I’m going to keep this short because I don’t want the best gluten free clafoutis recipe in the universe to be overwritten by my attempt at an intriguing opening (not to mention my appetite). If you’re looking for a delicious Gluten free Apple Desserts, you need to make this Raspberry Clafoutis. It’s a healthy after dinner treat that is sure to wow your friends and family.

This past weekend, I suddenly found myself craving clafoutis, the traditional French dessert that every French grandmother knows how to make.

One of those traditional desserts that defies categorization is clafoutis. Imagine a flan-Dutch baby pancake hybrid that is topped with fresh seasonal fruit. Warm, luscious fruit nestled on a base of smooth baked custard is a very enticing combination. It’s a straightforward, unassuming dessert, but it’s sure to please.

Clafoutis is a traditional French dish from the Limousin region that is thankfully also really simple to prepare. Similar to creating pancakes, all you need is some ripe fruit and a few simple ingredients for the batter.

Pears are in season right now, and their delicate flavor mixes so well with the almond and vanilla-flavored custard in this gluten-free clafoutis, but you could also use the more conventional cherries (even frozen work fine, just thaw and drain them first.)

Although historically versions made with anything other than cherries were known as flognarde rather than clafoutis (although you may still occasionally see that), the term clafoutis has since come to apply to all kinds, both sweet and savory, so that’s what I’m naming my own.

Whatever name you give it, the main appeal of this adorably rustic treat is how easy it is to prepare.

Blend or whisk your batter thoroughly, then quickly pour it over a mass of pears that have been thinly cut and place everything in the oven.

Although the outside will puff up and brown during baking, the interior will still be delicate and creamy. For brunch, you can serve it at room temperature, or even cold from the fridge the next morning for breakfast. You can serve it warm from the oven for dessert.

I adore the French dessert “clafoutis”! It’s really easy to make and always a hit because it tastes so good. For those who have never tried it, it is difficult to explain, but it is essentially a batter comprised of flour, eggs, milk, and sugar that is combined with some fruit. It may not sound particularly noteworthy, but trust me when I say it’s great!

Various fruits, like cherries, pears, peaches, or apples, can be used to produce clafoutis. Apple clafoutis is one of my favorites. It works well with somewhat tart cooking apples like Boskoop, Braeburn, and Bramley, just like with apple crumble. They gently melt during cooking, and I think the combination of the sweet vanilla batter and the somewhat tart apples is delicious.

I hope you take pleasure in it as much as we do.

Ingredients:

  • 60 g butter
  • 120 g brown sugar
  • 40 g rice flour
  • 40 g buckwheat flour
  • 1 teaspoon vanilla sugar 
  • 4 eggs
  • 300 ml milk (soja milk works fine if you are dairy free)
  • 4 cooking apples
  • 1 pinch of salt

Note: you can also just use 80 g gluten free flour mix – Doves farm self-raising white flour mix is perfect 

Method:

  • Use a little bit of butter or oil to grease an ovenproof dish.
  • Peel and core the apples, then cut them into small squares and put them in the dish.
  • Place the butter in a bowl and melt it (in the microwave or over a pot of boiling water).
  • Add the sugar, flours and vanilla sugar.  Mix well.
  • Add the eggs and milk and mix well again.  The batter is quite smooth and runny.
  • Pour the batter over the apples.
  • Place the dish in the oven and bake for approximately 50 minutes, at 200°C, until it is set in the middle.

You can eat the clafoutis straight away… or wait until it’s cooled down a little.  It keeps well and can be eaten cold too!

Raspberry Clafoutis

Ingredients

  • 2 teaspoons butter or as needed to butter the pan
  • 1/2 cup Bob’s Red Mill Gluten Free 1-to-1 Baking Flour see note if you are not gluten free
  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 3 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 cup milk
  • 1 teaspoon orange zest
  • 2 1/2 cups raspberries about 12 ounces
  • powdered sugar as needed for garnish

Instructions

  1. Set the oven at 400 F. A 9-inch pie tin should be buttered to avoid sticking.
  2. In a mixing dish, combine the flour, sugar, and salt. Blend thoroughly. Add the eggs, then whisk to combine. Orange zest and vanilla are whisked in. Little by little, whisk after each addition of milk to achieve smoothness.
  3. Pour the liquid into the pie pan with caution. Spread the raspberries out evenly in the liquid.
  4. Bake the clafoutis for 10 minutes at 400 degrees Fahrenheit, then reduce the heat to 350 degrees Fahrenheit and bake it for an additional 20 minutes, or until it has swelled up, the center is solid to the touch, and the outside edge has gone golden.
  5. To cool, set the pie pan on a rack. Cool to room temperature or just just warm. Just before serving, add powdered sugar as a garnish.

Recipe Notes

Note on flour substitutions: You can use Bob’s Red Mill Unbleached White All Purpose Flour if you don’t require the clafoutis to be gluten free.

What is a Clafoutis?

One of the specialties of France’s Limousin region is the French Clafoutis. It is a traditionally created with cherries light, set custard. However, I believe some clafoutis recipes use too much flour, creating a thick cake-like dessert that sticks to the roof of your mouth.

Try this gluten-free variation of the traditional recipe using ground pistachios or almonds; it’s a delightful way to enjoy a clafoutis before the cherries show up.

This recipe, which may also be made with apricots and mirabelle plums in the summer, is quite adaptable. See the recommended fruit pairings below. To ensure that all the flavors are at their peak, I do urge you to use fresh rather than frozen strawberries in this recipe.

What Can I do with a Lot of Strawberries?

It occurs frequently. Near the end of the morning, the vendors at our neighborhood French market in Saint-Germain-en-Laye, near Paris, frequently offer boxes of them for sale at a discount. Tell a Scot that there is a promotion and a deal, then! I adore using them into our favorite elegant strawberry desserts, like these rhubarb and strawberry crumbles with rose and white chocolate mousse, as well as this rhubarb compote, this jam, and other strawberry favorites.
