The sweet and salty balance in this easy chicken marinade takes my Honey Soy Chicken Thighs up a notch! As a bonus, it’s easy to put together and uses simple ingredients. This is what you need:

  • Soy sauce
  • Honey
  • Lime juice 
  • Garlic 
  • Ginger
  • Oil
  • Sriracha
  • Salt + white pepper
  • Cilantro

How to marinate chicken thighs

Step 1: Whisk all of the marinade ingredients together in a small bowl.

Step 2: Pour 3/4 cup of the marinade into a sealed ziploc bag or container. Add the chicken thighs and leave them to marinate in the fridge for 3 to 6 hours, or over night.

How to grill chicken thighs

Step 1: Now, add the marinated chicken thighs onto a hot grill and grill until the chicken is cooked through, flipping once, also grill any of your favorite veggies like zucchini, bell peppers and broccoli.

Step 2: While the chicken is cooking, make the slurry by combining the reserved marinade with cornstarch. Microwave from 30 seconds to one minute, then brush it over the grilled chicken.

Step 3: Finally, serve the grilled chicken with more marinade if you’d like and chopped cilantro and grilled veggies. Enjoy!

Can I bake the chicken instead?

Of course! Once the chicken thighs are done marinating, arrange them in a baking dish and pour the reserved marinade slurry overtop. Bake in a 425ºF oven, flipping each thigh at least twice throughout. After 20 to 25 minutes, set the oven to broil for 5 minutes to slightly char the outside.

What goes well with honey soy chicken thighs?

Marinated chicken thighs pair well with more Asian-inspired flavors and side dishes. Place the chicken over a bed of fried rice, noodles (or zoodles for a lighter option), coconut rice, mashed potatoes, or your favorite grain. This recipe uses simple ingredients but has lots of flavors! Whether you’re making this recipe for a summer barbecue or weeknight dinners, the whole family will love it and it will become your new favorite grilled recipe.


All the ingredients needed.


  • Olive oil– I like to use extra virgin
  • Soy sauce-regular or low sodium soy sauce will work.
  • Chicken thighs– I use bone-in and skin on thighs but you can certainly use boneless skinless thigh they will just cook much faster.
  • Brown sugar-Either light or dark will work.
  • Thyme– both dried or fresh will work
  • Red pepper flakes– this is optional but adds a great level of flavor.

  • Step 1-Add all the ingredients to a small bowl or large ziplock freezer bag and mix until combined.
  • Step 2-Add the chicken thighs to a large bowl or large ziplock bag and pour the marinade over the top and mix around until well coated.

  • Step 3– Place chicken on a hot grill on medium-high heat.
  • Step 4-Grill until cooked through and using a meat thermometer check that the internal temperature reaches 164 degrees and juices run clear.

  • First remove the lemon zest, then squeeze the lemon to obtain the fresh lemon juice.
  • It should marinade for at least 24 hours to fully absorb the amazing taste.

  • Red pepper flakes are optional but significantly enhance the flavor.

Can I use breasts or drumsticks?

Absolutely, just note if you choose boneless skinless chicken breasts or boneless thighs it will take less time than bone-in. Chicken wings would even be delicious!

Can I bake this recipe?

Of course! Place the marinated chicken thighs in a 9×13 baking dish or baking sheet bake at 400 degrees for 25-30 minutes or until internal temperature reaches 165 degrees. You can switch the oven to broil for the last 3-5 minutes to caramelize the skin a bit.

How to store leftovers

Store leftovers in an airtight container in the refrigerator for up to 4 days.
