I use my slow cookers several times a week, and when our family gets together, I generally have several in use at once. I recently received a new one for Christmas, and I’m very happy about it.

This is a fantastic go-to recipe for weeknight meals. I adore the flavors, it’s really nutritious, and I can always have chicken with potatoes. What’s best? In one dish, both chicken and potatoes are prepared simultaneously. It’s fantastic! This easy crockpot dish is a favorite among even picky diners. I sincerely hope you adore it as much as my family does!

SLOW COOKER HERBED CHICKEN & POTATOES

Ingredients  1x2x3x

  • ▢4 boneless skinless chicken breasts or 4-6 chicken thighs
  • ▢3 cups chopped potatoes about 1 ½ inch pieces
  • ▢3 tablespoons oil
  • ▢1 tablespoon Italian seasoning blend
  • ▢1 teaspoon garlic powder
  • ▢salt and pepper to taste
  • ▢fresh herbs for garnish optional

Instructions 

  • Combine chicken and potatoes in a large bowl. Pour oil over and whisk to coat. Then, mix the chicken and potatoes to evenly distribute the seasonings of salt, pepper, garlic powder, and Italian seasoning.
  • Transfer to a slow cooker (OR, as an alternative, cook the chicken and potatoes over medium-high heat for 2–3 minutes to brown before transferring to the slow cooker to finish cooking), cover, and cook for 4–6 hours on low, or until the chicken is thoroughly cooked and the potatoes are tender to the fork.
  • Serve hot and garnish with fresh herbs like oregano and thyme, if desired.
