ITALIAN SAUSAGE SOUP WITH ORZO

Italian sausage soup is the ultimate comfort food! It’s a broth-based, one-pot, savory soup that requires only a few basic cooking steps to go from “What’s for dinner?” to “Omg that was crazydelicious!” The sausage and tomatoes make it irresistibly sweet and savory, while the orzo pasta adds another touch of comfort. HOW TO MAKE ITALIAN SAUSAGE SOUP ON THE STOVE

  1. Heat olive oil in a 4-quart soup pot.
  2. Add sausage to the pot, breaking it into pieces, and brown it; remove sausage and set aside, drain off excess fat, if desired.
  3. Add vegetables to the same pot and saute until tender.
  4. Add dry orzo pasta, broth, tomatoes, seasonings, and browned sausage to pot.
  5. Bring all to a boil, then reduce heat to medium-low and simmer until orzo pasta is cooked to your liking (10-15 minutes). Allow more time for whole wheat orzo. Serve warm.

  1. Heat olive oil in the Instant Pot and add sausage, onion, garlic, and celery. Sauté until tender, stirring as needed.
  2. Add uncooked orzo, chicken broth, and seasonings.
  3. Select MANUAL or PRESSURE COOK on high pressure for 1 minute followed by a 10-minute natural pressure release.
  4. Serve warm with French bread or crostini … and devour!

WHAT KIND OF SAUSAGE CAN I USE FOR ITALIAN SAUSAGE SOUP?

You can use Italian pork sausage like this, or sausage links [with casings removed]. Hot Italian sausage will spice things up! Use turkey sausage or chicken sausage for a leaner option. **Note: Product links in this paragraph are not affiliate links. I just love the product.

CAN I SUBSTITUTE THE ORZO PASTA WITH ANOTHER PASTA?

Definitely! I’m a fan of whole wheat orzo in this recipe for added nutrients and fiber, but it’s not always available. You can use classic orzo OR substitute any other pasta of your choosing. 

CAN I SUBSTITUTE THE CHICKEN BROTH?

Yep! You can use vegetable broth, bone broth, or water if you prefer.

CAN I USE OTHER CANNED OR FRESH TOMATOES IN ITALIAN SAUSAGE SOUP?

Heck ya! You can use canned crushed tomatoes, canned whole peeled tomatoes, or fresh tomatoes for this Italian soup. Please note, fresh tomatoes will take longer to achieve the same consistency as canned tomatoes. So, you can end up with overcooked orzo.

Can I use fresh herbs in place of Italian seasoning?

I use a standard Italian seasoning for this Italian soup recipe. If you want to use fresh herbs, increase the measurement by 2 or 3 times the dry amount.

ITALIAN SOUP ADD-IN OPTIONS

LEAFY GREENS – Kale, spinach, or chard would make this soup even better than it already is. You’d only be upping the nutritional value by doing so. If you decide to add greens, just toss them in near the very end of the cooking cycle and they’ll cook to perfection.

TOPPINGS – You could also garnish this soup with basil, or croutons, or shaved parmesan cheese. Of course, you might be adding calories, but who doesn’t love bread, cheese, and soup?!

OTHER VEGETABLES – We love to add zucchini to this recipe. Just dice it up into 1/2″ cubes and add it right before you close the lid on the Instant Pot or before you simmer on the stove.

Italian Sausage Soup with Orzo

Italian Sausage Soup is a 30-minute soup recipe with Italian sausage and pantry staples. Made for Instant Pot or stove, this sausage soup is a breeze for beginners and satisfies the whole family! Serve it with croutons or French bread and they’ll go wild!

INGREDIENTS

  • 1/2 lb. Italian Sausage mild or hot
  • 1 Tbsp Olive Oil optional
  • 1/2 Red Onion diced
  • 3 cloves Garlic finely chopped
  • 2 stalks Celery diced
  • 1/2 cup uncooked Orzo Pasta or other pasta
  • 6 cups Chicken Broth
  • 1 15-oz can Diced Tomatoes keep juice
  • 1 tsp Dried Italian Seasoning
  • 1 tsp Kosher Salt
  • Black Pepper to taste

RECIPE INSTRUCTIONS

Italian Sausage Soup [Instant Pot Instructions]

  • Select “Sauté” on the Instant Pot and add OLIVE OIL. When the display reads “Hot”, add SAUSAGE, ONION, CELERY, and GARLIC. Saute until tender, stirring as needed. Drain some of the fat, if desired.
  • To the cooker, add UNCOOKED PASTA, CHICKEN BROTH, DICED TOMATOES (with juice), ITALIAN SEASONING; SALT, and PEPPER.
  • Press the “Cancel” function on the Instant Pot. Secure lid and turn pressure release valve to the “Sealing” position.
  • Select “Manual” or “Pressure Cook” for 1 minute on HIGH pressure (yes, you heard that right…1 min) or 2 min if using thicker pasta like macaroni, bow tie, or penne.
  • When the cycle is complete, carefully turn pressure release valve to “venting” for a Quick Pressure Release (QPR) to depressurize the cooker. If you use a thicker pasta, allow 10 min natural pressure release.

    CAUTION: During QPR, the steam shoots upward from the pressure valve. Always stand back from the cooker during this process and use an oven mitt for hand protection.

  • Allow the cooker to fully release all of the pressure until the ‘float valve’ drops before attempting to open the lid. This process can take several minutes.The cooker automatically goes into “Keep Warm” mode until you shut it off.

Italian Sausage Soup [Stove Instructions]

  • Heat OLIVE OIL in a 4-quart soup pot on medium-high.
  • Add SAUSAGE and cook until browned, stirring as needed.
  • Transfer to a plate and drain grease from pot, if needed.
  • To the pot, add ONION, GARLIC, and CELERY; sauté until tender, stirring as needed (3-4 min).
  • Add uncooked ORZO; sauté until toasted (about 2-3 min); stirring as needed.
  • Add CHICKEN BROTH, DICED TOMATOES (with juice), ITALIAN SEASONING, SALT, PEPPER, and BROWNED SAUSAGE.
  • Bring soup just to boil; then reduce heat to medium-low and simmer until orzo is cooked through (10-15 min).

Serving and Storage Instructions

  • Serve Italian Sausage Soup warm garnished with (optional) croutons or sliced French bread.
  • Store in an airtight container up to 5 days in the refrigerator and up to 30 days in the freezer.

RECIPE NOTES

You may notice that the orzo pasta naturally continues to absorb liquid even after the soup has cooled. During reheat, you can add some more broth or plain water to get it back to a brothier consistency.
