I love strawberries. In fact, I eat them year round. Strawberries make me happy, and sometimes I forget that there’s a season for every fruit. The cold sound of strawberry cold foam is like an iced coffee treat during the summer but actually refreshing come fall and winter.

What goes together better than strawberries and matcha? Katie shows us how to make this viral TikTok drink that uses a copycat version of Starbucks strawberry açaí refresher mixed with creamy coconut milk and finished with a generous dollop of matcha vanilla cold foam.

Ingredients

for 1 serving

MATCHA VANILLA COLD FOAM

  • ½ cup whole milk(120 mL)
  • ½ cup heavy cream(120 mL)
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon matcha powder

PINK DRINK

  • 1 cup Tasty’s Strawberry Açai Refresher(240 mL)
  • ½ cup full fat canned coconut milk(120 mL)
  • 2 tablespoons freeze dried strawberries
  • 1 ½ cups ice(210 g)

Preparation

  1. Make the matcha vanilla cold foam: In a medium bowl, combine the milk, heavy cream, sugar, vanilla, and matcha. Blend with an immersion blender until thick and foamy, about 3 minutes.
  2. Make the pink drink: In a large glass, stir together the strawberry açaí refresher and coconut milk. Add the freeze-dried strawberries and ice and top with the matcha vanilla cold foam.
  3. Enjoy!

STARBUCKS STRAWBERRY ICED MOCHA

Strawberry Iced Mocha is a customized Starbucks Iced Mocha and it’s considered a secret menu drink since it’s not on the official menu.

This drink is an Iced Mocha with strawberry cold foam. The bottom is the Iced Mocha and the top is the strawberry cold foam.

Starbucks baristas aren’t trained to make secret menu drinks so don’t order a secret menu drink by name. Instead, give them the recipe (ingredients and any specific instructions).

You’ll have to order this drink in person since there isn’t a way to request strawberry cold foam on the app.

HOW IT TASTES

It’s rich, creamy, and so good!

The first sip is all strawberry cold foam and it’s so decadent and fruity. Then the next few sips are with the Ice Mocha, which is made using a bittersweet chocolate sauce, so you start tasting the dark chocolate mixed with the flavors of strawberries and cream.

It’s like having strawberry-cream covered chocolate rather than a chocolate-covered strawberry.

  • Base drink: Iced Mocha
    Secret menu items start with a standard Starbucks drink, and this one is an Iced Mocha. It’s an iced drink made with milk, mocha sauce, espresso, and topped with whipped cream.
  • Customizations: Add vanilla sweet cream cold foam that’s blended with strawberry puree
    The strawberry cold foam will replace the usual whipped cream that’s on a regular Iced Mocha. This drink needs to be ordered in person since it’s the only way to get the strawberry puree blended into the vanilla sweet cream cold foam.

DRINK COST

A grande size of the Strawberry Iced Mocha costs $4.95 plus tax. The price varies depending on which Starbucks you buy the drink.

It was $4.95 for the Iced Mocha, $1.25 for the vanilla sweet cream cold foam, and $1.00 for the strawberry puree.

DRINK SIZES

This drink comes in all the sizes that the Iced Mocha comes in since that’s the base drink. You can get this in a tall, grande, or venti.

Tip your barista if you can! Secret menu drinks take more time to make and your barista would definitely appreciated it!

Yes, almost all customized drinks cost more than the base drink because of the additions. For example, strawberry cold foam will cost $2.25 extra on top of the drink.

Does this drink have caffeine?

Yes. The Iced Mocha has caffeine from the espresso and mocha sauce. A grande iced mocha has 175 mg of caffeine, and for comparison, the same sized iced coffee has 165 mg and cold brew has 205 mg. If you want to reduce the amount of caffeine, you can customize the espresso shot(s) in this drink for 1/2 decaf or fully decaf.

Can I order this all year?

As with any customized drink, as long as the ingredients are available (iced mocha, vanilla sweet cream cold foam, and strawberry puree), you can order it year round. Just keep in mind that with any customized drink, you will need to know what’s included so you can tell the barista how to make it. Starbucks baristas are not trained on how to make secret menu drinks.

Are new drinks added to the secret menu?

Yes! There’s no secret menu available at Starbucks but customers are always coming up with new modifications and fun combinations. We’ve noticed within the past decade matcha has taken coffee shops in the US by storm, and has been a trend that has seemed to stick around for quite some time!!

