I am now starting to get into strawberry mode. And since the season has just started here in Italy, I knew I had to make a batch of Strawberry Cookies again

I really hope you are not sick of strawberries yet, because I still have a couple of recipe waiting in the wings!

But these cookies I just had to post. 1. They are really good and make a great snack. 2. All you need is one bowl, a whisk and a spatula.

How to Make Strawberry Cookies

  • In a large bowl whisk together the egg, juice, oil, vanilla and sugar, until well combined.
  • Add flour and baking powder and mix until combined.
  • Gently fold in the chopped strawberries just until combined.
  • Either form into balls or drop by spoonfuls (approximately the size of a golf ball.
  • Place on cookie sheets, sprinkle with a little sugar and bake for approximately 15 minutes.
  • Let cool completely.

How to Store Strawberry Cookies

The cookies should be stored in an airtight container. They can be left out at room temperature (if it isn’t too warm) over night. Longer than that they should be stored in the refrigerator. They will keep for up to a week.

Or they can be frozen in an airtight container or freezer bag. Cookies will last up to 3 months in the freezer.

By the time strawberries are finished here in Italy I will be making my way to Canada to be re introduced to them for the start of the summer. So I might just have to think of a few more recipes.

These Strawberry Cake Mix Cookies are my GO TO easy strawberry cookie recipe. I am so excited about these Cake Mix Cookies. Strawberry Cookies with White Chocolate Chips are a recipe I have made time and time again for everything from Valentine’s Day, to Easter, to baby showers. I’m new to baking, so using cake mix in cookies is such an easy hack to creating a delicious cookie!

The accomplished bakers out there are going to think I’m a loser, but these are made with Strawberry Cake Mix!!! Be still my heart! These are so easy, fun, and delicious, my new favorite Valentine’s dessert! Really, I love strawberry year round, so these will be in my kitchen a lot longer than this holiday, but they sure are cute in pink and white.

Tips for making Cake Mix Cookies:

  • Don’t over cook the cookies. I made this mistake a few times! I like these a little bit gooey on the inside and slightly browned on the outside. When you see the pink begin to brown, get them out of the oven stat!
  • Add more white chocolate chips after you bake. That’s right, this is the oldest blogger food pic trick in the book! Once you take the cookies out of the oven and place them on  a cooling rack, add more fresh white chocolate chips to the top. It will make your Pink Cookies look LOADED with chocolate chips and you’ll look like an experienced baker. High fives!
  • If you want to make variations of this recipe, you can use any type of cake mix! The sky is the limit.

Strawberry Cookies for Valentine’s Day

I love these White Chocolate Chip Strawberry Cookies for Valentine’s Day (or a girl’s baby shower!!), but I also love that the recipe could be made with any flavor cake mix!

Ingredients

  • ▢1 box Strawberry Cake Mix
  • ▢1 teaspoon baking powder
  • ▢2 eggs
  • ▢1/3 cup vegetable oil
  • ▢1/2 teaspoon pure vanilla extract
  • ▢1 cup white chocolate chips

Instructions

  • Preheat oven to 350F
  • Line two large baking sheets with parchment paper and set aside.
  • In a large bowl, combine cake mix and baking powder. In a separate smaller bowl, whisk together eggs, oil, and vanilla by hand. Whisk until well combined.
  • Pour egg mixture into bowl with cake mix and stir with a spoon until a dough forms. Be sure to fully combine. Mix in the white chocolate chips.
  • Using a small ice cream scoop, drop rounded balls of the dough onto your baking sheet. These cookies flatten out quite a bit, so make sure the balls are taller than they are wide, and give them quite a bit of space between each cookie.
  • Bake for 9-10 minutes. Do not let them brown in the oven. They will appear slightly undercooked, but that is a good thing. They will firm up and flatten as they cool. When you take them out, you can add a couple more white chocolate chips to the top to make them look pretty (this is a little food blogger trick!)
  • Allow to cool for at least 10 minutes. Enjoy!

We were given a lot of strawberries and I had to figure out what to do with them so they didn’t go bad. So I came up with this recipe. I hope everyone likes it as much as my kids did. I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

Easiest Strawberry Cookies

If you’ve never made cake mix cookies before, you must give them a try! They’re so delicious and perfect for when you need to make something easy and fast. This is a fun variation that is perfect for celebrating Valentine’s Day!

These strawberry cookies couldn’t be easier to make. They start with a cake mix and are finished with a white chocolate dip. They are super soft, full of strawberry flavor and best of all dipped in chocolate!

Only 3 ingredients

You only need 3 simple ingredients to make these strawberry cookies. Then if you’d like to make them a little fancier, you can add white dipping chocolate and sprinkles. :

  • Cake Mix: 1 Box of strawberry cake mix is the main ingredient
  • Oil: The oil helps bring this recipe together. You can use melted butter in it’s place as well.
  • Eggs: Make sure to use fresh eggs so the cookies have a nice rise.

How to make strawberry cookies with cake mix

MIX. Stir the cake mix, oil and eggs together until combined. The dough is sticky, so I like to refrigerate it for 15-20 minutes if I have the time. It makes it easier to work with once it’s chilled.

BAKE. Scoop the dough onto a lined baking sheet, then bake at 350°F for 9 to 11 minutes until cookies are set (but not brown). Let them sit on the pan for a couple of minutes, then move to a cooling rack.

DIP. Then get to dipping once the cookies have cooled completely. Melt the white chocolate in the microwave until smooth, then dip half of each cookie in the chocolate. Lay them onto wax paper and immediately add sprinkles while the chocolate is still wet.

Modifications

  • The white chocolate is optional – you could leave it off if preferred.
  • I used white melting wafers for dipping, but white chocolate chips work great too. The chips also taste great folded into the dough.
  • You could even use milk or dark chocolate instead of white.
  • To make sweeter, roll the dough balls into granulated sugar before baking.
  • A classic buttercream would taste great on top of these strawberry cookies as well.
