Green Chutney for Chaat is a recipe that originated in Eastern India. It is extremely simple, cheap and fun to make. It can be prepared in a matter of minutes. Green chutney goes perfectly with all Indian snacks especially Pani Puri, Samosa and Chaat variety snacks.

This green chutney recipe is versatile and most often used in Indian cuisine. This is refreshing, super delicious green chutney for chaat, sandwich, and snacks like samosa, pakora, aloo tikki, dahi vada, etc.

Green chutney is the most popular condiment in India that is made from fresh cilantro, mint, ginger, green chili and lemon juice. It is seasoned with chaat masala and black salt.

  • Cilantro (Coriander leaves): If the stems are tender then you can keep them. If the stems are tough and more fibrous then discard them and use only leaves. 
  • Mint leaves: Always use only leaves and discard the stems. The mint leaves stems make the chutney bitter.
  • Green chili: It adds a spicy taste. I have used the Indian chilies that I bought from the Indian grocery store. These are medium spicy chilies. You can use serrano chilies or thai chilies (if you want super spicy chutney). If you have jalapenos on hand then use that. Adjust the number of chilies depending on how spicy you like and what type of chili you’re using. 
  • Chaat masala and Black salt: these two add a nice zing and chatpata taste to the green chutney. Do not skip them.
  • Lime juice: You can use lemon juice too. Add the tang to the chutney and perk up the overall flavor. Also, it helps to retain the green color of the chutney.

💭Expert Tips

  • Adjust the number of green chilies as per your liking spice level.
  • Do not add too much water otherwise, chutney becomes runny and dilutes the flavors. So always start with little water and add more if needed.
  • Water quantity may vary depending on how much water is held on by leaves after washing/rinsing.

🥣 Storage Instructions

  • In the refrigerator, green chutney stays good for 3-4 days in an airtight container. You may notice a slight discoloration on the surface and that is normal. Just mix it and serve.
  • In the freezer, it stays good for up to 3 months. Freeze them in ice cube trays or silicone molds. Once frozen transfer them into the freezer-safe ziplock bag and store them in the freezer.
  • To thaw, remove the required amount in a bowl and keep it on the counter or refrigerator until defrosted. Stir really well until it comes together like a chutney. Finish the thawed green chutney within a day or two otherwise, it loses its flavor.

there are several variations to this simple hari chutney which varies with the proportion of coriander leaves, mint leaves and green chillies. in some recipes, you may find a strong presence of coriander leaves without much mint leaves. it may contain garlic cloves with some green chillies for spice. it is mainly used as sandwich spread for sandwich recipes or while preparing the kathi roll / frankie. the other variation of green chutney, contains strong presence of mint leaves which is also known as green mint chutney recipe. it is mainly used as taste enhancer for deep fried snacks. however this recipe contains ideal proportion of both and hence can be used for both purpose.

while there isn’t much complicated steps in this recipe, yet i would like to share few tips for green chutney recipe. firstly, always use fresh coriander leaves and mint leaves for better taste and colour. in addition try to add more leaves instead of coriander and mint stem for better colour. secondly, you can skip garlic if you do not prefer garlic smell. however the addition of garlic balance’s the strong smell of pudina. lastly, i have added lemon juice to increase the shelf life and for the sour taste. alternatively, vinegar can also be added for same purpose.

As I mentioned, the simple core elements of this chutney are two of my favorite green herbs – coriander (cilantro) leaves and mint leaves. To add extra flavor to the chutney, we also have lemon juice and a pinch of sugar.

All the ingredients go into a blender. Now, blend. Add a little water and blend again until you get a thick smooth paste. And done. Simple as that.

Green Chutney recipe is one of the most essential elements of chaat recipes. It has been used from years to enhance the taste of Indian street food and chaats. Green Chutney is a spicy savoury chutney which is prepared with Coriander leaves, Mint leaves and some spices. It is mostly accompanied with Chaat, Samosa, Dosa, Kabab etc. and as also sandwich spread too.

Green Chutney is also known as ‘Hari Chutney’ in India. The word ‘Green’ means ‘Hari’ and hence chutney is named so because of its colour. Green chutney recipe has different variations across different regions, cuisines etc. In few places, only Coriander leaves are used for green chutney whereas in few other places, this chutney is prepared with only mint leaves too. Different people use different proportions of Coriander leaves and Mint leaves for the chutney.

For the recipe of Green Chutney, many people also use Garlic for a pungent flavour. But I always prefer not to use Garlic in this chutney because the strong flavour of Garlic dominates the refreshing flavour of mint. So, I always avoid garlic in this preparation. To add the garlicy flavour to the chaat, I always prepare Red Chilli garlic Chutney separately. The Green Chutney recipe that I have shared today is a perfectly balanced condiment for any Indian Chaat recipe.

This Green chutney recipe is very quick and easy. It is a very simple recipe which requires minimal effort to be prepared. This spicy flavoured chutney is prepared with few handful ingredients which are easily available in the market.

I am a crazy fan of Indian snacks easy recipes and prefer to prepare them at home rather than buying them from outside. Especially Chaat is one among them. So, I frequently prepare this tempting chutney at home to accompany the evening snacks.

How to make Green Chutney?

To prepare the recipe for Green Chutney, first, I have plucked the Coriander and Mint leaves from their stems. Then I have washed them thoroughly, so that no dirt remains in the leaves. You can use the stems of coriander leaves too. But the usage of only the leaves give better flavour and colour to the chutney.

For the Green Chutney recipe, I have used half the amount of Mint leaves when compared to the amount of Coriander leaves. It gives a perfect balanced flavour to the chutney.

To flavour up the Hari chutney, I have used fresh Ginger, Chaat masala powder, roasted Cumin powder and freshly squeezed Lemon juice. Lemon juice gives a tangy taste to the chutney with a nice flavour.

For the Green Chutney recipe, I have added green Chillies too. It gives a refreshing flavour and a spicy kick to the chutney. If you have kids and want to avoid Chillies, then you can skip them without a second thought.

I have added all the ingredients into a jar of a blender and made a smooth paste. I have added 1 tablespoon of water for making the paste. Always try to use the least possible amount of water for the Green Chutney recipe.

  • 1 cup Coriander leaves (Dhaniya)
  • ½ cup Mint leaves (Pudina)
  • 1 inch Ginger, diced
  • 4 Green Chillies
  • 1 tablespoon Lemon juice, freshly squeezed
  • ¼ teaspoon Roasted Cumin powder
  • ½ teaspoon Chaat masala powder
  • ½ teaspoon Salt to taste


  1. Pluck the coriander leaves and mint leaves of their stem.
  2. Wash them thoroughly in running water and squeeze out the excess water.
  3. Transfer the leaves into the jar of a blender.
  4. Add green Chillies into the jar.
  5. Add diced Ginger into the jar of blender.
  6. Squeeze Lemon juice into it.
  7. Add Salt, Chaat masala powder and roasted Cumin powder one by one into the jar.
  8. Close the lid of the jar and run it for 1-2 minutes to a smooth paste. Add water if required. I have used 1 tablespoon of water.
  9. Transfer the content into an airtight container.

How to store Green Chutney?

After preparing the Green Chutney, transfer the content into an airtight container and you can refrigerate it for 6-7 days. The colour of the chutney may change to a darker shade because when the chutney comes in contact with air it gets oxidised and changes its colour. But the taste of the chutney will remain the same.

You can make the chutney frozen too and store it for couple of months. You can put the chutney in the icing tray and keep it in freezer. But according to me, the fresh Green Chutney tastes best.
