I won’t even bother describing to you what a Rice Krispies Treat is. How could you possibly go through childhood without trying this most classic of desserts. I’ve got such fond memories of helping my mom make them on weekends. Which is one of the best parts of this recipe: it’s so kid friendly and perfect to let the kiddos help! I loved eating them before they’ve fully cooled, when they are so soft, gooey and warm. Yummmmm!

Over the years, we’ve seen them topped with chocolate, or have candy put into them. But it’s never occurred to me to actually change the flavor of them until we published this Pumpkin Rice Krispies Treat recipe during the holidays. Just a simple twist on the flavor can make classic rice krispies treats even more fun!

Today, we are using Strawberry Gelatin gives them such a fun fresh flavor and makes them adorably pink!

Strawberry Rice Krispies Treats Ingredients:

  • MINI MARSHMALLOWS – 1 10.5 oz bag is all you’ll need. You’ll be melting these over a low heat while mixing with the butter and rice krispies.
  • BUTTER – Unsalted butter. I like to cube it and soften it a bit so it melts easier on the stovetop.
  • STRAWBERRY GELATIN – Just a small 3 ounce box will do. Any brand.
  • RICE KRISPIE CEREAL – We use 6 cups.

Storage and Freezing

Rice Krispies Treats can be stored in an Airtight Container at room temperature. Some people say they store better in your refrigerator but I don’t know that to be true, and I really don’t like to eat cold Rice Krispies Treats.

You CAN freeze Rice Krispies Treats. Just let them fully cool, cut them into squares and separate them with wax or parchment paper. Wrap them in freezer wrap or put them in a freezer bag (or both). They will be good in your freeze for up to 4 months. Simply thaw out at room temperature.

Notes, Tips and Variations

  • ADD ONS – These Rice Krispie Treats are perfect as they are, but some fun add ons would be to drizzle white chocolate over the top, put sprinkles on the top, incorporate white chocolate chips into them or press freeze dried strawberries on top as they cool. Do NOT use fresh strawberries. You’ll have a mess on your hands.
  • DON’T OVERHEAT – These marshmallows melt perfectly fine in the microwave. Just keep an eye on them so you don’t overcook them. If you’ve got some more time and want to be a little more careful, you can heat the marshmallow mixture in a large saucepan on the stove top over a lower heat.
  • DON’T OVER MIX – As the marshmallows melt, gently fold them into each other to keep them nice and soft. This will get you the best results and that soft texture.
  • CUT INTO FUN SHAPES – Use cookie cutters to get cute shapes like hearts, stars or anything else that your occasion calls for.
  • USE OTHER GELATIN FLAVORS – Next time you are in the gelatin aisle at your grocery store, check out all the flavors and colors and let your imagination go wild! You can use Lime for Green St. Patrick’s Day Treats. Or any team colors for a fun game day dessert! Or make batches of Red (Cherry), White (Plain) and Blue (Blueberry) Rice Krispies Treats for the 4th of July!
  • STICKY FINGERS – When pressing the cereal mixture into the pan, you’re fingers WILL get sticky! You can use a gallon sized ziplock baggie as a barrier. Or grease your hands with butter. Or spray them with non-stick cooking spray.
  • GLUTEN FREE – These treats are gluten free, nut free and pretty darned safe for just about any food sensitivity! And, no, I’m not saying they are “healthy”! Lol!

  • 1 bag 10.5 oz, mini marshmallows
  • 1/4 cup butter cubed
  • 1 small box 3 oz, strawberry gelatin
  • 6 cups rice krispie cereal

Instructions

  • Add marshmallows and butter to a large microwave safe bowl. Heat on high heat for 2 minutes. Marshmallows will double in size and butter will be almost melted.
  • Melt marshmallows and butter together.
  • Pour gelatin into marshmallow mixture and stir well until butter is melted and strawberry is mixed well.Stir in gelatin to butter and marshmallows
  • Add cereal and mix well to evenly coat cereal.Stir in rice krispies to marshmallow mixture.
  • Press into prepared pan.Press Mixture into baking pan.

These Strawberry Rice Krispie Treats are made two types of strawberries to really pack in the flavor! Grab strawberry marshmallow fluff and freeze dried strawberries to make these pretty in pink rice krispies treats. So much strawberry flavor in each bite! This recipe does not use strawberry jello.

Strawberry Rice Krispie Treats! I’m going to start putting an exclamation point at the end of recipes that make me smile while eating them. You can’t take a bite of a strawberry rice krispie treat without grinning from ear to ear.

First, let’s back up a bit. I saw a jar of strawberry marshmallow fluff at World Market about 4 months ago. I didn’t buy it the day I saw it. But, I didn’t stop thinking about it either. I actually kinda became obsessed with it. When I couldn’t sleep at night, I would think of all the desserts I would make with it. I want to swirl it in my Strawberry Ice Cream Recipe the most.

