What is Mustard Chicken?

Mustard chicken is a pan-fried chicken with creamy mustard sauce. It’s easy and delicious! Mustard Chicken is a dish that originated in China. It consists of chicken and vegetables cooked in a sauce that includes mustard and other spices. The dish can be served as an entrée or as an appetizer.

Ingredients:

  • Chicken breast – I recommend this free-range chicken that gets delivered right to my door.
  • Olive oil – Or any other oil suitable for high-heat cooking, such as avocado oil.
  • Sea salt & black pepper

For The Simple Sauce

  • Garlic – Freshly minced or jarred garlic will work.
  • Chicken broth – Use low-sodium chicken broth like this one.
  • Heavy cream – This helps to create a silky smooth sauce. For a dairy-free option, you can sub this with coconut cream.
  • Fresh thyme leaves – Use 1 tablespoon fresh, or swap in 1 teaspoon dried.
  • Dijon mustard – I highly recommend this whole-grain Dijon mustard, but any kind will work.

How To Make Mustard Chicken

We begin using the same method I do for all my pan-seared chicken breast recipes…

  • Season. Season chicken breasts with salt and pepper on both sides.

  • Sear. Heat oil in pan and saute chicken on each side, until golden and cooked through. Transfer to a plate and cover to keep warm.

TIP: For best results, use a meat thermometer to check for doneness. The chicken is ready when it reaches an internal temperature of 165 degrees F. To prevent it from drying out, I usually prefer to bring it to just 162 degrees F, as the internal temperature will rise a few degrees as it rests covered in foil while you make the sauce.

Sauce

  • Saute garlic. Add remaining olive oil to pan, along with garlic and saute until fragrant.

  • Deglaze. Add chicken broth and scrape the bottom of the pan with a wooden spoon to remove any bits stuck to the pan. Simmer until the volume is reduced by half.

  • Finish sauce. Add cream and thyme and return to a gentle simmer, just until thickened. Stir in mustard and remove from heat.

Serve The Sauce:

Pour the sauce over the chicken on a plate, or transfer chicken back to the pan and cover in sauce. Add a sprinkle of time leaves on top if you like!

How To Reheat Sauce:

Reheating sauce is easy. Just pour the sauce into a small saucepan, and heat it over medium heat. Stir frequently to avoid burning the sauce. Make sure to stir frequently, as the color of your food will change if you don’t. Once the sauce is heated through, remove it from heat and serve immediately.

Reheat the chicken gently in a hot skillet or microwave, until heated through.

We love boneless, skinless chicken breasts since they’re both lean and quick cooking. Skinless, boneless thighs will work too.

This creamy sauce starts with butter and garlic. White wine adds amazing a depth of flavor to the sauce and heavy cream adds thickness and texture.

The flavor boosters in this sauce include garlic and a bit of soy sauce for salt. I use a regular Dijon mustard but you can use your favorite variety. This recipe is great with a grainy dijon as well.

VARIATIONS Experiment with the many varieties of mustard available. Tarragon is really good in this sauce as well, add about 1/2 teaspoon in place of the thyme.

Recipe Tips

  • Pound the chicken breasts to an even 1-inch thickness so they cook evenly.
  • Be sure that a meat thermometer reads 165°F, don’t overcook. (I usually take the chicken off the heat around 162°F as it will continue to rise in temperature).
  • White wine adds great flavor to the sauce and simmers so the alcohol burns off. It is highly recommended. I keep an inexpensive bottle of white wine for cooking in the fridge (substitutions listed in the recipe below).
  • Choose a dry (not sweet) white wine like Pinot Gris or Sauvignon Blanc.
  • Parmesan and parsley make a great optional garnish for this recipe.

Storing Leftovers
