HOW TO MAKE FRENCH ONION CHICKEN:

We’re basically making French Onion Chicken Soup in casserole form. This dish has all of the flavors that you crave, with none of the work!

First, you’ll spread 2 large sweet, sliced onions in the bottom of a baking dish. Top the onions with raw chicken breasts, season with a bit of salt and pepper, and then tuck a few sprigs of fresh herbs among the meat.

Next, whisk together the sauce. This is GOLD.

It includes all of the familiar French Onion soup ingredients for a rich and savory broth.

Pour the sauce over your chicken and onions and then pop it in the oven!

As the chicken bakes and browns on top, the onions cook down and continue to add sweet flavor to the meat and the sauce.

The French Onion Chicken Casserole is the perfect combination of sweet, savory, and fresh ingredients!

Even if your kids don’t like onions, I promise: they will LOVE this meal (just leave the onions on the side and serve the plain diced chicken to your finicky eaters).

WHAT TO SERVE WITH FRENCH ONION CHICKEN:

It wouldn’t be French Onion Chicken without a slice or two of thick, cheesy, toasted bread. Don’t forget this vital finishing touch! The bread also makes a perfect dipping tool to soak up any extra broth that you might have lingering on your plate.

HOW DO YOU KNOW WHEN IT IS DONE COOKING?

You can poke the meat to see if juices are red or clear. This method applies to chicken specifically. When you poke a chicken breast and the juices that escape are clear, then it is most likely done. If the juices are red or have a pinkish color, your chicken needs some more time in the oven. Ideally, if you have a meat thermometer, cook until the internal temperature reaches 165 degrees F. (This one has amazing reviews and is a user-favorite!)

INGREDIENTS NEEDED

For this recipe, you will need:

  • Chicken thighs: You can also substitute chicken breast.
  • Cream of chicken soup: You’ll need one can (about 10.5 ounces). You can also use homemade if you don’t like the canned stuff.
  • Sour cream: You’ll need one cup of sour cream.
  • Mushrooms: You’ll need 8 ounces of fresh sliced mushrooms.
  • Yellow onion: You’ll need one small yellow onion.
  • Salt and pepper: I found that the cream of chicken and onion soup mix had enough salt already and didn’t add any. I recommend doing salt and pepper to taste.
  • Onion soup mix: Such as Lipton’s. There is no need to prepare to the mix beforehand.

HOW TO MAKE

Spray your slow cooker with non-stick spray. Next, add in your sliced onion and mushrooms. Add the chicken thighs on top.

In a small bowl mix the sour cream, salt and pepper, cream of chicken and onion soup mix. Pour over the chicken.

Cook on low for 6 to 8 hours or on high for 4.

TIPS

  • If you’re in a hurry, you can stir everything together in the crockpot instead of the bowl. Be sure to stir in the soup mix so it cooks evenly.
  • I find chicken thighs tend to retain more moisture than chicken breast in the crockpot but you can also substitute chicken breast in this recipe.