So today, Camille was fussy and bored, so I packed her up, and drove all the way across town to buy that much coveted jar of strawberry fluff. Luckily, they had 1 lone jar on the shelf. I grabbed it, and skipped to the register to pay. It lasted about 15 minutes on my counter before I just had to bake with it, and now I wish I had ordered a case of it.

We really love strawberry desserts around here: Mini Strawberry Cheesecakes are total party food in our house. Plus, my kids love Strawberry Pudding and never turn down Strawberry Milk for breakfast.

While bowls of Strawberry Cream Cheese Frosting come out of our kitchen a lot during the spring months (seriously, it’s so good on nearly any type of cake), crispy rice treats are obviously the kids’ favorite dessert. They became hooked on my Small Batch Rice Krispie Treats, and we’ve been adding flavors ever since.

I can’t count how many batches of Peanut Butter Rice Krispie Treats I have made for them to have as an after school snack. For special occasions (like Valentine’s Day), I make Chocolate Rice Krispie Treats because the small amount of salt sprinkled on top just before serving feels so fancy!

If your kids love fruit, you’ve got to make these strawberry Rice Krispie treats for your next after school snack time or playdate!

How to Make Strawberry Rice Krispie Treats:

To make strawberry Rice Krispie treats, you need to source some strawberry marshmallow fluff and some freeze-dried strawberries.

  • You can find strawberry marshmallow fluff at a very well-stock grocery store, especially in the Spring (during strawberry season). Yes, I’ve seen it at the place that starts with Wal, and ends with Mart. I’ve found it at specialty kitchen shops, and you can always find it online easily.
  • Freeze dried fruit probably isn’t new to you if you have kids. It’s such an easy, nutrition snack, that we always have multiple varieties of fruit around. It’s just like dried fruit, but instead of being chewy, it’s crunchy, light-weight and dry. It doesn’t contain any added sugar.
  • It takes a LOT of fresh strawberries to make freeze-dried strawberries, so please think of this as a way to maximize the strawberry flavor without adding liquid or bulk to our recipe. It’s like a condensed form of sweet-tart strawberries. I use freeze dried raspberries in my homemade raspberry marshmallows.

The Ingredients

  • Rice Krispies Cereal. You know the type of cereal I’m talking about. It can also be ‘crisp rice cereal,’ but do not buy puffed rice, as that is very different.
  • Strawberry Marshmallow Fluff. This is a jar of creamy marshmallow fluff that is strawberry flavored. It’s so good! Try not to eat the whole jar with a spoon. You need the entire 7.5 ounce jar for this recipe.
  • Freeze Dried Strawberries. Just a half-cup of sliced, freeze-dried strawberries.
  • Butter. A classic ingredient in all Rice Krispies treats, and cannot be skipped.
  • Salt. These are very sweet, and a small pinch of salt balances the flavors out.

The Directions

  1. First, gather all of the ingredients, and have a 9-inch bread loaf pan ready by spraying it lightly with cooking spray.

2. In a small saucepan, melt the butter, strawberry fluff and salt over LOW heat. Stir it frequently and always keep an eye on it to prevent it from scorching. It’s best to use a silicone spatula to prevent the fluff from sticking to the spoon too much.

3. When everything is melted together and nicely homogenous, turn off the heat and remove the pan from the heat. Place it on a heat-proof pot holder or trivet to protect your counters. Then, pour in all of the rice cereal, and stir with a heat-proof non-stick spatula to combine.

4. Finally, stir in the freeze-dried strawberry pieces. You can crus them with your fingers before adding, if you like. Or, save some big slices for the top as decoration.

5. Quickly scrape the mixture into your prepared loaf pan. Use the spatula to press it flat and even, and then sprinkle extra freeze dried strawberries on top, if you like. Let cool for 1-2 hours until firm and set, and then slice and serve.

How do you make rice crispy treats with marshmallows?

This particular recipe uses marshmallow fluff, because it’s flavored with strawberry! The classic recipe uses 6 cups of cereal to one 10-ounce bag (~6 cups) of mini marshmallows (not fluff). The conversion of using marshmallows to make to marshmallow fluff is: one cup of marshmallow fluff is made from 16 large marshmallows melted (or 160 mini marshmallows). Add 2 teaspoons of light corn syrup to mimic the fluffiness. A 7.6 ounce jar of marshmallow fluff contains 1 cup of fluff.

What causes rice crispy treats to get hard?

