Tip: After an hour of baking, test with an instant-read thermometer. The chicken should be at least at 165°F internally. If it’s over that, it’s ok. It’ll still be juicy!

Simply peel the skins off if you don’t want them on after the chicken has slightly cooled but before adding sauce. Place the chicken on the broiler pan approximately six inches from the fire. Once dark spots start to emerge, flip the chicken over and continue to broil the other side until dark spots appear. Make sure the chicken is well heated by tasting some. Total time should be around 8 to 12 minutes (4-6 minutes per side).
