  • 2 lbs boneless chicken breast, cut into small cubes
  • 1/4 cup cornstarch
  • 3 eggs, beaten
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable oil

SAUCE

  • 2 teaspoons sesame oil
  • 2 teaspoons ginger, grated
  • 3 green onions, sliced diagonally
  • 1/2 cup water
  • 1/2 cup maple syrup (preferably amber syrup for its rich flavour)
  • 2 tablespoons cornstarch
  • 1/4 cup soy sauce
  • 1/2 cup chilli sauce

Method

  1. Chicken cubes should be cornstarched-coated.
  2. Combine eggs, flour, baking powder, and salt in a bowl. Add the chicken and coat well.
  3. Heat the oil in a frying pan over high heat before adding the chicken.
  4. Cook chicken for about 10 minutes, stirring frequently, or until golden brown outside and no longer pink within.
  5. After the chicken has finished cooking, make the sauce.
  6. Sesame oil, ginger, and green onions are added to a pan and cooked for 3 minutes over medium-high heat.
  7. Simmer for a further minute after adding water and maple syrup.
  8. Dissolve cornstarch in a bowl with the soy sauce and chili sauce, then add it to the saucepan. 2 more minutes of cooking is required to thicken the sauce.
  9. Serve the sauce with the chicken and your choice of rice.

Since Saturday night, Butters and I have not gotten off the couch.

Because last weekend was our first-ever So Cal Corgi Beach Day, guys!

It was… ESPIC. Real epic. There were a ton of corgis, including young ones and one in a wheelchair decked out in a cape and sunglasses.

I essentially wanted to bring every corgi home.

But do not fret. Not me.

Instead, I barbecued a ton of chicken breasts when I got home.

Nevertheless, not any chicken breasts.

I used the finest marinade ever and soaked them to death!

A few things from your pantry will do.

INGREDIENTS:

  • 1/2 cup maple syrup
  • 1/4 cup reduced sodium soy sauce
  • 3 tablespoons olive oil, divided
  • 1 shallot, minced
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon Dijon
  • 3 cloves garlic, minced
  • Kosher salt and fresh ground black pepper, to taste
  • 6 boneless, skinless chicken breasts
  • 2 sprigs fresh rosemary

DIRECTIONS:

  1. Combine the maple syrup, soy sauce, shallot, rosemary, lemon juice, Dijon, and garlic in a small bowl. Add the remaining 2 tablespoons of olive oil and season with salt and pepper to taste.
  2. Chicken and the maple syrup mixture should be placed in a gallon-sized Ziploc bag, and the bag should be turned occasionally while marinating for at least 30 minutes or overnight. Remove the chicken from the marinade and throw away the liquid.
  3. Heat the grill to a medium-high setting.
  4. Apply the last tablespoon of olive oil on the chicken and season with salt and pepper to taste. Add the chicken on the grill, and cook, rotating once or twice, for about 10 minutes, or until the internal temperature of the chicken reaches 165 degrees F.
  5. If preferred, top with fresh rosemary before serving.
