My crew absolutely loves strawberries, so I decided we should make strawberry popsicles. And since we always have milk in the house, we made strawberry milk for our strawberry popsicles.
Have you ever made strawberry milk before? Back in the day my mom used to get syrup that we could add to our milk to make it pink and pretty and taste delicious, but you can actually make it at home with fresh strawberries in just a few minutes. Homemade always tastes better.

Strawberries (fresh or frozen work fine)
Sugar

To make strawberry milk you simply:
Make your strawberry syrup by using strawberries and sugar
Allow your strawberry syrup to cool

Homemade Strawberry Milk
- โข2 cups fresh strawberries you can also use frozen
- โข4 tbsp sugar
- โขยฝ cup water
- โข2 cups milk
Homemade Strawberry Milk Popsicles
- โข1ย cupย thinly sliced strawberries
- โข2ย cupsย strawberry milk
- โขยฝย cupย frozen coconutย optional
Instructions
Homemade Strawberry Milk
- Wash and slice the strawberries, remove greens.
- Add strawberries, sugar and water into a saucepan over medium heat and simmer for about 10 minutes.
- Strawberry sauce will thicken slightly.
- Pour the strawberry mixture through a fine mesh strainer to remove all seeds if desired. Use a spoon to press the strawberries against the strainer, to make sure you are getting as much juice as you can.
- Allow the syrup to cool before adding in the milk. You can simply put it into the refrigerator for a few minutes while you prep your popsicles.
- When the syrup is cool, combine the milk and homemade strawberry syrup and stir gently.
Homemade Strawberry Milk Popsicles
- Get out your favorite popsicle molds. My tray had 8 and this recipe made all 8.
- Thinly slice strawberries.
- Fill the popsicle molds half way with the sliced strawberries.
- Add frozen coconut if desired.
- Pour strawberry milk into popsicle molds to fill. You will want to leave just a little bit of space since the will expand slightly when frozen.
- Place in freezer.
- Freeze for at least 4 hours or until your popsicles are ready.
- When you are ready to serve run molds under hot water for 20 seconds to loosen.

- 2ย cupsย (8floz/450 ml) milk
- 2/3ย cupย (5floz/142ml) cream
- 2ย cupsย (10oz/284g) strawberry, pureed and strained
- 2ย tablespoonsย sugar
- 1ย cupย (6oz/170g) white chocolate, melted
- Confetti sprinkles for garnish
Instructions
- First make your strawberry puree by blending or blitzing the berries in a food processor with the sugar. If you can’t find fresh berries you can use frozen.
- Once pureed strain the mixture though a sieve to remove any seeds.
- Next combine the milk, whipping cream, and strawberry puree in a large jug with a spout.
- Mix together until well combined and pour the mixture into your popsicle molds.
- Insert ice-pop sticks and freeze until solid, about 4-6 hours or, preferably overnight.
- To remove the popsicles from the molds run them under warm water for about 5 seconds and gently pull on the popsicle stick.
- Before serving, melt the white chocolate in the microwave for about 30 second. Let cool to room temperature.
- Dip each ice pop in the white chocolate then sprinkle with confetti sprinkles.
- Enjoy immediately or store the popsicles wrapped in waxed paper in the freezer for up to 8 weeks.

Clean the strawberries
First, itโs important to clean the strawberries before you use them. Doing this removes any dirt or chemicals from the field. Tip: You can do this with any type of berries, not just strawberries!
To clean the berries, fill a large bowl or a clean sink with a fruit wash mixture. You can buy some from the store, or make your own by mixing four parts water to one part vinegar.
Soak the berries for about 20 minutes (or according to the directions if youโre using a store-bought cleaner), then rinse with cool water.
Gently pat the berries dry with paper towels or a clean cloth.
After your berries are clean, follow these steps to make this healthy popsicle recipe:

- Slice the berries. Remove the stems from the strawberries and dice a portion of them. Set the diced berries aside to add to the mixture later.
- Add ingredients to a blender. Add the whole strawberries, plus the rest of the ingredients, to a blender and blend until smooth.

Note on Fruits Popsicles
- If you donโt have a blender, you can also use a food processor to make this fruit popsicle recipe.
- When adding the popsicle sticks, it can help to freeze the mixture in the molds for about half an hour first. This way itโs solid enough to hold the sticks upright while still being soft enough to insert them easily.
- You can use frozen strawberries for this healthy popsicle recipe, but you may need to add a little more milk to get the mixture to be the right consistency.
- If the popsicles are stuck in the molds, try running some warm water along the bottom of the molds just long enough to loosen them. Donโt do this for too long or the popsicles will start to melt.
- Use things you have on hand instead of popsicle molds. Cups and ice cube trays are popular choices. You can even use a loaf pan and then cut into slices after the mixture freezes.
- To store the strawberry popsicles, remove them from the molds and transfer them to a Ziploc bag. Theyโll keep in the freezer this way for 1-2 weeks.

- โข5-6 oz vanilla or strawberry yogurt
- โขยผ cup honey
Instructions
- Wash and remove the stems on the strawberries. Finely dice ยฝ cup of the strawberries and leave the rest whole.
- Place the whole strawberries in the blender with the coconut milk, yogurt, and honey. Blend until smooth. Stir in the diced strawberries.

- 3 cups (750 mL) chopped strawberries
- 1/4 cup (60 mL) honey
- 2 tbsp (30 mL) lemon juice
- 1 cup (250 mL) Milk

PREPARATION
Place strawberries, honey and lemon juice in a blender. Pulse a couple of times to mix. Add milk and purรฉe until smooth. Pour into 8 ice pop moulds. Freeze at least 4 hours.
TIPS
Wash strawberries just before using and before coring.
Add 1ยฝ tsp (7 mL) coarsely ground black pepper to strawberry mixture. Substitute raspberries for strawberries.
