  • Mix mayonnaise or yogurt, cheese and seasonings.
  • Spread mixture over chicken breast and place in baking dish.
  • Bake at 375°F for 45 minutes.

Off to another chicken recipe today… I have featured so many chicken recipes over here, however I would love to say that this is one family favorite. I have made this a few times, you don’t even need to make chapathis or parathas to have this. Just have a log of bread ready and you can see with what speed the curry vanishes, that much it pairs so well with bread, making it one of the best thing to make on a lazy day. Not only that, it cooks so fast that you don’t need to spent much time in the kitchen. And – it tastes really good… Please do not miss the tempering if you decide to make this, it takes the curry to another level itself. This recipe is adapted from Chef Shireen Anwar’s programme on Masala TV – I highly recommend trying this at least once… that good it is…

Ingredients

  • 750 gm chicken cut into medium pcs
  • 1/2 cup water
  • 1/2 tsp chilli flakes
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • Juice of 1 lemon
  • 1 tsp chilli sauce
  • 2 tbsp ketchup
  • 3 tbsp mayonnaise
  • 20 gm butter melted
  • For tempering:
  • 2 tbsp oil
  • 1/4 tsp mustard seeds
  • 2 strands curry leaves
  • 2 dry red chillies

Instructions

  • Cook the chicken with ingredients till lime juice till tender.
  • Mix the mayonnaise, ketchup, chilli sauce and butter into a smooth paste.
  • Pour into the chicken and cook for further 10 minutes.
  • Heat oil, splutter mustard seeds, fry the red chillies and curry leaves for a few seconds till done. Pour into the chicken and keep lid closed for 5 minutes. Serve warm.

I’m kicking it off with this Mayonnaise Chicken recipe. Yes, you read that right: MAYONNAISE CHICKEN. It is everything, you guys.

Mayonnaise chicken is chicken marinated with mayonnaise and other spices and herbs. The mayonnaise adds a nice layer of flavor and richness to the chicken but you can’t taste the mayo. ​​​​​​​​​​​​​​ ​​​

The mayonnaise just gives the chicken that little extra something without being over-powering.

MAYONNAISE CHICKEN MARINADE

Mayonnaise chicken marinade is made up of mayonnaise, chicken bouillon powder (substitute with seasoning cubes), salt, white pepper, garlic, ginger, thyme, basil, and onion.

WHY MAYONNAISE CHICKEN?

For something different. I cook a ton of chicken so I always like to spice things up so it doesn’t feel like we are eating the same old same old chicken all the time.

And this Mayonnaise Chicken is truly special. One of those recipes that you have to experience to understand. And you’ll want to make this over and over again.

BEST CHICKEN PART FOR MAYONNAISE CHICKEN

Chicken thighs are great because they contain just the right amount of fat that makes the chicken super tasty. It is hard to ruin them. But you could also apply the mayonnaise chicken marinade on chicken drumsticks, chicken breasts, chicken quarters or even a whole chicken.

Note that the cooking times will change significantly though if you use a whole chicken – it will need to cook for a couple of hours. For the other chicken parts, they should cook for about the same amount of time as this recipe, which is 40 minutes with the oven set to broil.

A good rule is to make sure the chicken reaches an internal temperature of 165 degrees Fahrenheit (75 Degrees Celsius).

HOW TO MAKE MAYONNAISE CHICKEN

In a large bowl combine mayonnaise, garlic powder, ginger powder, onion powder, dried basil, dried thyme, salt, chicken bouillon powder, and white pepper. Mix everything together.

Rub the mayonnaise mixture all over the chicken being able to get to every nook and cranny of the chicken. Cover and let it marinate in the fridge for 8 hours or cook immediately.

Place the chicken on a greased baking sheet and grill on broil for about 40 minutes.

IMPORTANT TIPS TO NOTE ABOUT MAYONNAISE CHICKEN

If your chicken is significantly bigger than 4 pounds (maybe close to five pounds) then add a big pinch of salt to the salt the recipe calls for. This will help ensure that the chicken is properly seasoned.

I recommend that you set your oven to broil instead of bake. Setting the oven to broil cooks the chicken at a higher heat and roasts the chicken instead of baking it. This makes the chicken taste like it was grilled on the grill outside.

WHAT TO SERVE WITH MAYONNAISE CHICKEN

Mayonnaise Chicken goes great with starchy sides or vegetables. So serve it with your favorite side dishes whether that is rice, potatoes, salad or plantains.

Instructions

  1. Rinse chicken then pat dry with paper towels.
  2. In a bowl combine the mayonnaise, garlic powder, ginger powder, salt, white pepper, dried thyme, dried basil, onion powder, and chicken bouillon powder.
  3. Rub the mayonnaise mixture all over the chicken ensuring it gets to every nook and cranny of the chicken. Cover the chicken with plastic wrap and marinate in the fridge up to overnight or place in the oven to cook immediately.
  4. Set the oven to broil. Place the chicken on a large greased baking sheet – skin side down.
  5. Broil for 30 minutes, take out the baking sheet and flip the chicken to be skin side up. Broil for another 10 minutes.
  6. Serve warm with your favorite side dish.
