A popular seasonal dip or spread that is frequently offered throughout the Christmas season is hot pepper jelly, also referred to as green pepper jelly. Of course, you can buy it at the store or online, but I’ve discovered that virtually anyone can make it at home using this traditional method. It is simple to add your own touches to make the flavors truly your own.

Jalapeo peppers and green bell peppers should both be used in this recipe.

This recipe was originally taken from an ancient church cookbook that we have used for many years. When we lived in Clifford, Virginia, in the early 1970s, a quaint country church printed and marketed the recipe book.

One of the women in our congregation at the time claimed that this dish is basic and has been around since before the Great Depression. In that region of the nation, it was transferred from one home cook to another.

This recipe and others like it have been used by my wife and me throughout the years, and the result is a wonderful, festive seasonal treat. This jelly was created for consumption and gift-giving throughout the Christmas season.

Therefore, try this technique to preserve them before they go bad if your garden is producing an excess of those excellent fresh green bell peppers and jalapeo peppers that you can’t use as quickly as they are ripening or if they are simply on sale at your supermarket for a great price.

Ingredients

  • 3 cups green peppers, finely chopped
  • 1 cup jalapeño peppers, seeds removed and finely chopped
  • 3 cups vinegar
  • 5 pounds sugar
  • 1/4 tsp. salt
  • Food coloring, green or red, as desired
  • 1 bottle Certo Gelatin, about 2 packets

Instructions

  1. Place the jalapeño peppers and vinegar into a blender and LIQUIFY for 3 minutes.
  2. Place the chopped green peppers into the blender and liquify for 3 more minutes.
  3. Place the liquified mixture into a large pot and add the sugar and salt.
  4. Bring the mixture to a boil, stirring constantly.
  5. Once boiling add the Certo.
  6. Lower the heat, and cook for 1-2-minutes, stirring constantly.
  7. Remove from the heat and allow to sit for about 5 minutes.
  8. Remove the foam from the top of the mixture.
  9. Pour the mixture into the sterilized jars.
  10. Then stir in whatever food coloring you want into each jar. Seal the jars, and allow to cool. As the mixture cools, it will shrink and if your seal is good, the top will audibly “pop.”
  11. You can add paraffin wax on the top of the mixture, before sealing, as with other jelly recipes.

Notes for the Chef

  • This dish is relatively moderate because it only calls for 1 cup of jalapeo peppers, with the seeds and ribs removed. When making the jelly, the spicy flavor can be slightly increased by adding a few more chopped hot peppers, or you can just leave a few of the seeds and ribs in as tiny flavor surprises.
  • If you don’t want to use food coloring, the mixture’s natural light greenish-yellow tint is excellent. Because we are giving them as gifts for the holidays, we added red and green food coloring to ours.
  • Even I apply the foam. When I remove it with a spoon from the mixture, I pour it into a sizable water glass and put it in the refrigerator. After that, eating it sometimes as a snack or with a little cream cheese on crackers is a delightful treat for the following week or two. Why squander it?
  • And occasionally, we’ve preserved this hot jelly in tiny ornamental jars and given it to friends as a seasonal gift basket item. This type of basket filled with tasty prepared foods makes a wonderful present for those who do not enjoy cooking as much as we do.

Who doesn’t adore an authentic recipe for pepper jelly? Nicely put! Freshly made pepper jelly is the best thing ever. So delicious, so sweet, and so hot. Mmmmmmm. Although there are many pepper jelly recipes available online, not all of them are of high quality. I’ve put in the time and effort necessary to develop my own pepper jelly recipe, and it always turns out perfectly. Pepper jelly recipes aren’t very flexible, so utilize this one until you feel confident making changes to suit your preferences. Pepper jelly can be used as a ham glaze, a grilled meats condiment, or an appetizer.

Our go-to pepper jelly recipe is sweet and spicy, and it tastes great when spooned over cream cheese and accompanied by crackers for dipping. You may modify the spice to your preference.

Hot Pepper Jelly is the most well-liked addition to our charcuterie boards, and my husband is the one who first hooked me on it. Ingredients Needed:

  • Bell Peppers: Use a combination of colors, like red and green.
  • Jalapeños (about 10): remove seeds and veins from half for mild jelly, or leave them all in, for hot jelly.
  • Sugar: I use significantly less sugar than most recipes do, and I find the jelly perfectly sweet. This has worked for me using Certo brand of fruit pectin. Other brands of pectin may require more sugar to help them set up, or you can use a no-sugar added pectin and follow the recipe inside the box. Do not use sugar substitutes (like Splenda) or it wont set up properly.
  • Pectin: I use liquid fruit pectin. Here is a recipe that uses powdered fruit pectin.
  • Vinegar: is used to help the jelly set and the acid in the vinegar helps make it safe for canning and long term storing. White or apple cider are my favorite varieties for jalapeño jelly.
  • Lime
  • Salt

How to make Pepper Jelly:

Chop peppers: Finely chop bell peppers then use paper towels to squeeze out excess liquid. Measure out 1 ½ cups of diced bell pepper. Dice jalapeños and squeeze liquid out (make sure to wear gloves).

Combine diced peppers, sugar, vinegar, lime juice, and salt in a large, deep pot. Bring to a boil, reduce heat, but maintain boil for 10 minutes.

Stir in liquid pectin and boil for another minute. Remove from heat and cool for 5 minutes. Give a good stir and pour jelly into containers. Apply lids securely.

Cool at room temperature for 24 hours, then store in refrigerator for up to 10 days. Read on for canning and freezing instructions.

