Crab apple crumble has to be one of my favourite desserts. It’s the perfect mix of fruit and yogurt with a crumbly topping that’s just too die for! This recipe below is a variation on the classic crumble dishes, with a slight twist. Fresh crab apples are used in place of granny smith or cooking apples. Crab apples are very tart and are often used in preserving and cooking; they have a milder flavour than their sharper counterparts, which makes them perfect for cooking.

In addition to being wonderful for feeding pollinators, crabapple trees also provide excellent, tart fruit.
Crabapples, which are sourer than regular apples, balance out the sweetness of the other components to create the ideal deconstructed apple crumble. This healthy take on a traditional home recipe is ideal as a dessert in the summer or as a snack to quell a sweet tooth.
Add some homemade (or store-bought) granola on top!
3-4 crapapples, chopped
1 tbsp. pure maple syrup
1 tsp. brown sugar
¼ tsp. each cinnamon and nutmeg
pinch sea salt
2 cups old-fashioned oats
½ cup sliced almonds
¼ cup margarine, melted
¼ tsp. cinnamon
½ tsp. vanilla
¼ cup honey
pinch sea salt
- Set the oven to 350 degrees.
- The oats, almonds, salt, and cinnamon should all be combined in a sizable mixing basin. Melted butter or margarine, vanilla, and honey should be added. Mix thoroughly, coating everything just a little bit.
- On a baking sheet with parchment paper on the bottom, spread the granola out into a thin layer. Bake for about 20 minutes, or until oats begin to turn golden. Split into small pieces after allowing to cool.
- Chopped crab apples, maple syrup, cinnamon, nutmeg, brown sugar, and sea salt are combined in a small pot on the heat.
- For about 10 minutes, simmer until a glaze forms over the apples, then turn off the heat.
- Combine vanilla extract, cinnamon, and Greek yogurt.
- Divide among four bowls for serving.
- Each bowl should have a mixture of crab apples and granola. Add cinnamon and then serve.

- Shortbread Ingredients
- 1/2 cup softened unsalted butter
- 1 teaspoon pure vanilla extract
- 1/4 cup of packed brown sugar
- 1/4 teaspoon salt
- 1 cup of all-purpose flour
- Crab Apple Sauce Filling Ingredients
- 6 cups of crab apples washed, cut removing any seeds but leaving the peel on
- 1 Tablespoon pure vanilla extract
- 1 teaspoon lemon juice
- 1/2 cup of brown sugar
- 1/2 cup granulated white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon xanthan gum or cornstarch mixed with 1/4 cup of cold water
- 1/4 teaspoon salt
- 1 Tablespoon butter
- 1/4 cup cold water
- Oatmeal Topping Ingredients
- 1 1/4 cup of large grain oats
- 1/2 cup of all-purpose flour
- 1/2 cup cold cubed butter
- 1/2 cup of white or brown sugar
Preparing The Shortbread Crust
oven to 350 degrees before using.
An 8×8 inch baking pan should be greased and lined with parchment paper that drapes over the edges.
Add the butter, brown sugar, and more vanilla to a mixer, and mix for three to five minutes, or until frothy.
Slowly incorporate the dry ingredients—flour and salt—into the butter mixture.
In the baking pan with parchment paper lined on the bottom, press the buttery crust dough.
Make sure the crust is level with a spatula to ensure equal baking.
Bake for ten to fifteen minutes, or until the crust is golden.
While preparing the crab apple sauce, remove from oven to cool.
Making The Crab Apple Sauce
Add the diced crab apples with the skins on to a medium saucepan.
Add nutmeg, salt, butter, lemon juice, cinnamon, and vanilla extract.
Mix 1/4 cup cold water, xanthan gum, or corn starch in a small bowl.
Over the apples in the pot, pour the mixture and swirl to incorporate.
Over the apples, pour a further 1/4 cup of cool water.
Cook the crab apple sauce, stirring frequently, for 15 to 20 minutes, or until the apples are soft.
It should have an applesauce consistency, but if you feel like you need to add a little more water, go ahead and do that. (view images)
With a potato masher, smash the apples in the crab apple mixture after taking it off the heat.

Making The Oat Topping
Add the large grain oats, flour and cubed cold butter into a large
bowl and mix with your fingers until you have pea-sized chunks
Putting The Crab Apple Pie Bars Together
Over the already-baked shortbread base, pour the crab-applesauce mixture.
Spread the oat mixture evenly, and then sprinkle it with crumbles.
35 to 40 minutes of baking time, or until golden brown
Take out of the oven, then allow to fully cool.
Using the sides of the parchment paper, remove the entire pan of bars once they have cooled.
Cut the cake into 20 little squares or more, as desired.
With a scoop of vanilla ice cream and a sprinkle of caramel sauce, I like to serve the crab apple pie bars.
To the crab apple pie mixture, walnuts or pecans can be added, or you can sprinkle them on top right before serving.