Most likely, the heat was too high when you melted the butter and marshmallows, and some of the moisture was cooked out. Use LOW heat; take your time. Or, you added too much cereal, upsetting the balance of marshmallow gooeyness to crisp cereal. Or, the dessert is old and stale. Pop them in the microwave to re-warm them.

Why are my rice krispie treats falling apart?

It sounds like you added too many marshmallows. I understand your reasoning: more marshmallows equals more better, but they can become too soft and gooey. If they’re still in the pot, add more of rice cereal a small amount at a time and keep stirring.

Flavor Variations

Since we know that making 1 cup of marshmallow fluff is as easy as melting any flavor of 16 large marshmallows and stirring in 2 teaspoons of corn syrup, your mind is probably dreaming up new ways to flavor these.

The 7.6 ounce jar of strawberry fluff called for here is equal to 1 cup of marshmallow fluff! So, you should absolutely make your own marshmallow fluff, and make these your own:

  • Use freeze dried raspberries to make a raspberry rice krispie treat.
  • Use freeze dried apples and a pinch of apple pie spice to make a fall treat.
  • If you use plain marshmallow fluff, you can add any spices. I make pumpkin spice rice krispie treats in that way.
  • I have seen caramel marshmallow fluff a few times, but it can be really hard to source!

How to Store

Rice krispie treats are best kept at room temperature in an air-tight container. I like to line a storage container with wax paper to prevent stickiness, and place the treats inside without touching.

Do not ever refrigerate or freeze these.

All of a sudden my children can’t get enough Rice Krispie Treats.  I think it has something to do with the store bought ones I put in my backpack as a quick snack option for our Disney trip a few months ago.  After making several batches of homemade bars as of late, I decided to put my own spin on them with this Strawberry Rice Krispie Treats recipe.

STRAWBERRY RICE KRISPIE TREATS

These Strawberry Rice Krispie Treats have not one, not two, but three layers of strawberry flavor.  They’re perfectly pink in every way!  What’s the main ingredient for Rice Krispie Treats?  Rice Krispies Cereal, of course!  And I found a box of strawberry flavored cereal that really gives these treats their springtime hue.

I’ve also used strawberry fruit powder – the same powder that’s used in my Strawberry Sugar Cookies recipe – for another layer of strawberry flavor.  Just a few tablespoons of powder really ups the strawberry flavor of this six ingredient dessert.

TIP: Not sure where to find strawberry fruit powder?  I purchased mine online.

The last layer of strawberry flavor is also the prettiest!   Slices of freeze dried strawberry decorate the top of each bar to really pack a flavorful punch in each and every bite. 

TIP:  Strawberry fruit powder is simply pulverized freeze dried strawberries.  In a pinch, you could make your own with extra freeze dried strawberries in your food processor.

All of the other usual suspects – butter, vanilla and marshmallows – are also present and accounted for in these super easy cereal bars. 

Not only are marshmallows melted together with butter as in a typical recipe, but a cup of marshmallows are also stirred in with the cereal at the end so you’re left with pockets of marshmallows throughout.  My favorite part!  They’re ooey.  They’re gooey.  And these Strawberry Rice Krispie Treats are absolutely irresistible.

For photography purposes, I sliced these Strawberry Rice Krispie Bars into nine squares but in reality, this recipe makes a dozen bars in our house.  They make the perfect after school or lunchbox treat and received two thumbs up from all six of us.  A rare occurrence these days!

In preparation for Valentine’s Day, I’m always searching for new pink desserts to try. These strawberry Rice Krispie treats have a beautiful pink color and are ridiculously easy to make – so they’re perfect for baking with children or if you’re short on time. What I love most about this recipe is the strawberry flavor. We’re using freeze-dried strawberries – which are real berries. Therefore, you get a real strawberry flavor instead of the artificial flavor you’d get from using something like jello.

They’re sweet, a little gooey, a little crispy and completely addictive. The chocolate layer on top makes pairs perfectly with the strawberry flavor – but they’re equally delicious left plain.

A NOTE ABOUT FREEZE-DRIED STRAWBERRIES

Freeze-dried strawberries are, in fact, real strawberries and give these treats the best flavor instead of an artificial one. When they’re dried, all the moisture/liquid is removed. We need to use freeze-dried berries, instead of fresh or frozen berries, because we don’t want the liquid from real berries. Otherwise, the treats wouldn’t set properly.

Some freeze-dried strawberries are sliced first and then dried, whereas some are dried as whole berries. Whether your berries are in pieces or are whole, you’ll first pulse in a food processor or high-powered blender until they’re fine crumbs.

Since moving to Australia, I’ve found freeze dried strawberries at Woolworths and other supermarkets. In Canada, I typically bought them online or at health food stores. From my research, you can find them on Amazon or at Trader Joe’s in the US. Note: This is NOT a sponsored post – I just wanted to show what freeze-dried strawberries look like for anyone who’s unsure.

