I cooked this chicken gravy for lunch today using my mother’s recipe with a few modifications, and it was so delicious that I had to post the recipe right away. Additionally, everyone at home is nodding off and too bored to watch TV, so I thought I’d share this recipe. So, without further ado, enjoy this chicken gravy, hot from my kitchen.
Let’s find out how to prepare this Simple Chicken Gravy right away. Therefore, this is for all of my readers who requested that I offer chicken dishes more frequently. While making this gravy in a pressure cooker will take less time overall, it will also have a richer flavor.
METHODS TO MAKE CHICKEN GRAVY
- Pressure cooker : This is the one of easy methods as it takes very less time. Just add ingredients, saute add chicken and pressure cook.
- Open pan : This takes quite some time as chicken takes atleast 30 mins to cook. If using country chicken it may take atleast 45-50 mins.
- Instant pot : This is also quick. You can set pressure cooker high for 20 mins and release it by itself if using country chicken. For broiler chicken you set it in pressure cooker mode for 10 mins and let it release by itself.
CHICKEN GRAVY INGREDIENTS
- Chicken : Choose country chicken or broiler chicken would be great for this gravy. Make sure its tender and fresh.
- Onion tomato : The base of this gravy is onion tomato that we use along with ginger garlic paste.
- Curd : Curd is the one of the main ingredients for this gravy so make sure it is thick and not sour.
- Spices : Add whole spices for tempering which includes cinnamon, cloves, cardamom and star anise.
For the Chicken Marinade:
- 2 tablespoons ginger-garlic paste (see note)
- 1/2 tablespoon ground turmeric
- 1 tablespoon red chile powder
- 1 pound (450g) bone-in chicken drumsticks and thighs, optionally cut in half through the bone with a cleaver
- Kosher salt
For the Spice Paste:
- 1 teaspoon unroasted sesame seeds
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 6 dried Kashmiri chile peppers
- 5 peppercorns
- One stick cinnamon
- 3 cloves
- 2 tablespoons grated fresh coconut
- 1 cup (240ml) water
For the Curry:
- 2 tablespoons (30ml) vegetable oil
- 3 slit green chiles
- 3 bay leaves
- 1 medium onion, finely chopped
- Fluffy white rice, for serving
- To prepare the chicken for marinating, combine the ginger-garlic paste, turmeric, and 1 tablespoon of the red chile powder in a small bowl. Salt the chicken all over, then marinate it completely. Place aside.
- Heat a cast iron skillet over high heat until it begins to smoke, then reduce the heat. Sesame seeds, cumin seeds, coriander seeds, Kashmiri chiles, peppercorns, cinnamon sticks, and cloves should be heated for around 15 seconds to unleash their aroma while stirring continuously to prevent burning. Set apart for cooling.
- When spices have cooled, combine them with coconut, 3 tablespoons (45ml) water, and an immersion blender or countertop blender to create a smooth paste. Place aside.
- For the curry, heat the oil in a heavy-bottomed, covered pan until it shimmers, then reduce the heat. Add bay leaves and green chilies. Stir for about 15 seconds or until aromatic. When the onion is tender but not yet brown, about 5 minutes, add it and continue stirring.
- For about 10 minutes, add the spice paste and continue stirring until it is fragrant and the oil is floating on top. After about five minutes of stirring, add the chicken pieces that have been marinating. To thin out the mixture for additional gravy, add the remaining water.
- Add salt, give the saucepan a quick toss, and cover. heat to a medium setting. Cook the chicken until it is cooked, which takes about 15 minutes. Serve hot with fluffy white rice after lifting lid and stirring.

To make ginger-garlic paste, very finely mince, grate, or process equal parts peeled fresh ginger and peeled garlic.

Therefore, I’m giving the best SIMPLE chicken curry recipe I’m aware of today. This recipe makes a curry in the Western manner; it is not an authentic curry from Thailand, India, or any other country. Here are some reasons why you’ll adore it just as much as I do:

What you need for Everyday Chicken Curry
Here’s what goes in this Everyday Chicken Curry.
- Curry powder – the only spice you need! Any brand is fine here.
- Garlic, ginger and onion – fresh aromatics add a flavour boost that makes all the difference with quick curries! It’s the same when making quick Thai Green Curry or Red Curry using store bought paste.
- Chicken broth/stock AND coconut milk – for creaminess and flavour. We’re just using 1 cup of coconut milk here – this isn’t intended to be an overly rich, heavy coconut sauce.
- Chicken – thighs are best because this curry needs to be simmered for 12 minutes for the flavours to develop. But yes, it can be made with breast – but the steps need tweaking otherwise you’ll complain that the chicken is dry!!
- Peas – optional! Try other diced veg!
- Coriander/cilantro – lovely freshness and flavour boost. Coriander haters – use chives or green onions instead.
Don’t let the short list of ingredients fool you. The curry sauce tastes SO GOOD!
These are the curry powders I currently have in my pantry – but I’ve used plenty of other brands in the past. Curry powder is used in all sorts of recipes, not just Indian curries, including:

How to make it
There’s nothing groundbreaking about how this chicken curry is made. The one key step is to fry off the curry powder. This brightens up the flavour of the spices + creates more golden bits on the base of the pan, and both of these things add more flavour into the curry sauce!

This recipe is all about the curry sauce, so it’s really versatile in terms of what you can put in it, as well as extra add ins. Here are some options:
- Other proteins or vegetarian – make this with beef, lamb, pork, turkey, shrimp/prawns, fish or vegetarian. See directions in the recipe notes;
- Make it SPICY! This is not a spicy curry. So to add heat, either use HOT curry powder, or add cayenne pepper or ground chilli powder;
- Make it richer – use coconut cream instead of milk. Or use more coconut milk and simmer to reduce for longer; and
- Add tomato paste to thicken the sauce a touch and make the sauce a darker colour. Use about 1.5 tbsp.
