- If you’re really worried about lumps, you can always try sifting the pancake mix before stirring in the wet ingredients. Most experts recommend holding the sifter about 18 inches above the bowl to maximize results.

How do I make pancakes for one person using Aunt Jemima mix?
Why don’t you just make them from scratch? It is not that hard and you will not be getting all the preservatives that a mix has in it. You can make a full batch and just keep in the fridge for up to a week or so and you have pancakes instantly.
Here is a recipe that I like and everyone that I have made it likes too. You could cut the ingredients in half if you wanted to. It does keep well if you cant eat it all in one setting:
1/2 cup white flour
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tbl brown sugar
1 egg
1 1/8 cup milk
1/4 cup oil
approx 1/2 tbl butter. add just before cooking
Beat the egg in a medium sized bowl Add the other ingredients and mix until smooth. Let it sit for 10–15 minutes. It does get better.
Heat a cast iron griddle or skillet. Use medium low heat, #3 to #3 1/2 on electric. When hot, melt about a tbl of butter and pour the excess into the batter with one hand while stirring with the other hand. When the butter is incorporated, spoon out your pancake onto the buttered griddle. Turn when the bubbles fail to close.
Try this and see if you don’t like it better than the AJ. As you can see, it is all good stuff going into it. This recipe feeds two of us for breakfast. If you are cooking for one, simply save the left over in a sealed jar in the fridge and another morning, within a week or so as there are no preservatives, you will have pancakes with no bother at all.

My kids really love when I make crepes on the weekends but lets be honest, it can be time consuming and this time I wanted really easy. I picked up some Aunt Jemima Pancake Mix & Syrup and decided on this really delicious recipe idea. Lucky for me, it turned out great and everyone loved it!
The Aunt Jemima Pancake Mix really made my life a whole lot easier and worked perfectly. I made the batter a little thinner so that the pancakes could easily roll up and that filling, yeah its fantastic! The filling is easy peasy; strawberry jam, cream cheese, powdered sugar and chocolate chips… blended until smooth and thats done. - 2 cups Aunt Jemima Buttermilk Complete Mix
- 2 cups water
- 8 oz cream cheese, room temp
- ½ cup plus 2 Tbsp strawberry jam
- 2 Tbsp powdered sugar
- ¼ chocolate chips
- butter for cooking
- whipped cream & chocolate chips for garnish
- Aunt Jemima Original Pancake Syrup
Instructions
- In a bowl add the cream cheese, strawberry jam and powdered sugar. Using a hand mixer, mix until smooth.
- Stir in the chocolate chips. Set aside.
- In a bowl mix together the Aunt Jemima Buttermilk Complete Mix and the water. Whisk until smooth.
- Add a bit of butter to a non stick pan and cook a large pancake until golden on each side. Place on a plate and wrap with foil to keep warm while you cook the remaining pancakes. {NOTE: you are looking for a thinner then usual pancake because they roll easier}.
