Chicken with Italian seasoning is one of my favorite kinds of chicken recipes. It’s so simple, but yet so tasty. There are just a few ingredients you need to make it and some spices of course.
Today I am dishing out a recipe for Chicken with Italian seasoning. This is a simple yet delicious recipe that can be prepared in minimal time. Although the total preparation time of this dish is hardly 15 minutes, the taste is stunningly good.
Easy Italian Seasoned Chicken Breast
Summer time means that itโs time to grill, right? This Easy Italian Seasoned Chicken would be perfect to grill for those nice summer days. This chicken is seasoned with only 4 simple ingredients, but is packed with tons of flavor!
I didnโt grill mine, I cooked it in a little olive oil in a cast iron skillet, But I can only imagine how much more flavor it would have grilled!
This is great served as a main course with some side dishes or it makes for a flavorful salad! And, the way that my mom has been growing all the romaine lettuce in the garden, I think we will be eating lots of salads this summer.
Like salads with every meal, even breakfast.
I may be experimenting with lots of different salad recipes this summer, lol.
Anyway, back to the chicken. The seasoning is so simple and I didnโt use 10 different spices. Other than salt & pepper, I only used 2 seasonings. But, it still has all the wonderful spices of basil, oregano, thyme and rosemary.
I used Garlic Powder & Italian Seasoning. My mom has always cooked chicken breast and seasoned it with salt, pepper & garlic powder, which has been good. I wouldnโt have ever thought that by just adding the Italian seasoning that it would have so much more flavor to it!

I cooked 3 chicken breast and that will feed our family of 6. I cut the breast in half lengthways down the middle, so they would be thinner and cook quicker.
I just sprinkled the seasonings on each side and cooked over medium heat in a cast iron skillet with a little olive oil.
Cook on each side until nice and golden brown, then flip and cook until no pink in the middle.
As I previously mentioned this is great on top a salad (my moms favorite way to eat it,) and it also goes great on top of pasta with a cheesy, homemade sauce!

Ingredients
- 3 Chicken Breasts
- Salt & Pepper
- 1 1/2 tsp Garlic Powder
- 1 1/2 tsp Italian Seasoning
Instructions
- Cut chicken breast down the middle lengthwise
- Spinkle with salt & pepper, as much as you prefer
- Sprinkle each breast with 1/4 tsp each of garlic powder & italian seasoning ( I sprinkle both sides of the breast)
- Cook over medium heat in a little olive oil unitl golden brown on each side and no pink in the middle

Soccer season is coming to an end, the big birthday party for my boys is done and I have my parents coming to help me out next week as the hubby has some long work days ahead. It feels good to start feeling a little more in control. I even paid someone to clean my house last week! Such a treat as housecleaning isnโt my favorite activity.
But even with things calming down a tiny bit, I have never had such little time to make dinner as I have in the past year or two. I blame having a fourth child, but you can pick anything youโd like to blame.ย
So I just wanted to share my super simple go-to chicken when I have no time to be creative, which like I mentioned seems to be quite often lately. Itโs also part of my meal prep chicken when I am able to do some work ahead of time.
I butterfly the chicken (make a lengthwise cut from the thickest part of the chicken to the within 1/2 inch of the opposite side) because I like a thinner piece and it takes less time to cook. If you are already working with a fairly thin chicken breast, you donโt need to slice them like that.
This is why I love it- it has flavor! I like food with flavor. Once you have it done you can do a variety of things with it:
-Eat it as is with a side of whole grain quinoa or a rice blend and veggies
-Slice it up and add it to a salad
-Cut it in slices and stuff it in a pita or tortilla, top with some salad, greens, veggies like onion and tomato, hummus and lemon juice (and feta is good too)
-Make a mediterranean pizza- sauce, cheese, this chicken in bite sized pieces, sun dried tomatoes or fresh ones, fresh basil
-Add it to some stewed white beans and tomatoes with extra garlic and olive oil
So there are lots of options to keep this a staple dinner option week after week. I typically use less seasoning on the kidโs piece of chicken, but as you can see, I like mine covered in the herbs and garlic. Let me know if you make it!

