What Is The Best Banana Bread Recipe?
To make the very best banana bread that comes out super moist, it is important to start out with those ugly, overripe bananas! In the picture below you can see the bananas that I used for this recipe post. These bananas are just ripe enough to work with. They need to be dark yellow with lots of browning. You can use bananas that are even darker than this! The riper the bananas, the more moist your bread will be and the more banana flavor it will have!
How Do You Keep Banana Bread Moist?
The best way to keep banana bread moist for days is to wrap it tightly! Once your bread is baked and cooled, I recommend wrapping tightly in plastic wrap. Then, take a second step and store it in a large zip-top freezer bag or a plastic container with a tight-fitting lid. Stored this way on the counter, your bread will last up to 3 days. If you’d like, you can store it wrapped in the refrigerator for up to 6 days.

How to Make Banana Bread:
This recipe makes one loaf of banana bread. The first step is to preheat your oven and prepare a loaf pan with non-stick cooking spray or grease with butter.
- Next, take a large bowl as seen below and whisk together your dry ingredients. This will include flour, sugar, baking soda, salt, and cinnamon.
- In a separate bowl melt your butter in the microwave, then add in the bananas and mash until mostly smooth.
- Add your eggs and vanilla to your mashed banana mixer and use your fork to combine everything really well, until you no longer see any streaks of eggs.
- Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined. Don’t overmix.
- Now, you are ready to pour your batter into your prepared pan and bake!
**NOTE: You can also mash your bananas with the melted butter in your stand mixer if preferred.

Can you Freeze Banana Bread?
Yes! If you’d like to freeze this then allow it to cool completely at room temperature on a plate or wire rack once it comes out of the oven. Once cool, wrap the bread in plastic wrap, then wrap in foil. Freeze the bread for up to 2 months for the best results.
To thaw the bread, remove it from the freezer and allow it to come to room temperature, covered on the counter. This will take about 24 hours.

Ingredients
- ▢1 Stick (½ Cup) Butter
- ▢3 Large Ripe Bananas
- ▢2 Large Eggs
- ▢1 teaspoon Vanilla Extract
- ▢2 Cups All Purpose Flour
- ▢1 Cup Granulated Sugar
- ▢1 teaspoon Baking Soda
- ▢½ teaspoon salt
- ▢½ teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray or grease with butter and set aside.
- Add the stick of butter to a large bowl and microwave for 1 minute, or until melted.
- Add the bananas to the same bowl and mash with a fork.
- Add the vanilla extract and egg to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.
- In a second large bowl whisk together the flour, sugar, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes until a toothpick inserted in the center of the bread comes out clean.

Notes
NOTE ON SUBSTITUTIONS: I’ve had a couple of questions about substituting the vanilla extract in this recipe. As always the recipe is best as written! I don’t recommend using almond extract, because the flavors just don’t seem to pair well and the almond overtakes the banana. You CAN add banana extract if you’d like, but, keep in mind it will have more of an artificial banana flavor. NOTES ON STORING THIS BREAD: To keep your bread moist, allow it to cool completely then wrap it in a layer of plastic wrap and then store it in a freezer-size zip-top bag, or a large plastic container with a tight-fitting lid. It will last on the counter for up to 3 days, or in the refrigerator for up to 6 days. Alternatively, you can wrap and freeze for up to 2 months. NOTE ON LOAF PAN: For this recipe, you will use a standard size of about 9×5 inch loaf pan for one loaf of bread. Alternatively, you can use a standard-sized muffin tin and bake for around 25-30 minutes. NOTE ON ADDITIONS: You can add 1 Cup of chopped nuts or chocolate chips to the batter before baking if desired.

I adapted this recipe from my 2 banana bread recipes. Since there are 3 bananas in this one I just simply decreased the oil and it worked out perfectly.
This recipe actually yields a tender and moist banana bread because compared to other recipes this one has more wet ingredients that don’t include milk or water that stretches the batter thin and also less flour.

3 Banana Bread Recipe Ingredients

- 3 overripe bananas, mashed
- 3/4 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
These are all the ingredients you need. Nothing fancy or special. Just baking staples.
As you can see this recipe is completely dairy-free. It’s without butter and milk but you won’t miss either of them.
There’s just a touch of cinnamon. You can add more or omit it completely depending on your personal preference. Feel free to add nuts as well.
How ripe should Bananas be for Banana Bread?
The best bananas for banana bread are overripe bananas that are speckled and half black or dark brown.
Besides the salt, vanilla, and spices, bananas are the main contributor to flavor in a banana loaf. So if you want your loaf to come out great every time, use overripe bananas.
How to quickly ripen Bananas for Banana Bread
- Ripening bananas in the oven – Place the unpeeled bananas spaced apart on a baking sheet lined with foil or parchment paper and bake at 350 degrees F for 15 – 20 minutes until black or dark brown on the outside and soft to the touch. Allow them to cool before using.
- Ripening bananas in the microwave – Using a fork, poke straight through the banana peel multiple times on all sides to allow the heat to easily penetrate then microwave for 30 seconds at a time, checking each time for doneness. This can take up to a couple of minutes depending on how green the bananas were, to begin with. The bananas are done when they have the soft texture of a ripe banana. Cool before using.
- Ripening bananas in a paper bag – Place the bananas in a loosely closed paper bag to help trap the ethylene gas (that is responsible for ripening) to help speed up the process. Check the bag once a day and remove the bananas when they have reached your desired ripeness.

- Preheat oven to 350°F.
- In a large bowl combine bananas, granulated sugar, baking soda, cinnamon, and salt.
- Beat in the oil, eggs, and vanilla extract.
- Add the flour and mix until fully incorporated.
- Prep the baking pan.
- Pour the batter into the baking pan.
- Bake for 30 minutes, remove from the oven, and cover loosely with foil, then continue to bake for 15 – 20 minutes until a toothpick inserted comes out clean or mostly clean.
- Cool in pan for 10 minutes then removes to cool completely.

Banana Loaf
A banana tea time treat.
Ingredients
- 75g butter, softened
- 100g caster sugar
- 2 large eggs
- 3 medium ripe bananas
- A few drops of vanilla extract
- 200g plain flour
- 2 heaped tsp baking powder
- 100g mixed walnut pieces
- 900g loaf tin, lightly greased and lined
Method
- STEP 1 Preheat the oven to 180c/350f gas mark 4, then cream together the butter and sugar until fluffy before beating in the eggs.
- STEP 2 Peel and mash the bananas with a fork. Beat the mash into the mixture, adding a few drops of vanilla extract. Sieve the flour and baking powder, and fold them into the mixture before adding the nuts.
- STEP 3 Spoon the mixture into the tin and smooth the top. Bake for 40-50 minutes until the loaf has risen and is golden. Cool the loaf for 10 minutes then turn it out and cool it on a wire rack. Slice and serve.
