WHAT FOODS SHOULD WE BE EATING IN AUTUMN?

Eating seasonally is as important as eating healthy food. Vegetables grown in the right season give your body more nutrients to fight the beginning of the cold season.

These foods are in season in fall and are the perfect addition to your diet:

  • Root vegetables: Carrots, any type of squash, pumpkin, and sweet potatoes
  • Whole grains: Brown rice, wholewheat pasta, quinoa, and oats
  • Legumes: Lentils, beans, chickpeas, soybeans.
  • Green vegetables: Broccoli, spinach, kale, and artichokes
  • Fruit: Apples, pomegranates, citrus fruits, and pears

Plus, always make sure to add herbs and spices to your diet:

30-MINUTE FALL RECIPE

I am the kind of person that always looks for quick and easy recipes: if the list of ingredients is longer than my arm, it’s not for me, and I move on. Who has time for that?

The other thing I always check is: how long will this take to make? Sure, I love cooking, but I really don’t want to spend more than 30 minutes a day in the kitchen during the week.

So, here they are: my favorite fall recipes, all ready in 30 minutes or less, with the most delicious ingredients autumn brings to our table!

1. CREAMY BUTTERNUT SQUASH PASTA WITH SAGE

I love this pasta recipe! And if you have a butternut squash obsession, you have to try this! An easy and creamy fall pasta dish, made with butternut squash, onions, plant-based milk, and topped with crispy sage leaves. And it’s ready in just 30 minutes.

2. PUMPKIN, MUSHROOM, AND SPINACH PASTA

What is more autumnal than pumpkins? Mushrooms! And what if we combine both? This pumpkin, mushroom, and spinach pasta is a healthy, comforting, and filling vegetarian fall dish, perfect for filling you up on a weeknight.

3. COCONUT LENTIL CURRY

One of my favorite dinners of all time! It’s quick and easy to prepare. You just need lentils, coconut milk, and some greens. The perfect fall recipe if you have very little time to cook your dinner.

4. BEETROOT RISOTTO

Sometimes I struggle to find the perfect beetroot recipe. I love the color that beetroots can give to food, but I find that they can be a bit too sweet. This risotto has a good balance of sweetness and acidity thanks to the addition of balsamic vinegar. Plus, it looks amazing!
