We love this Chicken With Sour Cream Casserole because it is quick, easy and inexpensive to make. Simply place all the ingredients in the slow cooker and let it cook away while you do other things. This recipe is made with chicken that is cooked with the potatoes and sour cream so they are tender and delicious. You can now have tasty chicken with sour cream casserole in the oven or the slow cooker.

EASY CREAMY SOUR CREAM CHICKEN CASSEROLE

INGREDIENTS

Nutrition

  • 4boneless skinless chicken breasts, boiled and cubed
  • 1cup sour cream
  • 1(10 3/4 ounce) can cream of chicken soup (mushroom can be substituted)
  • 25Ritz crackers
  • 12cup butter, melted
  • salt and pepper

DIRECTIONS

  • Preheat oven to 350°F.
  • Boil chicken breast until tender; drain and cube.
  • Spread evenly over the bottom of a square casserole dish.
  • Salt and pepper to taste.
  • Mix sour cream and chicken soup in a separate bowl.
  • Spread the sour cream and soup mixture over the chicken in the casserole dish.
  • Crush the Ritz crackers and spread over top of the casserole.
  • Spoon melted butter on top over all.
  • Bake in a 350°F oven until top is golden brown, approximately 20-30 minutes.

Chicken casseroles are a weeknight staple at our house. I am always thinking of ways to change them up so we don’t get bored with the same old thing. This Million Dollar Chicken Casserole is a kicked-up version of the classic Chicken Poppy Seed Casserole I ate growing up with cream cheese, cottage cheese, and sour cream. This casserole is super simple to make and tastes like a million bucks! Serve the casserole with some green beans and crusty bread and dinner is done!!

How to Make Million Dollar Chicken Casserole

This chicken casserole is super easy to make. Start with a rotisserie chicken. Remove the skin and pull the meat off the bones. Next simply combine the chicken, cottage cheese, cream cheese, sour cream, cream of chicken soup, garlic powder, and onion powder. Spread the chicken mixture into a baking dish, top with crushed Ritz crackers and bake. 

Can this Casserole be Frozen?

This Million Dollar Chicken Casserole makes a great make-ahead meal and freezer meal. I usually double the recipe when I make this. I bake one and freeze one for later. You can freeze the casserole baked or unbaked. To bake the casserole after freezing, thaw overnight in the refrigerator and bake as directed below. To reheat the casserole after freezing, thaw overnight in the refrigerator. Cover the casserole with foil and bake at 350ºF for 30 to 40 minutes.

  • 9-inch Square Baking Dish

Ingredients:

  • 4½ cups chopped cooked chicken
  • 4- oz cream cheese, room temperature
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.75-oz) can cream of chicken soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers, crushed
  • 5 Tbsp butter, melted

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
  • Combine chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Spread into prepared pan.
  • Combine crushed crackers and butter, sprinkle over chicken mixture..
  • Bake uncovered 30 to 40 minutes.

Notes:

  • Use a rotisserie chicken for quick prep of the cooked chicken.
  • You want the cream cheese to be very soft so it gets fully incorporated into the casserole. Microwave the cream cheese for 15 to 20 seconds if you are short on time.
  • Can prepare through step 3 and refrigerate or freeze for later.
  • To bake after freezing, thaw completely and bake as directed above.
  • For a gluten-free dish, use gluten-free Cream of Chicken soup and crushed pork rinds instead of Ritz crackers.

I like them because they are easy to make and hard to mess up. They aren’t pretty to look at, but they taste yummy. I think that’s the most important thing anyways.

How to Make Sour Cream Chicken Bake

This recipe is easy to prepare, but does need some extra time to bake to perfection in the oven.

Stir flour, paprika, salt and pepper together in a small bowl. Roll the chicken breasts in the flour mixture and place in a 9×13 casserole dish.

In another bowl, mix together sour cream, cream of mushroom soup and mushrooms. I used canned mushrooms, but you could also try fresh, if you prefer. Pour the sauce over the chicken in the casserole dish.

Bake, uncovered, in a 350F oven for 1 hour 15 minutes.

WHAT DO I SERVE WITH THIS CASSEROLE?

I love to serve this with some fresh veggies like steamed broccoli, corn or GREEN BEANS. You can also add those veggies directly into the casserole if you want. Also, a yummy green salad with lots of veggies would be perfect!

CAN I FREEZE RITZ CHICKEN CASSEROLE?

I can never have enough chicken recipes. But sometimes you don’t need a big ole casserole. So, you can split this recipe and put it into two smaller pans. Make one now and freeze on for later. Like with all freezer meals, it’s super important that you wrap it up well so you’re not dealing with freezer burn later on.

WHAT OTHER SEASONINGS CAN I USE?

You can certainly have fun with this casserole and add different seasonings and flavors. You could add onion powder and garlic powder to the cream mixture. Those are the most common seasonings most people have on hand. You could certainly use pretty much any seasoning that you would use on chicken.

HOW TO MAKE RITZ CHICKEN CASSEROLE:

Preheat oven to 350f degrees. Spray a 2.5 quart baking dish (or a 9×9 square baking dish) with non-stick cooking spray.

 In a large bowl, mix together the soup, sour cream and green onion.
