  • 1 cup reduced-fat mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. garlic powder
  • 25 RITZ Crackers, finely crushed
  • 1/4 cup panko bread crumbs
  • 12 oz. boneless skinless chicken breasts, cut into 24 (1-inch) pieces
  • 3/4 cup marinara sauce
  • 425°F oven temperature.
  • In a small bowl, combine the mayonnaise, cheese, and dry spices. In a shallow plate, mix cracker crumbs and bread crumbs.
  • Spray cooking spray on the baking sheet and cover with foil. Chicken pieces should be evenly coated with the mayonnaise mixture on both sides.
  • Chicken should be added to the crumb mixture in small batches and turned to evenly coat all sides. Place on baking sheet that has been prepped.
  • Bake chicken for 20 minutes, or until done. Heat the marinara sauce about five minutes before the chicken is finished.
  • Serve the marinara sauce alongside the chicken.
