This chicken with soy sauce recipe is one of the most popular Chinese dishes . It is also called famous sweet and sour chicken recipe . It is very simple to cook this dish at home .

Ingredients

  • 1kg skin-on and bone-in chicken thighs (6-7 thighs)
  • 1 tbsp rapeseed oil
  • 4 spring onions, 3 cut in half, 1 finely sliced on an angle, to serve
  • thumb-sized piece of ginger, grated
  • 3 star anise
  • 2 bay leaves
  • 240ml light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp Shaoxing rice wine, or Chinese rose wine (or use sherry)
  • 3 tbsp dark brown sugar
  • 1 tbsp cornflour mixed with 1 tbsp water
  • cooked jasmine rice and steamed greens (we used broccoli and pak choi), to serve

Method

  • STEP 1Season the chicken with salt and set aside. Heat the oil in a wok or large frying pan over a medium heat, add the halved spring onions, ginger, star anise and bay leaves. Stir-fry for 5 mins until fragrant and the spring onions turn slightly golden.
  • STEP 2Pour in the light soy sauce, dark soy sauce, oyster sauce, Shaoxing rice wine, 2 tbsp of the sugar and 480ml water. Turn the heat up to high and bring the liquid to the boil.
  • STEP 3Slide in the chicken thighs, skin-side down, arranging them in a single layer. Add water if needed to just about cover the chicken.
  • STEP 4Turn the heat down low, cover the wok or pan and simmer for 35 mins. Turn the thighs over and cook covered for another 10 mins.
  • STEP 5Remove the chicken to a plate. When the thighs are cool enough to handle, remove the bones and slice into pieces about 1cm thick. Arrange on a serving dish.
  • STEP 6While the chicken is cooling, strain 150ml of the braising liquid into a small pan and discard the solids. Put the pan over a medium heat and just before it starts to boil, add the cornflour mixture and remaining brown sugar. Once the sauce reaches your desired thickness, remove from the heat. (It should be thick enough to coat the back of a spoon.) Pour it over the sliced chicken or serve in a bowl on the side for dipping. Garnish with the sliced spring onion. Serve with jasmine rice and steamed greens, or vegetables of your choice.

I can go out on a limb and say that this is probably my favorite chicken recipe, not only because it’s super simple requiring only a handful of ingredients, but because chicken thighs are my favorite part of the chicken because of the juiciness.

So on a super hot day like today, I don’t mind turning on my cooktop and making this chicken and in 20 minutes I’m done. Because it’s hot in my kitchen. We moved to our new house and while I love everything about it, I don’t love the fact that there’s no AC yet, and even as I speak (or type) to you, there are 80 degrees in my kitchen and trust me, that’s hot.

GARLIC SOY CHICKEN

This Garlic Soy Chicken proves how a simple Asian inspired glaze can turn simple boring chicken thighs into delicious, super flavorful, tender chicken thighs that will be the star of your dinner.

INGREDIENTS

  • ▢1 1/2 pound chicken thighs boneless skinless (about 6 thighs)
  • ▢3 tablespoon soy sauce low sodium
  • ▢1/4 teaspoon dark soy sauce optional
  • ▢1/4 teaspoon allspice ground
  • ▢2 cloves garlic minced
  • ▢1 tablespoon brown sugar
  • ▢1 tablespoon olive oil
  • ▢1 teaspoon sesame oil

INSTRUCTIONS

  • Pat the chicken dry and trim any fat if preferred.
  • In a small bowl bowl whisk together the soy sauce, dark soy sauce, allspice, garlic and brown sugar. Set aside.
  • In a skillet heat the olive oil and sesame oil. Add the chicken to the skillet. Using a brush, brush about half the soy sauce mixture over all the chicken pieces. Cook for about 5 minutes, flip over and brush with the remaining sauce. Cook for 7 to 9 minutes, flip over and cook for an additional 2 to 4 minutes. Thighs should take a total of 14 to 18 minutes to be fully cooked.
  • Remove thighs from skillet and serve.

tips & notes:

Partially frozen thighs can be used as well. Follow the instructions as specified, then place the skillet in the oven and finish cooking them for another 15 minutes at 375 F degrees.

Boneless skinless chicken thighs can be used as well. If using flattened chicken cook for a total of 6 to 8 minutes, otherwise 8 to 12 minutes.

Garlic Soy Sauce Chicken

Garlic Soy Sauce Chicken is easy to make at home with accessible ingredients.

You will need soy sauce, oyster sauce, dark soy sauce, garlic, white pepper, five-spice powder, and honey.

Marinate the chicken for at least one hour or overnight. The longer you marinate the chicken, the juicier and flavorful it will become.

I like to marinate the chicken the night before for a super quick and easy weeknight dinner the next day.

You can use the chicken leg, thigh, or ¼ chicken to make Garlic Soy Sauce Chicken.

I highly recommend using chicken that has the SKIN ON. The skin adds crispiness and alot of flavor.

The chicken skin will also help protect the meat when baking, which keeps the meat juicer.

Depending on the chicken you are using, the baking time may vary. Keep an eye out to prevent the skin from burning.

I like to pair my Garlic Soy Sauce Chicken with a big bowl of rice.

You can also serve with my Soy Sauce Chow Mein, Egg Fried Rice, or Salad.

QUICK TIP, simmer the extra sauce until it becomes a thick glaze, and drizzle it over steamed vegetables and rice.

The sauce is super addicting and reminds me of the soy chicken sauce you get at HK Style BBQ restaurants.