MAKING THE RICE KRISPIE TREATS

From there, the recipe is the same as any other Rice Krispie treats. You’ll slowly melt together the butter and marshmallows over low heat. Then you’ll stir in the freeze-dried berries that you’ve pulsed in a food processor. You’ll see them melt and turn the marshmallow-y goo a beautiful pink color. If some pieces of strawberry don’t fully melt, that’s totally OK.

Then you’ll stir in the cereal. The amount of Rice Krispies you use is a dependant on how gooey you want your cereal treats. I typically use 5 ½ cups. If you want them really gooey, feel free to use 5 cups. Or use 6 cups for crispier cereal treats.

For thicker Rice Krispie treats, you’ll press the mixture into a 9×9 inch pan. Or for thinner Rice Krispie treats – like the ones pictured – use a 9×13 inch pan.

Pro Tip: If you press the batter down more tightly, the bars will be harder and firmer. If you don’t press them down as firmly, they’ll be softer, and won’t keep they’re shape quite as well.

After pressing the mixture down, you’ll melt the chocolate and pour it over top of the bars. The chocolate topping is totally optional, but I find it incredibly delicious. I used 10 ounces (284 grams) of chocolate for a thick layer. 8 ounces (226 grams) will work too. If using a 9×9 inch pan, you’ll only need 6-8  ounces (170 – 226 grams) for the topping.

VARIATIONS

  • Feel free to skip the chocolate topping if you’re short on time.
  • Feel free to use your favorite type of chocolate on top. I used dark chocolate in the photos. Milk chocolate, white chocolate or semi-sweet are all delicious options.
  • If you don’t want as much chocolate on top, melt 4 ounces (113 grams). Then drizzle the chocolate on top.
  • For Valentine’s Day, use a heart shaped cookie cutter to cut heart shaped Rice Krispie treats out of the pan.

  • 1.5 ounces freeze dried strawberries (43 grams) feel free to use up to 2 ounces for a stronger flavor
  • ⅓ cup unsalted butter (75 grams) salted works too
  • 12 ounce bag mini marshmallows (340 grams) see recipe Notes for alternatives
  • 5-6 cups crispy rice cereal
  • 10 ounces dark chocolate (284 grams) or milk, semi-sweet or white chocolate

Instructions

  • Lightly grease a 9×13 inch pan. Optionally, lightly grease a 9×9 inch pan (see Recipe Notes below if using a 9×9 inch pan).
  • Add the freeze-dried strawberries to a food processor or high-powered blender. Pulse until they’re fine crumbs.
  • Add the butter to a very large saucepan. Melt over low heat.
  • Add in the marshmallows and gently stir with a rubber spatula as the marshmallows melt together with the butter.
  • When the marshmallows are almost melted, add in the pulsed freeze-dried strawberries. Gently stir as the freeze dried berries dissolve and melt.
  • Once the marshmallows are completely melted (if you have pieces of strawberries still – that’s ok), turn off the burner. Stir in the cereal 1 cup at a time. You want all the cereal covered with gooey marshmallow.
  • Spoon/pour the mixture into the prepared pan. Lightly grease your hands and gently press the mixture down into the pan. The tighter you pack it down, the firmer your cereal treats will be.
  • Chop the chocolate into very fine pieces and place in a heatproof bowl.
  • Microwave the chopped chocolate on medium power (not high power, which is often standard) for 45-second intervals. Stir between each interval until smooth.
  • Pour the chocolate over the Rice Krispie treats and spread smooth. Let the bars set at room temperature until the chocolate has hardened. Slice with a thin, sharp knife. I always let cereal treats firm up on the counter, instead of in the fridge, because in the fridge they can get too hard.

Notes

  1. Pan Sizes: I made this in a 9×13 inch pan. It can also be made in a 9×9 inch pan, for thicker bars. If using a 9×9 inch pan, you’ll only need 6-8 ounces (170-227 grams) of chocolate for the topping. 
  2. Marshmallows: I used 12 ounces of mini marshmallows – this is equivalent to about 7 cups of mini marshmallows. You can also use 12 ounces of regular marshmallows, which is about 50 marshmallows. If you only have a 10 ounce bag of marshmallows, then I recommend making these in a 9×9 inch pan and using 4 cups of Rice Krispie Treats (you can keep the amount of butter and strawberries the same). 
  3. Storage: I always recommend storing cereal treats at room temperature, as I find they get too hard and crispy in the fridge. Store in an airtight container at room temperature for up to 4 days. 
  4. Nutrition: Details provided are an estimate only and based on 1 cereal treat with chocolate on top, assuming the pan is sliced into 15 equal-sized pieces.
