This might be one of the strangest recipes I ever wrote, but it’s completely original.
I recently posted a recipe for Fresas con Crema (Mexican Strawberries & Cream) which reminded me of this strawberry milkshake no ice cream recipe which I had to share!
I love ice cream, like really love it.
One year when I was in high school, I ate a bowl of ice cream every night for the whole summer.
I’m the kind of girl who likes soft serve, or to let my ice cream melt until I can stir it up and then eat it. Don’t judge.
When I go out, I love to order milkshakes or, even better, malts.
Unfortunately, I am not that young anymore and my metabolism cannot match my love for ice cream!
In fact, I can’t even stock ice cream in my freezer because I would eat it all at once.
It’s a smart idea not to have ice cream on hand, but sometimes I can’t resist the cravings and I learned how to make milkshakes without ice cream.
Yes, you read that right. Mock milkshakes!
I have recipes for all different flavors (chocolate, cheesecake, mint chocolate chip, etc), but this strawberry milkshake without ice cream is one of my absolute favorites.
It tastes like a real strawberry milkshake and it’s thick and creamy.
How to make strawberry Milkshake without ice cream
A milkshake without ice cream is basically deconstructed ice cream.
Take the regular ingredients for ice cream such as milk, cream, sugar and blend them up like a smoothie.
The results are usually not quite as thick, but the flavor is spot on.
I like using frozen strawberries for this recipe because it helps to thicken without diluting the taste.
You will see in the recipe that it is optional to add a raw egg – key word is optional.
Consuming raw eggs can be unsafe. Use pasteurized eggs or from a source you trust.
This will add velvety smooth richness to your shake and a more authentic flavor.
I also use raw egg in my Pumpkin Eggnog and my Blue Cheese Walnut Pasta, which was inspired by how they serve pasta here in Japan.
Another optional ingredient you can add is malt powder. It makes it taste sooo gooood!

- 1/2 cup milk, half-and-half, cream or evaporated milk
- 1 tablespoon sugar
- 1/4 teaspoon vanilla
- 1/2 cup (heaping) frozen strawberries
- 1 large egg (optional)
- 3 tablespoons malt powder (optional)
- Ice (optional)
- Whipped cream (optional)
Instructions
- In a blender, add the milk, sugar, vanilla and strawberries. If using egg and/or malt powder, add this now as well.
- Blend ingredients until thick and smooth. If shake is not thick enough, add some ice and blend again.
- If desired, top with whipped cream and serve.

- Milk – It’s called a milkshake, after all! Use whole milk for a creamy milkshake.
- Honey – For sweetness.
- Vanilla Extract – A wonderful flavor enhancer.
- Strawberries – Fresh strawberries yield more flavor, but I like to use frozen because it makes a colder milkshake.

Tips for the Best Shake
- If you want a thick and creamy milkshake, go for full-fat milk.
- If you don’t mind the extra calories, use heavy cream instead of milk.
- If the strawberries are thick enough, feel free to skip the honey.
- Use frozen strawberries to yield a cold milkshake. Aside from giving the shake its flavor, they also serve as a substitute for ice.
- You can also use fresh strawberries, but the shake won’t be cold. You can add ice cubes after blending, but be sure to drink it as fast as you can! Once the ice melts, the milkshake will become watery.
- If you’re using frozen berries, use a high-power blender. Second-grade or immersion blenders might struggle in pulsing the berries. If you don’t have one, I suggest you stick to fresh strawberries.
- For a thicker milkshake, use very cold, almost frozen, milk.
- Freeze the serving glasses for at least 15 minutes so the milkshake stays cold longer.
- Milkshake doesn’t have a very long lifespan, so I don’t advise making it ahead of time. If you have leftovers, however, you can freeze them for only up to a day. Thaw in the fridge before serving.

Milkshake Variations
- This milkshake is super fruity thanks to the strawberries, but don’t just end there! Add more fruits and berries. Blueberries, raspberries, mangoes – anything you can think of works.
- For a healthier and heartier milkshake, throw chia seeds into the mix.
- Vegan? Use plant-based milk instead. Almond, oat, and coconut milk all make fantastic milkshakes! The shake won’t be as thick, but still good.
- Low-fat milk works, too.
- Want a thicker milkshake? Blend in a frozen banana. Aside from improving the consistency, it also adds a wonderful flavor.
- For a thinner milkshake, add more milk.
- Use maple syrup instead of honey.
- Top milkshake with chocolate shavings and chocolate syrup.
- Blend in almonds for a nutty flavor.

2 cups strawberries
1.5 cups whole milk chilled
1 teaspoon vanilla extract
2 tablespoons heavy cream

Step By Step Instructions
Wash the strawberries in clean water and cut the end to remove leaves if any, you can use a strawberry huller to remove the stems easily if you wish.
You can cut the strawberries in halves or more to make the process easier, I always cut the strawberries before I put them into the blender so it is more easily done.

Add all the ingredients (strawberries, milk, cream, sugar and vanilla extract) to the blender and blend until smooth.


Delicious and fresh strawberry milkshake is ready to serve, you can pour the milkshake from the blender to glass cups for serving.
Serve immediately while its fresh and chilled for the best results!

Tips To Make Perfect Milkshake Without Ice Cream
We mostly make milkshakes without ice cream for these reasons – easy to make, less calorie & fat and also easily availble ingredients.
Even when you do not have ice cream at home, you can easily make delicious milkshakes without ice creams.
To make it delicious and creamy, make sure to use whole milk and also use heavy cream or whipped cream.
In case, you do not have cream, you can make strawberry milkshake even with just using strawberries, milk and sugar and a little vanilla extract!
For the best results, make sure to use good quality, fresh ingredients.
Using ripe, juicy strawberries make the milkshake more delicious!
Also, once you have prepared the strawberry milkshake, make sure to serve it immediately for best results!
As I mentioned earlier, if you are making it for serving later, you have to refrigerate the prepared milkshake until you are ready to use and if you are storing it for more than a day, it is always recommended to freeze the milkshake which will keep it fresh for few more days
Variations:
I have used fresh strawberries to make this strawberry milkshake but you may also use frozen strawberries or even frozen milk (freeze in ice cube trays for easy use) to make the milkshake more frothy & cold.
Also you may adjust the amount of sugar or use natural sweteners based on your preferences.
You can adjust the amount of strawberries in the recipe too, if you want to adjust the consistency of the milkshake.
For a more thicker consistency like in smoothies, you can add more strawberries.
Though we made this milkshake without ice cream, you can always add ice cream to make it even more rich & more flavorful!
You can add vanilla ice cream or strawberry ice cream to make strawberry milkshake (just use a couple of spoons of ice cream for a lighter milkshake or you can add 1 to 2 cups of ice cream for a more richer & filling milkshake).
To make strawberry banana milkshake, which is also very popular, just add one ripe banana also to the recipe to make a thicker milkshake or you can replace one cup of strawberries with one banana to make an evenly flavored strawberry banana milkshake of the same consistency.
In this milkshake recipe, I used vanilla extract to flavor the milkshake. You may use strawberry extract or essence along with vanilla to make it even more colorful in pink and for more strawberry flavor.
Notes: For best results, serve chilled strawberry milkshake so in case you want to save the milkshake for later use, you can refrigerate the milkshake.
You can also freeze the prepared milkshake in freezer safe containers for later use.
There are freezer bags which will help you to save the milkshakes in decided portions so you don’t have to worry about your milkshake getting spoiled if want to use it at a later time.
Or you can easily freeze the milkshake in ice cube trays for longer storage.
