  • 4 chicken breast fillets
  • 1 tsp salt, black pepper, garlic powder, sweet paprika

cherry tomato sauce

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 4 garlic cloves, minced
  • ¼ cup/60 ml white wine, like Pinot Grigio
  • 1 tsp salt, black pepper, dried basil
  • 2 tbsp tomato paste
  • ½ cup/120 ml chicken broth
  • 1 can (14 oz/400 g) cherry tomatoes
  • 3 tbsp chopped basil leaves
  • 2 mozzarella balls, chopped
  • 3 tbsp grated Parmesan
  • crushed red pepper flakes, for sprinkling


  1. Get all the prep done before you start cooking: mince the garlic, finely chop the shallot and cut mozzarella into cubes.
  2. Season the chicken fillets on both sides with salt pepper, garlic powder and paprika.
  3. Preheat the oven to 200 °C/400 °F (if using).
  4. Heat oil and butter in a large (ovenproof) skillet over medium high. Add the chicken fillets and cook over medium heat, for 5 minutes per side or until fully cooked and browned on both sides. Remove from skillet and place on a plate. Cover with foil.
  5. In the same skillet, add garlic and shallot, cook until fragrant, 2 minutes. Deglaze with white wine, simmer for 2 minutes, stir with a wooden spoon while scraping up the brown bits on the bottom of the skillet. Add salt, pepper, dried basil and tomato paste. Cook, while stirring constantly for 1 minute.
  6. Pour in chicken broth, stir to combine. Add canned cherry tomatoes, bring to a boil and simmer for 5 minutes. Adjust salt, if needed. Meanwhile, chop the basil leaves.
  7. Next, nestle chicken between the cherry tomatoes. Add basil and mozzarella cubes. Top with black pepper, red pepper flakes and grated Parmesan. Let simmer for 5 minutes or until all flavors are well combined, the chicken is cooked through and mozzarella has slightly melted. Alternatively, slide the skillet into your oven and bake for 10 minutes or until golden. Serve!

  • 2 tbsp Co-op olive oil
  • 2 spring onions, trimmed and finely sliced
  • 275g vine tomatoes, sliced
  • Half tsp dried oregano
  • 2 tbsp tomato ketchup
  • 2 Co-op fresh British chicken breast fillets

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Heat half the oil in a saucepan and cook the spring onions for 2 mins until softened
  3. Chop two thirds of the tomatoes, and add to the pan with the oregano and ketchup
  4. Cook over a low heat for 5 mins until pulpy
  5. Cut each chicken breast in half horizontally
  6. Put them between 2 sheets of clingfilm and bash with a rolling pin to make them thinner
  7. Cook in the rest of the oil for 2-3 mins on each side to brown
  8. Spread half the cooked tomato mixture in the base of a small ovenproof dish
  9. Add half the chicken, then top with the rest of the cooked tomato, the remaining chicken and the sliced mozzarella
  10. Arrange the tomato slices on top and bake for 15 mins

  • Minced garlic -you could also use jarred minced garlic if you don’t have fresh garlic.

  • ▢6-8 ounce boneless skinless chicken breasts
  • ▢2 tsp kosher salt
  • ▢1 tsp fresh cracked pepper
  • ▢2 tbsp extra virgin olive oil

Tomato Sauce

  • ▢2 tbsp fresh minced garlic
  • ▢28 ounce can crushed tomatoes
  • ▢2 tbsp rough chopped fresh basil
  • ▢2 tsp dried italian seasoning
  • ▢2 tsp granulated sugar
  • ▢1½ tsp onion powder
  • ▢1 tsp kosher salt
  • ▢½ tsp fresh cracked pepper
  • ▢3 tbsp grated parmesan cheese
  • ▢2 tbsp heavy cream
  • ▢6 slices fresh sliced mozzarella
  • ▢1 tsp freshly chopped flat parsley


  • Using a baking sheet, lay the chicken breast on the baking sheet.
  • Sprinkle both sides of the chicken breast with the salt and pepper.
  • Using an oven safe 12 inch skillet, heat the 2 tablespoon olive oil over a medium-high heat.
  • Cook the breast, covered for 5 – 8 minutes per side.
  • Remove the breasts to a baking sheet.
  • Lower the stove top temperature to medium-low.
  • Add the fresh minced garlic for 30 seconds, stirring constantly to avoid burning.
  • Add the crushed tomatoes, fresh basil, dried italian seasoning, sugar, onion powder, kosher salt, cracked pepper.  Simmer for 5 minutes, stirring often.
  • Preheat the oven to broil.
  • Stir in the grated parmesan cheese and heavy cream. Reduce the heat to low.
  • Add the chicken breast to the tomato sauce. Cover and continue to simmer, covered for 5 – 8 minutes.
  • Remove the skillet from the heat. Lay 1 slice of fresh mozzarella on each chicken breast.
  • Broil for 5 – 7 minutes, until the mozzarella is melted and bubbling.
  • Remove from the oven, and allow the dish to rest for 5 minutes.
