This isn’t an overly rich dish, but it is satisfying, and if you serve it with a vegetable it’s definitely not too heavy in my opinion. The sauce is thickened up a bit with a roux (flour and butter), and I added some cream, but not a lot. 

Before this recipe, I hadn’t used lemon pepper seasoning in forever. I used to use it often, but somehow it got neglected for what is probably years now. I guess I go through phases with some ingredients. Anyhow, it’s a versatile seasoning that makes the most delicious sauce, and I’m glad that I resurrected it. 🙂

What is lemon pepper?

Just in case you’ve never tried it before, lemon pepper is a seasoning blend made with granulated lemon zest and cracked peppercorns. It tastes nice and zesty! Often, the store-bought kinds do contain added salt, so I would definitely taste the sauce prior to adding extra salt. You can buy it in the herbs/spices aisle at most grocery stores. I buy McCormick brand, but various brands offer it.

How to make lemon pepper chicken (summary)

Start by cutting the chicken breasts in half lengthwise so you’ve got 4 thinner cutlets (this ensures the chicken cooks faster and stays tender). Season the chicken with some salt. You then heat the oil and 1 tablespoon of the butter in a skillet until it’s good and hot. Sear the chicken for 4-5 minutes per side (it likely won’t be quite cooked through, and that’s fine). Transfer the chicken to a plate. Add the remaining butter to the pan and then add the garlic and flour and cook for a minute or so. Whisk in the chicken broth, cream, and lemon pepper until the sauce is nice and smooth. Add the chicken back to the pan and continue cooking it until it’s cooked through and the sauce thickens up a bit (approx. another 4-5 minutes). Full ingredients and instructions are in the recipe card below.

Recipe notes & tips:

  • As always, sub ingredients at your own discretion. I use heavy cream because it’s less prone to curdling and offers a thicker and richer sauce. Something with a lower fat content may not give you the best results.
  • Try to use fairly large chicken breasts since they’re cut in half to make thinner pieces. If your chicken breasts are on the smaller side, feel free to keep them intact, but you may need to cook them for a bit longer.
  • Using an instant read meat thermometer never leaves you in doubt whether chicken is properly cooked or not (it’s safe at 165F). 
  • You can definitely sub the chicken breasts for chicken thighs if you prefer that cut of meat (adjust cooking time as needed).
  • I love my kitchen tongs to quickly and easily turn chicken (or whatever meat you happen to be searing).

HOW TO MAKE LEMON PEPPER CHICKEN TENDERS 

Whisk together the flour with spices. Sprinkle over the chicken and toss to coat.

Heat the olive oil in a skillet and when it’s hot, add the chicken tenders and cook until browned and fully cooked through. Remove the chicken from the pan. 

Melt butter in the skillet, add the garlic and cook until fragrant.

Add the chicken broth and bring to a simmer. Then add the lemon juice and simmer until reduced by half. Stir in the remaining butter and lemon zest. 

Return chicken tenders to the pan and cook until heated through. Sprinkle in the parsley and serve while it’s hot.

WHAT ARE SOME OTHER WAYS TO COOK LEMON PEPPER CHICKEN TENDERS?

While this recipe cooks the chicken in a saute pan before making the sauce in the same pan, you can also cook the chicken with other methods.

Try using the air fryer for delicious crusted chicken. Bake them in the oven on a sheet pan drizzled with olive oil, grill them outside, or use a grill pan on the stove.

Check to ensure the chicken is fully cooked using a digital thermometer before serving with the lemon butter sauce.

HOW TO SERVE

Place a scoop of rice, pasta, or mashed potatoes on a plate, lay chicken over the top, and spoon sauce over it. Sprinkle with extra parsley if you have some saved. 

You can also serve it with garlic sourdough bread, roasted butternut squash or sweet potatoes, or a crunchy green salad

The key is to balance the flavors and textures of the main dish with the side dishes. 

HOW TO STORE

Refrigerate: Store any leftover chicken in the refrigerator for up to four days in an airtight container. Reheat in the microwave with 30-second increments until the chicken has reached 165F. 

Freeze: This is also a great dish to freeze and save for later. You can even make two batches, one to eat and one to give to a friend or family member. 

Place the chicken and sauce in an airtight container and freeze for three months. Remember to label it with the title and date, so you don’t forget what you’ve frozen when you pull it out later. 

Set it in the fridge to thaw for 24 hours before reheating.

1. Chicken Wings: It is best to get drumettes and flats to make your cooking easier. Before seasoning with other ingredients, ensure that you gently dry the chicken skin to avoid sogginess. You need to pat dry to get a crispy outcome.

2. Cornstarch/baking powder: One of the things I like to make chicken is this ingredient. Cornstarch is the secret ingredient to use if you want perfect crunchy and crispy wings. Crispy chicken is irresistible because it has the perfect crispy bite. Cornstarch creates an outside crust that turns golden brown and helps the inside of the chicken remain super juicy. Whether you air-fry or bake, ensure that you coat the wings properly.   • Pat Chicken wings dry with a paper towel and place them inside a large Ziplock bag.
  • Add the lemon pepper seasoning and cornstarch. Give the wings a good coating.
  •  Spray the air fryer with cooking spray and carefully arrange them inside the air fryer.
  • Cook at 400F for 10 minutes on the first side. Flip to the other side and cook for another 10 minutes.

How to make Lemon Pepper Wings in the oven:

  • Pat Chicken wings dry with a paper towel and place them inside a large Ziplock bag.
  • Add the lemon pepper seasoning and cornstarch. Give the wings a good coating.
  • Preheat the oven at about 450F with the racks inside.
  • Bake for 45-50 minutes or until they turn a light golden color, turning the wings over halfway through. You bake one side and flip to the other side at half cooking time.

Tips

  • Even coating is important to achieve a crunchy outcome.
  • Drain the wings and pat dry the skin with a paper towel to ensure that seasoning rubs sticks.
  • Avoid using excess oil to coat the wings. Coating gently with just enough oil will help you get that golden brown color with a crispy outside.
