If you would pardon the pun, Creamy Salsa Chicken was a pleasant mistake. I’m sure you’ve all been there: trying to make dinner with the three ingredients left in the fridge by rummaging through the cupboard and refrigerator. #GroceryShoppingIsOverrated

I hurriedly placed some frozen chicken tenders and the last of a jar of salsa into my crockpot.I looked in the refrigerator and saw a block of cream cheese, so I figured, why not?

We’ve enjoyed a meal like this once or twice a week since we put the cream cheese in.

AMAZINGLY GOOD.

Making Salsa Chicken in a Crockpot or Instant Pot

The crockpot approach is so simple that you couldn’t possibly mess it up, despite the fact that the images displayed are for the Instant Pot.

First, the Instant Pot is filled with frozen chicken tenders. FROZEN, indeed! (Spoiler alert: this also works with defrosted chicken tenders!)

Then add a jar of salsa on the top.

So that’s it. The moment for pressure cooking has come.

I am aware of your thoughts. Karli, however, I require a thin liquid. Will I receive a burn notice?

Quick response: No.

Longer response: The chicken releases liquid while the Instant Pot warms. There is plenty of liquid in there when you combine that liquid with the salsa’s liquid.

Pressure Cook for 6 minutes on Manual (or pressure cook! ), then wait 6 minutes before releasing the pressure. (For cook times with thawed or chicken breasts, see below.)

Add a cubed block of cream cheese after removing the chicken from the pressure cooker. Place the cover back on and wait for around five minutes.

Shred the chicken while the cream cheese is melting nicely.

My stand mixer is the method I prefer to use to shred the chicken.

Add the cream cheese and blend it well with an electric mixer or a whisk.

It’s time to assemble the tacos now. also nachos!

Put some of that chicken on a tortilla, then add cheese, cilantro, pico de Gallo, and that creamy salsa to complete the dish.

A family favorite also includes loaded nachos. Tortilla chips, diced chicken, cheese that has been melted, tomatoes, olives, beans, rice, guacamole, cilantro, and (of course!) a sprinkle of that smooth salsa on top.

Instructions for making Salsa Chicken in the Crockpot or Slow Cooker

The chicken salsa and cream cheese will be placed in the crockpot together to make creamy salsa chicken in the slow cooker or crockpot.

Cook for six hours on low or four hours on high.

Shred the chicken after removing it. Serve the salsa after adding the cream cheese.

Creamy Salsa Chicken

Creamy Salsa Chicken is a flavorful, quick dinner using only 3 ingredients! Creamy Salsa Chicken can be made in either a crockpot or an Instant Pot! Salsa, chicken and cream cheese is all it takes to make this easy meal!

Ingredients

  • 6 chicken tenders frozen
  • 1 16 oz jar salsa
  • 1 8 oz block cream cheese cubed

Instructions

  1. To prepare in the Instant Pot, put the frozen tenders inside and cover with salsa.
  2. Cook for 6 minutes on Manual HIGH, then quickly release the pressure after a 6 minute NPR.
  3. Cream cheese should be added to the Instant Pot after the chicken has been removed. Place the cover on tightly and let it on warm for five minutes.
  4. Chicken should be shred. Place aside.
  5. The cream cheese should be thoroughly blended in using a hand mixer or a whisk.
  6. Put all the ingredients into the crockpot for the recipe. Cook for six hours on low or four hours on high.
  7. Toss the cream cheese into the salsa after removing and shredding the chicken.
  8. Serve the rice, cheese, beans, pico, and shredded chicken in a tortilla with the creamy salsa drizzled over the top.

This slow cooker salsa chicken is chicken that has been covered with rich salsa, cream of chicken soup, and homemade taco seasoning. It is then topped with sour cream, cheese, and crisp, shredded lettuce. It’s a quick and easy chicken supper!

I try to include a tasty Mexican cuisine whenever possible. This recipe was provided to me by Chef Mommy. You should absolutely give this one a try. It’s quite simple. The flavor is also fantastic. Do you recall how I mentioned that I enjoy cooking with cream cheese? Well, I had to include one. My husband preferred the leftovers from the previous day. I purchased whole wheat Tostitos chips, loaded them with sauce, cheese, olives, and sour cream, and voilà—delicious nachos!

The entire family genuinely enjoyed this recipe. It was a huge success! even with children! Everyone walked down the line and selected their preferred things to add to this scrumptious chicken after we put it up like a taco bar. The cheese, beans, tortillas, chips, rice, corn, sour cream, and cilantro were the last things I set out. The finest aspect was that everyone was able to customize it. No drama with finicky eaters for us! When inviting friends for supper, this chicken is one of my favorites. Everyone can personalize it to suit themselves. Such little preparation yields such wonderful outcomes!

Salsa Chicken Ingredients:

  • Chicken Breasts: I buy mine pre-trimmed at the store which saves me a little prep time.
  • Cream of Mushroom: or cream of chicken soup: This is what makes the sauce so creamy.  I always use Campbell’s Healthy Request since there is a little less fat.
  • Salsa: Choose a high quality salsa since this is where much of the flavor will come from.
  • Cream Cheese: Can you really go wrong with any recipe that includes cream cheese?  It adds so much to the smoothness of the sauce.
  • Taco Seasoning: I always use my homemade taco seasoning. It lasts up to 6 months and is so quick and easy to make!
  • Sour Cream: Use low fat or full fat versions depending on your dietary needs, either work great.

How to Make Salsa Chicken Recipe:

  1. Getting the slow cooker readyIn your slow cooker, combine the chicken, soup, salsa, and cream cheese. Taco spice should be added to everything. Crock pot should be on low for six hours.
  2. When shredding chicken, remove the breasts, shred them, and then put them back in the slow cooker.
  3. Add Sour Cream: Stir in the sour cream, then heat everything together briefly.
  4. Add garnishes:Add shredded cheese, black beans, green onion slices, and cilantro on top. Set aside some cilantro for serving, if desired.

How to Serve Salsa Chicken:

  • in taco softs! Warm tortillas should be filled with the chicken, salsa, corn, and beans. Add lettuce, sour cream, green onions, olives, guacamole, shredded cheddar cheese, or any other toppings you choose.
  • within quesadillas! Chicken should be sliced (or shredded) and placed inside quesadillas. Just before serving, top the dish with the delightful corn and bean salsa.
  • With taco salad! Enjoy the salsa chicken over a bed of crunchy romaine and keep it very light. If you’d like, add toppings, but it’s not required!
  • Burrito bowl-style! Join the fun and let everyone create their own bowl using their favorite ingredients from your home, such as rice, cheddar, corn, or black beans. Bowls are the latest trend worldwide.

Tips for Making Salsa Chicken:

  • Since there are so many other mild flavors to soften the heat, don’t be afraid to use a salsa with a bit more kick to it.
  • Line your slow cooker with a slow cooker liner or coat it with nonstick spray to make cleanup simpler.
  • Using a standing mixer to shred the chicken is simple. However, I find that the mixer makes shredding the chicken easier and better than two forks. Using the mixer also has the added benefit of spreading the cream cheese evenly throughout the chicken when you add it.