Canning and Freezing Instructions:

To Can: Pour jelly into sterilized jars. Wipe the rims of the jars clean and secure with rings and new lids that have been washed in warm soapy water. Process in a water bath canner for 10 minutes (or longer for high altitude—see notes below). Allow to sit at room temperature for 24 hours, then store in a cool dry place for 6-10 months.

To Freeze: Pour jelly into containers and apply lids securely. Store in refrigerator for 10 days, or freeze for up to 4 months.

Recipe Variations:

  • Fruit Pepper Jelly: Replace bell peppers with chopped cranberries, strawberries, or raspberries (blot out excess moisture). Or, add a little lemon zest to the jelly for a lemon flavor.
  • Steam Canner: would work in place of a water bath canner. Processing time should be the same (double check to account for elevation). 
  • No Sugar Jalapeño Jelly: Try the Sure Jell recipe, using their special no sugar pectin.

It took a tremendous amount of work to boil up hundreds of jars of preserves every week, especially as the temperature outdoors went up to 40°C (104°F! ), but it was an amazing joy and offered me a lot of practice in canning.

SO WHERE DID THE SPICY RED PEPPER JELLY COME IN?

One of my most well-liked recipes, it was a weekly guarantee to sell out. But I had to go outside the box since in the United States, pepper jelly is frequently made with commercial pectin to set it, but in Cyprus, pectin is impossible to come by.

CAN YOU MAKE RED PEPPER JELLY WITHOUT PECTIN?

Yes! To set red pepper jelly, you don’t need to purchase pectin. To assist the jelly set naturally, the solution is to add some natural pectin in the form of pectin-rich granny smith apples to the jelly. As a result, the jelly has a nice loose set that is perfect for use as a sauce or a dip. This method of cooking is so simple and all-natural and requires no special ingredients.

IS THIS RED PEPPER JELLY VERY SPICY?

Since mild chillies are what give my Spicy Red Pepper Jelly its spicy flavor, I like to add a few of them. To your preference, the heat can be changed. Use jalapenos for a milder heat, and add a few habanero or birds eye chillies for a powerful kick of spice. Try different things and see what you prefer.

The type of chilli peppers you add is up to you. For a mild heat go for jalapeños, if you like it extra hot use birds-eye or Trinidad Scorpions!

RED PEPPER JELLY IS FOR MORE THAN JUST DIPS

While pepper jelly is frequently served as a party dip simply with cream cheese, my Spicy Red Pepper Jelly also makes a great sauce for a quick stir-fried chicken or pork. CAN I USE DRIED CHILLIES IN RED PEPPER JELLY?

Yes, you can! Just add the dried chillies to taste while the jelly is cooking.

CAN I USE OTHER COLOURED PEPPERS TO MAKE PEPPER JELLY?

Yes! Red, green or yellow peppers are all fine. Green bell peppers and green jalapeños make for an especially delicious jelly.

DO I HAVE TO USE APPLE IN RED PEPPER JELLY?

The purpose of the apple in this jelly is to add some natural pectin to help the jelly set. If you leave it out you will need to use another type of setting agent, or boil the peppers down until they are very thick – Which can affect the texture. Make sure to use a tart apple variety, granny smith apples are ideal.

CAN I MAKE A DOUBLE BATCH OF RED PEPPER JELLY?

Yes, though the larger batch you make the longer it will take to cook down, which can alter the flavour. When I am making larger batches of Red Pepper Jelly I use multiple saucepans so the cooking time remains the same.

YOU CAN MAKE THIS JELLY AS SPICY AS YOU LIKE, OR EVEN ADD EXTRA FLAVOURS LIKE GINGER OR LIME TO GIVE IT YOUR OWN TWIST.

WHAT TO DO IF JELLY DOESN’T SET

First of all, keep your cool. Although it does need washing your jars again, which I’ll admit is a bother, it is completely possible to re-cook jelly. Use a jam thermometer if you’re having difficulties getting your jelly to set. Pour the mixture into clean jars and reboil until it reaches 104.5°C / 220°F (this will happen quickly as most of the water has already been boiled out!).

Sweet, tangy and delicious, Spicy Red Pepper Jelly is the perfect condiment to serve with cream cheese and crackers. It’s also delicious as a sauce for chicken or pork. This recipe is made NO added commercial pectin.

INGREDIENTS

  • 2 red bell peppers / capsicums (or 1 red, 1 yellow)
  • 2-3 chilli peppers, to taste
  • 1 granny smith apple, cored and grated
  • 400g sugar (approx. 2 cups)
  • 250ml (1 cup) white vinegar

INSTRUCTIONS

  1. DICE THE PEPPERS: Finely dice the peppers and chilli. It is better to use a food processor, as this helps to release the juices, but you can do this by hand if you like. Grate the apple, then put the peppers and the apple into a large, heavy-based saucepan.
  2. ADD SUGAR AND VINEGAR: Stir through the sugar and vinegar, then heat gently, stirring until the sugar has dissolved. Bring the mixture to a rolling simmer, then simmer for 20 minutes until the mixture has reduced and begun to thicken.
  3. PREPARE YOUR JARS: Meanwhile, heat the oven to 120°C / 250°F / Gas ½ and wash your jars in warm soapy water. Place the jars in a baking dish in the oven to sterilise. Place the lids in a heatproof bowl and pour over boiling water.
  4. JAR AND COOL: After the jelly has reduced, allow to cool for 5 minutes before transferring to a heatproof jug. Pour into the hot, sterilised jars. If you find the pieces of pepper are floating to the top of the jar, invert the jars every 10 minutes until set.
  5. SETTING TIME: The jelly will be still quite liquid while hot. Allow to set and gel overnight. Store in a cool dry place and don’t forget to label the jars.
