HOW TO MAKE SALSA CHICKEN

While my Dump-and-Bake Salsa Chicken is obviously a nutritious, low-calorie dish, it’s definitely not lacking in flavor!

Best of all, the prep (which only takes minutes) is as easy as 1-2-3. Here’s how it goes:

Step 1: Stir together frozen corn, black beans, diced tomatoes, and salsa in a dish, along with minced garlic and cumin.

Step 2: Place your chicken breasts on top, and season with salt and pepper.

Step 3: Pour additional salsa on top of the chicken; cover; and bake for 45-60 minutes (or until your chicken is done).

In the end, you’ll have zesty, flavorful, tender, and juicy meat that serves as the base for a variety of easy dinners.

HOW TO SERVE SALSA CHICKEN

  1. In soft tacos! Stuff the chicken, salsa, corn, and beans into warm tortillas. Top with shredded cheddar cheese, lettuce, sour cream, green onions, olives, guacamole, or any of your other favorite toppings.
  2. In burrito bowls! Fill a bowl with rice (or cauliflower rice) and top it with the salsa chicken. Add shredded cheddar cheese, lettuce, sour cream, green onions, olives, guacamole, or any of your other favorite fixin’s.

COOK’S TIPS AND RECIPE VARIATIONS

  • For a quicker cooking time, cut larger chicken breasts in half lengthwise to create thinner pieces of meat. Thin, small chicken breasts will be done in about 25-30 minutes.
  • Prepare this dinner in the slow cooker! Just place the chicken breast in the bottom of a Crock Pot. Add the remaining ingredients on top. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours.
  • Cooking Just for Two? Cut all of the ingredients in half and prepare the recipe in an 8-inch square baking dish. The cooking time will remain the same.

EASY BAKED SALSA CHICKEN

Baked chicken dishes are the best because it usually only requires one pan which makes for EASY clean up! The more time I can focus on enjoying my meal and not worrying about dishes, the better!

This baked salsa chicken is one-pot, baked, and so easy to whip up for a weeknight diner. It’s one of those meals that you probably already have all the ingredients in your house. Quickly layer everything in the pan and baked in the oven for 30 minutes. Done and done

The flavors of this salsa chicken are spicy, cheesy, and just plain good. The chicken always comes out tender and juicy, and I love all the salsa and melted cheese on top.

HOW TO MAKE SALSA CHICKEN

PREP. Make sure your oven is preheated to 375 degrees. Grease a 9×13 pan and lay the chicken breasts in it.

TOP. Sprinkle taco seasoning on both sides of the chicken. Then pour the salsa on top of the chicken breasts. How easy is this so far?

BAKE. Put the pan into the preheated oven and bake for 30-35 minutes until the chicken is cooked through.

After it’s cooked, take it out of the oven and sprinkle the cheese over the top. Bake for an additional 3-5 minutes until the cheese is all melted. Serve with sour cream and your favorite Mexican toppings!

CROCK POT INSTRUCTIONS

If you want to make this salsa chicken in the crock pot, it’s just as easy!

Place the chicken (sprinkled with taco seasoning already) in the crockpot with about ¼ cup of water on the bottom. Pour the salsa on top of the chicken breasts and cook on high for 3-4 hours or low for 6-8 hours.

During the last half hour of cooking, sprinkle the cheese on top and cook until the cheese has melted. Serve with toppings and enjoy!

SERVING AND STORING

Definitely top this chicken with yummy Mexican flavored toppings. It takes the chicken to another yummy level. Here are some suggestions:

If you end up not finishing all of the chicken, it makes great leftovers! Just keep it STORED in an airtight container in the fridge for 3-4 days. We also like to heat it up and have with our salad. Leftovers can also be shredded and used in burritos, on top of nachos Inside of Quesadillas, or over rice.

HOW TO MAKE THIS SALSA CHICKEN RECIPE

This is a quick and easy recipe perfect for when you need to get dinner on the table fast!

  1. Cut the chicken breasts in half then season them with taco seasoning (we use our own easy homemade taco seasoning), salt, and pepper.
  2. Sear the breasts until they’re golden then take them out of the pan.
  3. Now pour the salsa and corn into the pan and give it a good stir. Put the chicken back into the pan and let the pan bubble away for about 5 minutes, until the chicken is cooked.
  4. Top the chicken with cheese, let it melt, and dinner is ready! So easy!

WHAT KIND OF SALSA SHOULD I USE?

We like to use fire-roasted tomato salsa, but you can use whichever brand of salsa is your favorite. Avoid using fresh salsa (like pico de gallo), as it doesn’t work well in this recipe.

CAN I USE WHOLE CHICKEN BREAST?

Whole chicken breasts take longer to cook, so you’ll need to adjust the cooking time. Breasts will need to simmer in the sauce for 15-20 minutes. If the sauce starts to look dry, add a little splash of stock or water to the pan.

HOW LONG DOES SALSA CHICKEN LAST?

Cooked chicken will keep well for 2-3 days in your fridge. Reheat it gently on the stove, adding a little splash of water to the pan if the salsa sauce gets too dry. Or you can use a microwave to reheat if you’re away from home.

CAN I FREEZE CHICKEN AND SALSA?

WHAT TO SERVE WITH SALSA CHICKEN
