Since we had so many extra strawberries from our local pick your own strawberry farm I was able to make quite a few strawberry crunch strawberries. Just when I thought my kids wouldn’t eat any more strawberries, they ate all of these. These strawberries are also a really fun Valentine’s Day, birthday, or Mother’s Day treat. They are also fantastic for topping cakes, cupcakes, or cheesecakes with.

These strawberries remind me of the Good Humor strawberry shortcake popsicles which are so good. I’ve also heard of these strawberries being called strawberry shortcake covered strawberries.

WHAT INGREDIENTS ARE NEEDED FOR THIS RECIPE?

To make these strawberry crunch covered strawberries, you will need:

  • Strawberries: Red and in season berries are always best.
  • Powdered sugar (optional): If you are making these for Valentine’s Day and your strawberries aren’t perfectly ripe try adding a little powdered sugar to sweeten them up.
  • Mini Golden Oreos: If you can’t find mini golden Oreos try using about 10-12 regular golden Oreos.
  • Butter: You will want to use unsalted butter.
  • Strawberry gelatin mix: You’ll want to keep the gelatin (Jello) mix unprepared.
  • French vanilla pudding mix: You will want the instant pudding for this recipe.
  • White chocolate (optional): If you want to use white chocolate in this recipe, you totally can. You can use white chocolate to make the strawberries less crumbly. I love these strawberries with and without white chocolate. The best white chocolate for this recipe are the melting wafers if you can find them.
  • Wax paper
  • Cooking spray

HOW TO STORE THESE STRAWBERRIES

Once you’ve made your strawberries, you can store them in an airtight container in your refrigerator. They will be good for two days.

TIPS FOR MAKING THIS RECIPE

  • If you want to make the crumbles stick to the strawberries better, dip the strawberries in melted white chocolate first.
  • Use a double boiler to melt the chocolate. Melting it in the microwave is faster but it often comes out lumpy. If you don’t have a double boiler, use a larger pot to heat the water then spray a smaller pot with non-stick spray and melt the chocolate.
  • Be sure to use French vanilla instant pudding. French vanilla makes a big difference in this recipe.
  • Keep the tops on your strawberries. You can dip them easier by holding the green leaves.
  • These strawberries are best the day of but can last for up to two days in your fridge.
  • Watch your crumble closely in the oven.

You added the strawberry shortcake crumbles inside the layer cake, sides, and top of the cake and it was loaded with flavors!

The best part is it comes together in less than 10 minutes! This recipe is fun to use on a variety of different things once strawberry season is in full swing!

This strawberry crunch crumble recipe is made of Golden Oreos, freeze dried strawberries, melted butter and salt. Other recipes will use ingredients like vanilla pudding mix, vanilla extract or strawberry gelatin mix.

This recipe is simple and flavorful. You can easily find these four ingredients at the grocery store.

This topping is fairly versatile. It can be used for many different recipes. During strawberry season there are a wide variety of recipes strawberry crunch crumble topping would go great on.

Bake the topping directly on a dessert. For instance my Easy Strawberry Crumble recipe, you just place it right on top the last 15 minutes of baking.

  • Freeze Dried Strawberries – These pack a nice strawberry flavor without all the liquid. You can find these at your local grocery store. Without the freeze dried strawberries you’ve got a vanilla crumble
  • Butter – I use unsalted butter
  • Kosher Salt – Salt helps bring out the flavor of the other ingredients

  • Food Processor – You’ll need a food processor to blend the ingredients together
  • Small Bowl – You can use a small bowl to melt the butter in the microwave. Melting it on the stove top in a small sauce pot will work fine too

  • Do not substitute fresh strawberries for freeze dried strawberries, it will not turn out

How to make Strawberry Crunch Crumble

This Strawberry Crunch Crumble recipe is super simple to make. Melt the butter in a medium bowl in the microwave.

Add the Golden Oreos, freeze dried strawberries, melted butter and salt to the food processor. Blend until mixed but still a coarse crumb.

Transfer the strawberry mixture to an air tight container and store until needed. Alternatively, you can store the crunchy topping in a bowl tightly wrapped with plastic wrap.

If you’ll be baking this on something like my Easy Strawberry Crumble recipe then you can stop at this point and keep until needed.

If you’re just adding the topping to something that is already made then preheat the oven to 350°F and line a baking sheet with parchment paper.

Spread the strawberry topping in an even layer and bake 10-15 minutes until golden brown.

Remove from the oven and allow the pan to cool on a wire rack before storing the topping. Add topping to desired dish and enjoy!

  • Moist vanilla cupcakes- These cupcakes are so tender and have a wonderful vanilla flavor. I use both buttermilk and heavy cream, which gives it a soft crumb.

INGREDIENT NOTES

  • Buttermilk- If you don’t have buttermilk on hand you can substitute 1 cup of whole milk with 1 tablespoon of lemon juice. Let sit for 10 minutes.
  • Heavy Cream- Make sure you pull out 1-2 hours before baking. This allows enough time for it to come to room temperature.
  • Oil- You can use canola or vegetable.
  • Eggs- Always have at room temperature when baking.
  • Cream cheese- Use full fat original cream cheese and do not substitute with whipped cream cheese.
  • Freeze dried strawberries- I used Trader Joe’s Freeze Dried Strawberries. They have a wonderful, natural strawberry flavor.
  • Strawberry Jell-O- Although I only use 2 teaspoon in this recipe, it helps give it that nostalgic strawberry flavor that the strawberry shortcake ice cream bars have.

STEP BY STEP INSTRUCTIONS

Here is how to make and bake these cupcakes.

STEP 1: Combine dry ingredients together in medium size bowl. First, sift the flours, baking soda and salt to prevent lumps from forming inside batter.

STEP 2: Mix oil, egg, vanilla and sugar together. Whisk until mixture is combined.

STEP 3: Add heavy cream. Mix until streak free and smooth.

STEP 4: Add dry ingredients into wet ingredients. Add ½ of the dry ingredients, followed by buttermilk. Last, add remaining dry ingredients and whisk until fully incorporated.

STEP 5: Scoop the batter. Fill each each cupcake liner ⅔ full with batter. Then, bake for 13-15 minutes.

STEP 6: Strawberry crunch topping. Combine shortbread cookies, freeze dried strawberries and strawberry Jell-O in food processor. Pulse until mixture is coarse and crumbly. Mix in melted butter.

STEP 7: Beat cream cheese frosting. Combine ingredients and whip until smooth and fluffy.

STEP 8: Decorate the cupcakes. Pipe each cupcake with frosting. Sprinkle with strawberry crunch topping and place strawberry rose on top.

EXPERT BAKING TIPS

When making strawberry crunch topping, pulse 2-3 times and check before proceeding to make sure mixture does not become too ground. You want the mixture to still have small lumps of cookies throughout.

Use room temperature cream cheese and butter when mixing cream cheese frosting. This will help prevent lumps and you will have a smooth frosting.

When pouring batter into cupcake liners, use an ice cream scoop. This will ensure uniformity and even baking.