INSTRUCTIONS

Sprinkle a heaping ยฝ teaspoon of dried basil, 1//2 teaspoon of oregano and ยผ teaspoon garlic powder over one side of chicken breasts. Place in skillet seasoned side down and season other side with equal amounts of salt, pepper, basil, oregano and garlic powder. After chicken has cooked for ~5 minutes, add minced garlic, flip chicken over and cook an additional 5-8 minutes, depending on thickness of breasts, until chicken is cooked through and golden brown. Remove to a plate, Scrap up browned bits of garlic out of the pan, add to chicken along with any juices. Squeeze with fresh lemon juice (optional).
NOTES
I typically just eyeball the spices- shake it on until it looks nicely covered. Feel free to do the same. It makes for an even easier weeknight meal when no measuring spoons are involved.

3-Ingredient Brown Sugar Italian Chicken
This baked chicken only has 3 ingredients โ including the chicken! Plus, there is no prep work involved. Woohoo! Just coat the chicken in brown sugar and Italian dressing mix then throw in the oven. Thatโs it! SO easy!
Not only is this chicken a snap to make, it tastes great! We both gobbled this chicken up! Sweet and savory in every bite! We served this with someย Parmesan Rice Gritsย andย Green Beans. YUM! I canโt wait to make this again!!
I highly suggest lining your pan with foil. The brown sugar mixture gets sticky as it bakes. After dinner, throw away the foil and the dishes are done! Easy prep and easy clean up.. It just doesnโt get any better!

Ingredients:
- 4 to 6ย boneless skinless chicken breasts
- 1/2ย cupย brown sugar
- 1ย (0.7-oz)ย packet Italian Dressing Mix
Instructions:
- Preheat oven to 425ยบF. Line a 9ร13-inch baking pan with aluminum foil.
- Combine the brown sugar and Italian dressing mix. Coat both sides of the chicken with the brown sugar mixture. Place in prepared pan. Top chicken with any remaining brown sugar mixture.
- Bake for 20 to 25 minutes.
- Turn broiler on HIGH. Broil chicken until brown sugar caramelizes, about 1 to 2 minutes. Watch it carefully so it doesnโt burn!
Notes:
I used a packet of Good Seasons Italian Dressing Mix.
Do NOT make the dressing. You are only going to use the contents of the packet in the recipe.
ITALIAN HERB GRILLED CHICKEN
This Italian Herb Grilled Chicken recipe is a summer staple โ pair it up with salad or pasta, or serve on itโs own. Itโs delicious!
Hope everyone is enjoying their weekend! Weโve had great weather and have spent a lot of our time in the pool and out by the grill. Last nightโs dinner was amazingโฆinspired by my nephew Ryan who was over hanging out.
But first, this Italian Herb Grilled Chicken.
This Italian Herb Grilled Chicken was perfect for a quick weeknight dinner. It was prepared on the grill and served withย Inaโs Pasta with Sun Dried Tomatoesย so there wasnโt a lot of time spent in the kitchen, which is really nice during the summer.
I donโt really measure the amounts of herbs and spices that go in the rub, I usually use equal amounts of each herb and spice and combine it in a bowl. I set aside what I want to use for that meal so I donโt cross contaminate, then store the rest of the Italian herb blend for another time.
Chicken like this can be used in so many mealsโฆpasta, salads, sandwichesโฆyou canโt go wrong with it. I love grilling a big batch of chicken breasts early in the week to use in different meals. Itโs a great addition to Greek salads.
One of my favorite ways to use this chicken for a family dinner is to slice it up, top it with sauce and cheese and throw it on a roll and under the broiler to make chicken parmesan sandwiches.
