)-1
  • Garlic cloves- 13-14
  • Chicken stock or broth- 1 ¼ cup
  • Half & half or heavy cream- 1 ¼ cup
  • Fresh grated Pecorino Romano cheese-½ cup
  • Fresh parsley ( finally chopped)- 2 tablespoons or as needed

INSTRUCTIONS

  1. Place chicken fillets on the cutting board, pat dry and season  with ground black pepper, salt and garlic powder on both sides.
  2. Combine the flour and Pecorino Romano cheese in a shallow bowl.  Dredge the chicken in the flour-cheese mixture and shake off excess.
  3. In a large non stick pan/ skillet heat vegetable oil and butter over medium high heat. Once the oil is hot, add the chicken and fry  until golden  and cooked through, about 10 minutes ( 5 minutes per side). You might need to fry chicken in batches. Transfer the cooked chicken to a plate. Keep aside.
  4. In the same pan/ skillet saute onion until translucent and soft over medium heat.
  5. Using a heavy knife, smash about 7-8 garlic cloves. Simply place the blade on the clove and press the blade down on the clove. Add the smashed garlic together with whole garlic cloves to the pan and saute until fragrant, about 3 minutes.
  6. Add the chicken stock , scraping any brown bits.  Allow to simmer for 2-3 minutes over medium-low heat. 
  7. Pour in the half & half, then bring  the sauce to a simmer for 2 minutes.
  8. Add  the Pecorino Romano cheese and cook until the cheese melts. Season with black pepper. Adjust salt to your liking. 
  9. Return the chicken back to the pan. 
  10. Garnish with  fresh parsley.
