  • 1  large onion, chopped
  • 3 carrots, peeled and sliced into coins
  • 2 stalks celery, sliced
  • 4 tsp. sprigs fresh thyme
  • 4 tsp. sprigs fresh rosemary 
  • 3 cloves garlic, minced
  • 1 bay leaf
  • Kosher salt Freshly ground black pepper
  • 10 c. low-sodium chicken broth
  • 8 oz. egg noodles


  1. Chicken, onion, carrots, celery, thyme, rosemary, garlic, and bay leaf should all be combined in a slow cooker. Salt and pepper should also be added liberally. Add the broth.
  2. Cook on low for 6 to 8 hours with a cover. Chicken should be taken out of the slow cooker and forked into shreds. Remove the bay leaf and herbs. Add egg noodles and the chicken back to the slow cooker.
  3. Cook on low, covered, for 20 to 30 minutes or until al dente.

Unfortunately, it’s not best to cook frozen chicken breast in a slow cooker. The temperature of the crock pot doesn’t get high enough fast enough for the bacteria to be killed. It’s best to only use freshly thawed chicken or thaw them in the microwave before adding them to the crockpot.