Matcha is one of our favorite beverages and for sure is an acquired taste for many. Matcha is traditionally an east Asian beverage made from matcha green tea leaf powder that is packed with antioxidants. It provides similar amounts of caffeine as coffee without the jitters and has a longer lasting effect.

What is Matcha?

Matcha originated in Japan, and has since then become quite a phenomenon around the world. Matcha powder is made from finely ground tea leaves. It provides an energy boost that is similar to one coffee gives you, but it won’t make you jittery.

What does Matcha taste like?

Matcha can be an acquired taste to people who have never tried it before. It’s compared to a dark chocolate or red wine in terms of coming off strong on your tongue. It’s more bitter and earthy in taste.

What’s in the Iced Matcha Latte?

Matcha powder: This is made from finely ground green tea leaves. This is the main ingredient in this recipe and what makes this latte matcha flavored. We use the matcha powder linked above. It’s a bestseller on Amazon and is a great quality of matcha.

Alternative Milk: We prefer using almond milk or oat milk for this recipe. Feel free to use whole milk or 2% milk if you would like!

Maple syrup: The maple syrup gives the latte and the sweet cream a rich, sweet flavor.

Recipe Notes:

Getting the consistency of the cold foam is super important for this recipe to turn out perfect! Heavy whipping cream will work best. If you do not have heavy whipping cream, whole milk or a milk alternative such as almond milk will work well too. I used almond milk in this recipe and the consistency was similar!!

Having an electric milk frother is probably essential to achieve the desired consistency. I have tried this with an electric mixer and whisk attachment and can’t seem to get that signature sweet cold foam texture that Starbucks in known for. 

What is a Matcha Whisk and do I have to use one?  It’s a bamboo whisk, that is designed for making matcha beverages. It is probably the most effective way to break down matcha powder and allow for oxygenation to occur to release the flavors.

A normal whisk may work okay, if that is all you have, but may effect the flavor of the matcha- the bamboo whisk does not leave a flavor to the matcha.

INGREDIENTS  

Matcha Latte

  • 1 tsp matcha green tea powder
  • ¼ cup warm water (warm water needed to break down and activate matcha when whisked)
  • 1 cup almond milk (milk of choice)
  • 1 tbsp maple syrup
  • 1 cup ice

Strawberry Cold Foam

  • 1/2 cup strawberries, washed (for puree- you will only use 1 Tbsp of puree for one drink)
  • ⅓ cup almond milk/heavy whipping cream/milk *
  • ½ tbsp maple syrup
  • 1 tsp vanilla

INSTRUCTIONS 

Make your matcha:

  • Scoop matcha powder into a small bowl. Heat water in tea kettle until hot.
  • Pour hot water into bowl with matcha. Whisk to break down matcha until fine bubbles form on top. Add maple syrup and gently whisk in.
  • Add matcha mixture, ice, and milk to drinking glass. Stir to incorporate matcha into milk.

Strawberry Cold Foam

  • Wash and hull strawberries. Put berries in a food processor or high powered blender and blend until smooth purée formed. To remove the seeds, press through a thin sieve.
  • Add heavy cream/milk/milk alternative, vanilla, maple syrup to a cup or small bowl. Using the electric milk frother, froth until thick desired consistency is formed. It should be an airy, cloudy foam consistency.
  • Once frothed, add 1 Tbsp strawberry puree, and whisk with electric frother to incorporate strawberry into puree.
  • Pour strawberry cold foam on top of iced matcha. Sip and enjoy.

NOTES

INGREDIENTS

  • 2 pumps of Sugar Free Strawberry Syrup
  • 2 pumps of Sugar Free Mocha Syrup
  • Black Cold Brew Coffee On Tap
  • 1/4 cup of Skim Milk
  • Ice

DIRECTIONS

  • Pour your Black Cold Brew Coffee On Tap in a glass over ice and add your two pumps of Sugar Free Mocha Syrup. Stir to combine.
  • In a separate glass, small pitcher, or jar – pour 1/4 cup of skim milk. Then add 2 pumps of Sugar Free Strawberry Syrup. Take a frother and froth milk for about 20 seconds or until foamy. If you do not have a frother, this process can be done by hand with a whisk but will take longer.
  • For our vegans, you can still create cold foam to enjoy! Just substitute Oat Milk for Skim Milk in the above step.
  • Top the cold brew you prepared in a glass with your homemade strawberry cold foam to put the finishing touch on your strawberry cold brew creation!
