I have been pretty obsessed with creamy delicious skillet meals lately. But my family LOVES them. I always have most of these ingredients on hand. I buy chicken and heavy cream in bulk from Costco and I have a delicious real ready in under 30 minutes.

I am not a huge mushroom fan, but if you stuff them, or put them in a sauce I absolutely love them! These mushrooms added a new texture and awesome flavor to the dish.

I mean just look at all of that creamy delicious garlic mushroom goodness!

Ingredients  1x2x3x

  • ▢1 1/2 pounds chicken thighs or breasts boneless skinless
  • ▢2 Tablespoons olive oil
  • ▢8 ounces sliced mushrooms
  • ▢3 garlic cloves minced or whole (whatever your preference is)
  • ▢1 cup chicken broth
  • ▢1/2 cup heavy cream
  • ▢2 ounces cream cheese softened
  • ▢1 teaspoon garlic powder
  • ▢1/2 teaspoon salt
  • ▢1/4 teaspoon pepper
  • ▢1 Tablespoon flour


  • In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and garlic and cook for a few minutes until tender. Remove and set aside.
  • To make the sauce add the chicken broth, heavy cream, cream cheese, garlic powder, salt and pepper. Cook over medium heat and whisk until smooth. Add the flour and continue to cook for 1-2 minutes until it starts to thicken. Add the mushrooms and garlic to the sauce followed by the chicken and coat in the creamy sauce. Heat for a couple of minutes and serve immediately.

It’s not a secret that I am the biggest mushroom fan, and I personally believe they pair so well with chicken, especially when a luscious cream sauce is involved.

Skinless, boneless chicken breasts are so easy to work with. They are readily available and require almost no prep. They also cook in record time, which means dinner could be made in a flash!

No wonder they are favourite with my family members.

The ingredients for this dish are quite simple but work like magic when put together with a bit of loving care. 

I like to use skinless, boneless chicken breasts as they are easy to use and are slightly less calorific than chicken thighs.  

For the sauce you will need button mushrooms. But if you are after a bit more interesting flavours and textures, use a mix of wild mushrooms. Check my Mushrooms Stroganoff recipe, where I write extensively about different types of mushrooms. 

I also use fresh rosemary to complement earthy mushroom flavour, shallots, garlic, dry white wine, heavy cream and tiny bit of wholegrain mustard. 

You can also use thyme, parsley, tarragon, or any other herb blend of your choice.

As you can imagine the mushroom sauce is the star of the show here. It truly makes the dish and the good news is that the sauce is very easy and quick to make. 

Mushrooms themselves bring lots of flavour to the table and once paired with fragrant and woodsy rosemary, they indeed shine. 

We start the sauce by browning the mushrooms, which intensifies their flavour, then adding shallots and a fair amount of minced garlic. Once the mushrooms are golden, and the shallots and garlic are soft, I like to hit the pan with a bit of dry white wine.

Hitting a hot pan with a bit of alcohol after browning meat and vegetables is called deglazing.  A very useful technique that accomplishes two things.

Browning is usually done at high temperature and if left on for too long, can causing burning and consequently turning food bitter. Deglazing of a pan prevents burning, as added liquid lowers the temperature immediately.

It also infuses the sauce with more flavour as burnt to the bottom bits are released into the sauce. The wine itself enhances and balances the sauce. 

I finish the sauce with a bit of chicken stock, a good amount of cream and a tablespoon of mustard. 


A number of side dishes works exceptionally well here. I would recommend to choose something rather plain like rice or potatoes as the sauce itself is rich enough and needs to be balanced out by the side dish.

Creamy chicken has become my ultimate weeknight dinner served over rice, pasta, a side of or a side of veggies when I’m doing low-carb. It’s made all in one pan in under 30 minutes for quick prep and clean-up!

This creamy sauce is EVERYTHING you want in a cream sauce and more. I’ve been perfecting it over the past several months and this is it. It’s loaded with lots of freshly minced garlic, parmesan, herbs, and cream. Today’s sauce features mushroom and they are the star of the dish. The mushrooms in the sauce were so delicious I had them alone by the spoonfuls! (hint: vegetarian dinner idea!)

To Make Creamy Mushroom chicken you will need:

Chicken Breasts: This recipe calls for boneless, skinless chicken breasts but thinly pounded boneless, skinless chicken thighs will also work. The chicken breasts are cut in half horizontally to help the chicken cook fast and make thinner fillets.

Mushrooms: This recipe will work with just about any type of mushrooms. Sliced White, Crimini, or baby Bella mushrooms are preferred.

Onion: Finely minced onion or shallots. The recipe can do without the onions but why not? They add a nice caramelized flavor to the cream sauce.

Garlic: Lots of fresh minced or crush garlic. The recipe calls for 3-4 but I went ahead and used 5 because I’m hooked on garlic.

Heavy Cream: Aka double cream or heavy whipping cream. The recipe will also work with half & half, light cream or evaporated milk.

Parmesan Cheese: Freshly grated parmesan cheese is optional but highly recommended. You can also use pre-grated parmesan.

Herbs: A few tablespoons of fresh herbs really do take this dish to the next level. You can use parsley, chives, rosemary, dill, cilantro, or leave out the herbs all together if you don’t have any on hand.

After you’ve gathered all your ingredients it’s time to get cooking! The good news is that the hard part is behind you and all that’s left is for you to cook everything and do your magic! The chicken, mushrooms, onion, garlic and everything else is cooked in one pan for easy clean-up.

Serve on al dente pasta, on rice, a dressed arugula salad, steamed vegetables, with zoodles, or freshly toasted garlic bread.

For the Chicken

  • 1 lb boneless skinless chicken breasts or about 2-3 medium chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano or Italian seasoning
  • salt and pepper to taste
  • 2 tbsp unsalted butter
  • 1 tablespoon olive oil
  • 8 oz baby Bella mushrooms
  • 1/4 cup onion minced
  • 3-4 cloves garlic minced
  • 1 1/2 cups heavy cream (or light cream, or half & half)
  • 1/4 cup freshly grated parmesan cheese
  • 2 tablespoons fresh herb of choice optional


  • Slice chicken breasts in half horizontally to make them thinner. Season both sides of chicken breasts with garlic powder, oregano, and a pinch of salt and pepper.
  • Heat butter and oil in over medium-high heat in a large heavy duty pan or cast iron skillet. Add chicken breasts to the pan and cook 5-6 minutes per side. Remove chicken from pan and set aside.
  • To the same pan, add the mushrooms and onion to the pan and saute for 2-3 minutes or until tender. Add the garlic and a pinch of salt & pepper; saute for 1 minute or until fragrant.
  • Reduce heat to low and Add the heavy cream, parmesan cheese, and herbs. Simmer for 1-2 minutes or until sauce begins to thicken. Taste and add more salt if needed. 
  • Return chicken along with its juices to the pan and cook for another 1-2 minutes. Serve with pasta, rice, salad, or veggies.
