- Cream cheese.
- Mozzarella.
- Parmesan cheese.
- Jalapeño peppers.
- Garlic powder.
- Salt and pepper.
- Olive oil.
- Smoked paprika.

HOW TO MAKE JALAPEÑO POPPER CHICKEN
- Make the filling: In a bowl, combine the room temperature cream cheese, grated mozzarella and parmesan with finely chopped jalapeños, garlic powder, salt and pepper. Mix well.
- How to stuff a chicken breast: Carefully make a slit on one side of each chicken breast. Take care not to cut all the way through, you just want to create a pocket for the stuffing. With a spoon, carefully stuff the chicken then close the opening and secure with toothpicks. Drizzle over the olive oil and season with paprika and salt on both sides.
- Cook the chicken: Heat a large pan over medium-high heat then add the chicken breasts. Allow to cook for 5-7 minutes per side then transfer the pan to a hot oven and allow to cook for another 5-7 minutes or until the chicken is cooked through. Remove from the oven and allow to rest for 5 minutes then serve.

CAN I MAKE THIS AHEAD?
The filling can be made up to 3 days in advance and kept covered in the fridge. The stuffed and seasoned chicken can also be refrigerated for a day before cooking.
WHAT TO SERVE WITH JALAPEÑO POPPER CHICKEN
These chicken breasts will be delicious served with almost any side dish. Simple mashed potatoes or crispy potato wedges will be delicious with the chicken. If you’d prefer a vegetable side dish, my 10-minute broccolini or bacon green beans will be a great match.

How was your July 4th weekend? We had a really great one, full of sunshine and lots of pool time with the kiddos. Even a bowling night, bike parade and some fireworks crafts. Some really good all American fun! 🇺🇸
And now for today’s confession: I have a strange obsession with jalapeños. I can’t seem to stop planting them in my garden.
My first year, it’s because I didn’t know any better. I bought two (or was it three?) jalapeño plants.
I figured, we like spicy food, we’ll want to have lots of jalapeños. 🌶🌶🌶
Oh, silly novice gardener.
A couple of months later, when I literally had about 30 jalapeños coming in at a time, for weeks on end, I had to get creative quick.
Jalapeño pepper jelly and some canning fun. Stuffed jalapeños. Some wrapped with bacon, some not. (Eaten immediately and extras frozen.) Lots of tacos and salsa and my Mississippi caviar too.

I took bags full of jalapeños to my kids’ preschool teachers and even passed some out to our veterinarian and mail carrier.

I also made my 10-minute jalapeño cream cheese dip to eat as an appetizer with some chips. Cause melty cheese and a spicy kick is a sure-fire hit!
I also love keeping some of my easy fresh jalapeño relish on hand for tacos, rice bowls, even eggs!
And here, I’ve added some chicken to make a quick and easy main course chicken jalapeño dish that’s got just a hint of spice and loads of creamy, cheesy sauce to coat every slice of perfectly cooked chicken.

HOW TO MAKE CHEESY CHICKEN JALAPEÑO:
– You sear the seasoned chicken breasts first and then remove them from the pan.
– Next, sauté the onion and jalapeño and garlic. Stir in the chicken broth and cheese until it’s all melted and mixed.
– Return the chicken breasts to the pan, turning to get them coated in the sauce.
– Cover the pan and cook everything until the sauce is thickened up and the chicken is perfectly juicy tender. Done!
This recipe is enough for a weeknight, but delicious and impressive enough to make for company.
I love serving it over steamed brown rice to soak up all those delicious juices.
Cauliflower rice or quinoa would work too. Even mashed potatoes, grits or polenta would be a great pairing here.
Then add your favorite vegetable and dinner is served! 🙌

This year, I restricted myself to just one jalapeño plant in my garden. So my overload will be somewhat more manageable.
Or so I hope…

If you frequent Chinese fast-food restaurants, you’ve probably seen jalapeno chicken added to the menu in recent years. It’s really not your traditional Chinese entree but is more of a delicious fusion of Mexican and Chinese tastes.
This chicken stir-fry is one of the most popular choices in our neighborhood Asian restaurant and I’m excited for you to give it a try. With lightly battered chicken tossed in a sweet and savory sauce and sliced jalapenos for a healthy kick of spice, it’s an interesting combination of delectable flavors that’s sure to hit the spot!

Velveting technique
The recipe uses a cooking technique called velveting where the meat is coated in cornstarch and cooked in hot oil before stir-frying. The method keeps the meat from toughening, creating chicken pieces that are velvety soft and super moist.
And oh my, the SAUCE! It’s sweet and savory and sticky and spicy and just so yummy over heaps of steamed rice!
This restaurant copycat is easy to make at home using simple pantry ingredients you can find at most major supermarkets. Plus it cooks in one pan in 30 minutes or less for the perfect weeknight dinner.
Plus, it makes great leftovers for the next day’s packed lunches. Good thing the recipe can be easily doubled (or tripled) from serving a family of four to feeding a hungry crowd.

- 1 pound boneless, skinless chicken breasts, cut into thin strips
- 1/4 cup cornstarch
- 1/4 cup soy sauce
- 1/4 cup Chinese cooking wine (Shaoxing wine)
- 3 tablespoons brown sugar
- 1/2 cup vegetable or peanut oil
- 3 cloves garlic, peeled and minced
- 2 jalapenos, sliced thinly

Instructions
- In a bowl, combine chicken and cornstarch. Mix until chicken is fully coated and marinate for about 5 minutes.
- In a bowl, combine soy sauce, Chinese cooking wine, and brown sugar. Stir until blended and sugar is dissolved. Set aside.
- In a wok or wide skillet, heat oil. Add chicken and fry until crisp and fully cooked. Do not overcrowd skillet, cook in batches as needed. With a slotted spoon, remove chicken from pan and drain on paper towels.
- Remove excess oil from the skillet except for about 1 tablespoon. Add garlic and jalapenos and cook, stirring regularly, for about 30to 40 seconds or until aromatic.
- Return chicken to skillet and add soy sauce mixture. Continue to cook for about 2 to 3 minutes or until heated through and sauce is thickened. Serve hot.
