What kind of chicken should I use for this recipe?

You can either use boneless, skinless chicken breasts or chicken tenders. Both work great! And you can use fresh or frozen, just thaw frozen chicken the day before.

How long does the chicken take to bake in the oven?

Baking at 350F, the chicken will take between 30-45 minutes to cook. Take it out when the internal temperature reaches 155F (the temp will rise when we broil it).

What should I do with leftovers?

Store leftover chicken in an airtight container, and keep it in the fridge up to 3 days. You can then reheat it in the oven to serve. Leftover spaghetti can also be saved in the refrigerator, but I usually recommend boiling fresh pasta since it’s so quick!

How do I cook the spaghetti?

Cook spaghetti (or any pasta you use) according to package instructions. Simply boil it in water on the stove, until noodles are al dente. This can easily be done while the chicken is baking.

What’s the difference between chicken marinara and chicken parmesan?

TIPS!

  • Use chicken tenders/breasts that are similar in size so they cook evenly. If some are much larger, cut them in half.
  • You can add as much or as little marinara as you like to the chicken. Make it saucy, or keep it light.
  • I recommend using whole milk mozzarella cheese on top of the chicken, but you could also use a fresh mozzarella or fontina.
  • Garnish your chicken marinara with chopped parsley or fresh basil!

Absolutely! A store-bought jar of sauce is great for convenience. However, you can use this recipe to make marinara sauce instead. It can be made ahead of time and refrigerated, so it’s ready to use!

Ingredients

  • ▢1 16 ounce package dry spaghetti, cooked & drained
  • ▢32 ounces marinara sauce
  • ▢12 boneless chicken tenders
  • ▢2-3 cups shredded Mozzarella Cheese
  • ▢¼ cup grated Parmesan cheese

Garnishes:

  • ▢Extra grated Parmesan cheese
  • ▢Chopped fresh basil leaves

Instructions

  • Adjust an oven rack to the middle position, and heat the oven to 350°F.
  • Spray a 9×13-inch casserole dish with nonstick cooking spray.
  • Place 1 cup sauce in the bottom of the casserole dish and set the chicken, evenly, on top.
  • Pour the remaining sauce over the chicken.
  • Bake the chicken at 350°F for 30-45 minutes, or until the internal temperature of the chicken is 155°F. The baking time will depend on the size of the chicken breasts.
  • While the chicken bakes, cook the spaghetti per package directions and drain.
  • Remove the chicken from the oven and set the oven to BROIL.

Broil the chicken (watch closely) just until the cheese has melted and the internal temperature of the chicken registers 160-165°F with a meat thermometer.
  • Transfer the chicken to a cooling rack and let rest 5 minutes before serving.
  • Serve the chicken and sauce over a bed of cooked spaghetti. Sprinkle with chopped fresh basil and serve with extra grated Parmesan, a side salad and Italian bread.

Okay. Don’t shoot me. This is beyond simple and involves…. a jar. <GASP!!!>

Yes, I went the jarred sauce route on this one, but it was clean sauce, and I was short on time. That’s life as a clean eater sometimes. But it was totally worth it. I love Rao’s sauce. It’s a little pricey, but it’s fabulous stuff! (And no, I was not paid to say that. I really do love their sauce.)

So if you need convenience on a busy evening, this is definitely the way to go. You can even spiralize your zucchini ahead of time!  It keeps for about 3 days in the fridge. I put a paper towel in a zipper top plastic bag and then add the zucchini noodles. It keeps really well this way!

I followed the ATK suggestion of grating the onion to release the flavor faster. A very nice trick for a quick recipe like this. And is the key to the quick sauce.

The only trouble with the original recipe was no meat. We are meatasauruses at this house, and chicken is the favorite. So instead of about 15 minutes, it took 30 minutes. Not bad, not bad at all.
