DIRECTIONS
- Heat oil in a sizable ovenproof skillet over medium-high heat. Chicken should be salted and peppered before cooking for 8 minutes per side or until browned and no longer pink. Place on a platter. Turn down the heat after removing half of the chicken juice from the skillet.
- Butter, garlic, white wine, lemon juice, and capers should all be added to a skillet and simmered. Return the chicken thighs to the skillet after adding lemon slices. Let the chicken to boil in the sauce for five minutes before serving.

- Step 1: Set the oven to 350 degrees. Sprinkle flour over the chicken after seasoning it with salt and pepper. The butter and oil should be melted in a sizable ovenproof skillet. Add the chicken, skin side down, and cook for 12 to 14 minutes on high heat, flipping once, until browned. Pour all but one tablespoon of the fat off the chicken before transferring it to a big plate.
- Step 2Add the garlic to the skillet and cook for about 5 minutes, or until tender. Over high heat, add the wine and boil for about 5 minutes, or until it has reduced by half. Bring to a boil the stock together with the bay leaf, lemon zest, thyme, and capers. Skin side up, add the chicken back to the pan. After the beef is cooked, place the skillet in the oven and braise for about 45 minutes.
- Step 3Boil the sauce for about 5 minutes, or until it slightly reduces, in the same skillet. If desired, throw away the lemon zest, bay leaf, and thyme before serving.

A simple and tasty 30-minute dish, creamy lemon chicken piccata is quick and uncomplicated. To achieve the greatest flavor, a soft and supple chicken breast is floured, grilled, and then tossed in a light and creamy lemon sauce with capers and garlic. This popular dish may be prepared quickly in a single skillet and is delicious when served with pasta. The ideal dinner on a weeknight.

WHAT IS CHICKEN PICCATA?
Chicken breast that has been cut and crushed is dusted in flour and cooked in a light lemon sauce with capers in the traditional Italian meal known as chicken piccata. Together with quick chicken parmesan (parmigiana), creamy tortellini soup with sausage, and shrimp fettuccine alfredo pasta bake, it is one of my favorite Italian dishes.

INGREDIENTS
To make this easy chicken dinner, you will need:
- chicken breasts – two boneless and skinless chicken breasts (1 lb. total), sliced in half and then carefully flattened with a rolling pin to ¼-inch thick.
- chicken seasoning – Italian seasoning, salt and pepper.
- all-purpose flour – for coating the chicken (dredging), and some more for the sauce.
- vegetable oil – to sear the chicken.
- butter
- garlic
- chicken broth – or 1 tablespoon chicken chicken bouillon powder + 1 cup water.
- heavy cream
- capers and lemon juice – these are classic ingredients in chicken piccata and give it its signature flavour.
- garnish – fresh parsley and lemon wedges.
- for serving (optional) – dry pasta such as spaghetti or linguine or mashed potatoes.
You will also need skillet (this is the pan that I used). A meat thermometer also very useful for checking the chicken for doneness.

HOW TO MAKE THE BEST CREAMY LEMON CHICKEN PICCATA
- Flatten the chicken by cutting each breast lengthwise (horizontally) and placing each piece between two sheets of plastic wrap or in a ziploc freezer bag. Use a rolling pin to gently flatten the chicken breasts until they are about 14 inch thick. Avoid beating the breasts too hard because doing so risked rupturing them. Flattened chicken breasts with a consistent thickness are ideal.
- Chicken is seasoned and breaded: Italian seasoning, salt, and pepper are sprinkled on both sides of each chicken breast. Then, equally coat both sides of the chicken by dipping it into a shallow basin of flour. On a dish, set aside.
- To sear the chicken, heat the oil in a sizable skillet over medium-high heat for 2 minutes, or until it shimmers and begins to sizzle. The chicken should be cooked through and golden brown on each side, which takes about 5 minutes total. The chicken should be cooked to a minimum internal temperature of 165F. You might need to do this in two batches depending on the size of your skillet. On a platter, set the chicken aside.

- To make the lemon sauce, warm butter in the same skillet and sauté the garlic for approximately a minute, or until fragrant. Once the sauce is consistent and smooth, stir in the chicken broth and flour. Lemon juice, capers, and heavy cream should be added. Reduce the heat to medium-low and boil the sauce for about 2-3 minutes, or until it reaches the desired consistency. If the cream curdles as a result of the lemon juice, stir constantly until smooth.
- Add chicken: Add the chicken back to the pan and give it a good stir to coat. Let the chicken and sauce one more minute to simmer together before garnishing with lemon wedges and parsley.
How to store: Store chicken piccata with the sauce in an airtight container and refrigerate for up to 4 days. Reheat on the stove over medium-low for a few minutes or in the microwave until warmed through.

HOW TO SERVE CHICKEN PICCATA
I enjoy serving creamy lemon chicken piccata over linguini pasta with a splash of sauce on top, as well as over mashed potatoes or cauliflower mashed with garlic.
A light salad, like a Mediterranean orzo salad or a Mediterranean chickpea wedge salad, and some bread to sop up the sauce, like cheesy garlic dinner rolls or pull-apart garlic bread, would round out the meal for me.
Tips for Success
- The sauce’s foundation can be created using either dry white wine or chicken broth. The sauce should be reduced and only slightly thickened at the end; if necessary, add an additional 1 to 2 teaspoons of flour to thicken the sauce.
- Oil is typically the preferred cooking medium for chicken, but a small quantity of butter will lend just the right amount of richness to the dish.
- Include parmesan cheese: A sprinkle of freshly grated parmesan over the finished dish will give it a great, nutty flavor and allow it to blend in beautifully with the sauce.
- Best wine pairings: A buttery chardonnay or a crisp sauvignon blanc would go well with the sauce’s lemony sharpness. or a combination of semi-dry white.
